1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
10 slices bacon
2 (8 inch) unbaked pie shells
1 egg white, lightly beaten
4 large eggs eggs
1 ½ cups half-and-half cream
¼ teaspoon ground nutmeg
salt and pepper to taste
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Brush pie shells with beaten egg white. Sprinkle crumbled bacon and chopped asparagus into pie shells.
  • In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.
  • Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.

I've made many a spring quiche filled with asparagus and herbs, yet I'd never thought about roasting the asparagus instead of steaming it. But lately I've been buying thick stalks of asparagus, and all I want to do is roast it; roasting intensifies the flavor and the stalks become incredibly succulent, more so than when the asparagus is steamed. This quality isn't lost even when the sliced stalks are hidden inside a quiche.

3/4 pound thick asparagus
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste
1 bunch good-size scallions (the kind you get in the farmers market) or 1 1/2 bunches thin scallions (the kind you get in the supermarket) (about 5 ounces), trimmed, quartered lengthwise and sliced thin
1 tablespoon chopped fresh tarragon
2 tablespoons minced flat-leaf parsley
2 egg yolks
2 whole eggs
1 (9-inch) whole wheat pie crust, fully baked and cooled
Freshly ground pepper
2/3 cup milk
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with parchment. Break off and discard woody ends of asparagus and place asparagus on the baking sheet. Drizzle on 1 tablespoon of the oil, add salt and pepper to taste and toss together with your hands until asparagus is thoroughly coated with oil. Place in oven and roast 12 minutes, or until tender and lightly browned in spots, turning asparagus halfway through. Remove asparagus from the oven and allow to cool until you can handle it. Slice into 1/2 to 3/4-inch pieces and place in a medium bowl.
  • Turn oven down to 350 degrees. Heat oil in a medium skillet over medium heat and add scallions. Cook, stirring, until tender, about 5 minutes. Season to taste with salt and pepper. Remove from heat. Transfer to bowl with asparagus. Add tarragon and parsley and toss together.
  • Beat together egg yolks and eggs in a medium bowl. Set tart pan on a baking sheet to allow for easy handling. Using a pastry brush, lightly brush the bottom of the crust with some of the beaten egg and place in oven for 5 minutes.
  • Add salt (I use 1/2 teaspoon), pepper, and milk to remaining eggs and whisk together.
  • Spread scallion and asparagus mixture in an even layer in the crust. Stir together cheeses and sprinkle evenly on top. Very slowly pour in egg custard over the filling. If your tart pan has low edges, you may not need all of it to fill the shell, and you want to keep the custard from spilling over. Place quiche, on baking sheet, in the oven and bake for 30 to 35 minutes, until set and just beginning to color on the top. Remove from oven and allow to sit for at least 10 minutes before serving. Serve hot, warm or room temperature.

1 pound fresh asparagus, trimmed and cut into 1-inch pieces
6 bacon strips, cooked and crumbled
3 large eggs

5 rashers of dry-cure smoked back bacon
1 tsp olive oil
1 medium onion, finely sliced
25g cornflour
300ml semi-skimmed milk
3 large eggs, beaten
25g extra-mature Cheddar cheese, finely grated
flaked sea salt
freshly ground black pepper
1 tbsp sunflower oil, plus extra for oiling the tin
4 sheets of filo pastry, each about 32 x 38cm

Steps:

  • Lightly oil a 20cm loose-based fluted flan tin that's about 3.5cm deep. Pour the rest of the oil into a small bowl. Place a sheet of filo pastry in the flan tin, pressing it firmly against the base and sides. Using the tip of a pastry brush, brush the pastry with a little oil then cover with a second pastry sheet at a right angle to the first. Brush with more oil and cover with a third sheet at the same angle to the first. Brush with the oil and cover with a fourth sheet, running in the same direction as the second. Roll and crumple the overhanging pastry back on to the rim of the tin, lifting slightly above it, and brush lightly with the remaining oil. Place the tin on the baking tray. Put the cornflour in a non-stick saucepan and stir in 50ml of the milk to make a thin paste. Pour over 200ml of the milk and stir well. Bring to a simmer, stirring constantly. Cook for 1 minute over a medium heat, stirring, until the sauce is thick and smooth. Season, then remove from the heat and stir in the rest of the milk to cool and loosen the sauce. Stir in the beaten eggs until thoroughly combined. Scatter half the asparagus, bacon and onion mixture over the base of the pastry case and pour the white sauce gently on top. Scatter the remaining asparagus and bacon mixture on top and press down lightly, then sprinkle evenly with the cheese. Bake on the preheated baking tray in the centre of the oven for 25-30 minutes or until the pastry is lightly browned and crisp and the filling is set. Take the flan out of the oven and leave to cool in the tin for 10 minutes before removing. Serve warm or cold.

Store-bought or Homemade Pie Dough, recipe follows
1/3 cup chopped roasted asparagus
1/3 cup roughly chopped jarred cherry peppers
1/3 cup sauteed sliced onions
1/2 cup crumbled cooked bacon
3/4 to 1 cup shredded jarlsberg cheese
3 large eggs
1 1/4 cups heavy cream, half-and-half or milk
Kosher salt and freshly ground pepper
1/2 teaspoon paprika or chile powder, or some grated lemon zest (optional)
1 3/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons apple cider vinegar or white vinegar

Steps:

  • Preheat the oven to 375 degrees F. Line a 9-inch pie plate with pie dough and crimp as desired; chill 30 minutes. Line with foil, then fill with pie weights or dried beans. Bake until the crust is set, about 20 minutes. Remove the foil and weights and continue baking until lightly golden, 5 to 10 more minutes. Let cool while you prepare the filling.
  • Make the filling: Put the asparagus, cherry peppers and onions in a large bowl. Add the bacon and jarlsberg and toss to combine.
  • Whisk the eggs, heavy cream, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Stir in the paprika, chile powder or lemon zest, if desired. Let cool at least 30 minutes before slicing.
  • Pulse the flour, salt and sugar in a food processor. Add about one-third of the butter; process until the butter is combined. Pulse in the remaining butter in 5 or 6 pulses to form coarse crumbs. Add the vinegar; pulse quickly a few times while adding 1/3 cup ice water. Squeeze some dough between your fingers. It should just hold its shape; if it's still crumbly, quickly pulse in more ice water by the tablespoonful. (Do not overwork the dough.)
  • Turn the dough out onto a large piece of plastic wrap. Wrap the dough, then press and flatten into a thin round. Refrigerate 1 hour.
  • Roll out the dough into an 11-to-12-inch round, about 1/8 inch thick, on a lightly floured surface. Center over a 9-inch pie plate. Fold in the edges and crimp as desired. Refrigerate at least 30 minutes before using.

Steps:

  • Heat the oven to 375 degrees. There is no need to precook the pie crust. If it is frozen let it thaw for 15 minutes first.
  • Layer the asparagus, mushrooms, and cheese in the pie crust.
  • Mix the eggs, cream, milk, salt, and pepper. Either beat them by hand for 2 minutes, or use a mixer for 1 minute. You want the eggs to be light and fluffy.
  • Pour the egg mixture over the vegetables and cheese and into the pie crust. Fill the crust as much as possible, without letting the egg spill out.
  • Bake for 35-45 minutes, until the center of the quiche has firmed up.

1 Tbsp butter
1 leek (white and light green parts only) halved and thinly sliced and well washed.
salt and pepper
1 bunch asparagus (1 pound) tough ends removed and thinly sliced on the diagonal.
1 clove garlic, minced
6 medium mushrooms, sliced or diced
2 slice bacon, diced
4 large eggs
1 1/4 c half and half
pinch ground nutmeg
1 c shredded gruyere cheese (4 oz)
1 pie crust shell for 9-inch pie plate, well chilled

Steps:

  • 1. Preheat oven to 350 degrees, with the rack in the lowest position.
  • 2. In a large skillet, melt butter over medium. Add bacon and cook until starting to brown. Add leek, asparagus, garlic, and mushrooms; season with salt and pepper. Cook, stirring occasionally, until asparagus is crisp-tender, about 6-8 minutes. Let cool.
  • 3. In a large bowl, whisk together eggs, half and half, 1/2 teaspoon salt and a pinch of nutmeg.
  • 4. Place pie crust on a rimmed baking sheet. Sprinkle with cheese; top with asparagus mixture. Pour egg mixture on top.
  • 5. Bake until center of quiche is just set, 50 to 60 minutes, rotating sheet after about 30 minutes. Let stand for 15 minutes before serving.
  • 6. To store, let cool, then refrigerate, up to 1 day. Reheat at 350 until warm in center, about 30 minutes. It does warm up very well.
  • 7. To save time I used a pre-made (Maria Calendar) frozen crust and it worked just fine.

2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh basil

4 ounces brie, cut into 6-8 wedges

  • 1. Grease a 9-inch tart pan or pie plate with butter, place the pan onto a baking sheet. 2. To make the crust. In a mixing bowl, combine the flour, sesame seeds, and salt. Add the butter and toss with the flour. Add the 1/3 cup ice-cold water and mix until just combined, adding more water as needed until the dough forms a ball. Roll the dough into a large circle about 1/4 inch thick. Fit the pie crust into the prepared pie plate. Cover and transfer to the freezer to chill for 20 minutes, or 1 hour in the fridge. 3. Preheat the oven to 375 degrees F. Remove the crust from the freezer. Line the crust with parchment paper and fill with pie weights, beans or rice. Transfer to the oven and bake until crust is set, 15 minutes. Remove from the oven and reduce the oven temp 325. 4. Meanwhile, in a medium bowl, whisk together the eggs, milk, yogurt, thyme, basil, dill, chives, crushed red pepper, and a pinch each of salt and pepper. 5. Cut 2/3 the asparagus into 1 inch pieces. Arrange in the bottom of the sesame crust, reserve the remaining asparagus for the top of the quiche. Add the brie and drizzle with honey. Pour the filling into the pie crust, wiggling the pan around to help evenly distribute the ingredients. Arrange the remaining asparagus stems on top. 6. Transfer to the oven and bake 55-65 minutes or until the eggs are set in the center. Let cool 5-10 minutes before serving. Serve topped with fresh herbs. Enjoy!

  • Put the flour and quarter teaspoon fine sea salt into a bowl, add chopped butter and rub in until the mixture resembles coarse bread crumbs. Add 3 tablespoons of ice cold water and mix with a butter knife until the dough just comes together.
  • If it seems too dry, add a little extra water, but try not to make dough too wet. Lightly knead into a smooth ball, wrap in cling film and leave to rest in the fridge for at least 30 minutes before rolling out.
  • Roll out onto a lightly floured surface to a large round, to the thickness of 1 pound coin. Use to line the tin and trim off the excess. Chill again for at least 30 minutes.
  • Heat the oven to 200C, 400F gas 6. Line the tart case with tin foil and bake blind for 15 minutes. Brush the inside of the tart case with egg white, and then cool. Remove the foil and bake for another 5 to 10 minutes.
  • Adjust the oven setting to 180°C, 350°F gas 4.
  • Slice the spring onions on the diagonal. Melt the butter in a pan, add the spring onions, season
  • and cook gently over medium heat until soft but not browned. Remove and allow to cool slightly.
  • Blanch the asparagus in a pan of boiling water for 2 to 3 minutes; they should still retain a bite.
  • Drain and refresh under cold running water, then drain well. Cut the asparagus spears in half lengthwise.
  • Whisk the eggs, egg yolks and cream together in a bowl. Reserve a good handful of cheese for sprinkling,
  • and the rest of the cheese to the creamy mixture and season well with sea salt and fresh ground black pepper.
  • Sprinkle half the reserve cheese in a thin layer over the pastry base and scatter
  • over the spring onions. Arrange the asparagus on top, then carefully pour on the creamy mixture
  • to just below the rim of the pastry. Sprinkle with remaining cheese and bake for 30 to 35 minutes,
  • until the filling is set and golden. According to Tim slightly before unmoulding.
  • Serve warm or at room temperature .

BACON AND ASPARAGUS FLAN

5 rashers dry-cure smoked back bacon
1 tsp olive oil
1 medium onion, finely sliced
25g/1oz cornflour
300ml/½ pint semi-skimmed milk
3 free-range eggs, beaten
25g/1oz extra-mature Cheddar cheese, finely grated
flaked sea salt
freshly ground black pepper
1 tbsp sunflower oil, plus extra for oiling the tin
4 sheets filo pastry, each about 32 x 38cm/13 x 15in

Steps:

  • Slice the asparagus into lengths of about 5cm/2in. Half fill a large non-stick frying pan with water and bring to the boil. Add the asparagus, bring back to the boil and cook for a minute until just tender. Drain and rinse under running water until cold, then pat dry.
  • Trim any fat off the bacon and cut into 1cm/½in strips. Return the pan to a low heat, add the oil and gently fry the onion and bacon until lightly browned, stirring regularly.
  • Add the onion and bacon to the bowl with the asparagus, toss lightly and leave to cool.
  • Preheat the oven to 200C/180C Fan/Gas 6. Place a baking tray in the oven to heat.

1 (11-inch) store-bought pie dough
3 tablespoons butter
1 small onion, finely chopped
1 bunch asparagus, chopped into 1/2-inch pieces
Pinch cayenne
Kosher salt and cracked black pepper
1 tablespoon minced garlic
1/4 cup chopped chives
2 tablespoons Dijon mustard
4 eggs
1 cup heavy cream
1 teaspoon grated nutmeg
1 1/2 cups shredded white Cheddar

Steps:

  • Preheat the oven to 425 degrees F.
  • Roll out pie dough and mold into an 11-inch pie dish, crimping the edges to make ridges. Pierce the dough with a fork several times. Bake in the hot oven until slightly browned, about 6 to 8 minutes. Remove from the oven and let cool. Turn the oven down to 325 degrees F.
  • In a large skillet over medium-high heat, add the butter, onions, asparagus, cayenne and garlic. Sprinkle with a pinch salt and a pinch pepper. Cook for 5 to 6 minutes until the asparagus is soft and mixture is fragrant. Remove from the pan to a bowl and let cool.
