1/2 pound fusilli pasta
1 cup chopped blanched asparagus
1 cup blanched corn kernels
1/2 cup chopped sun-dried tomatoes
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1/4 teaspoon finely grated garlic
3/4 cup grated parmesan cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and rinse under cold water. Transfer to a large bowl.
  • Add the asparagus, corn and sun-dried tomatoes to the bowl with the pasta.
  • Make the dressing: Mix the mayonnaise, sour cream, lemon juice, garlic, parmesan, and salt and pepper to taste in a bowl. Pour over the pasta salad and toss to coat. Season with salt and pepper. Chill for up to 3 hours.

500 grams (about 2 cups) dried orzo pasta (if it's unavailable in the pasta section it might be found in the bulk section)
1 lbs (about 1 bunch) asparagus, ends trimmed and sliced into 1/4" coins
125 ml sundried tomatoes in oil, drained and thinly sliced (equals about half of a 250 ml jar)
1/4 cup chopped fresh basil leaves
1/4 cup crumbled feta or goat's cheese (chèvre)
2 tbsp fresh squeezed lemon juice, from about 1/2 lemon
1/2 tsp lemon zest
2 tsp olive oil
1/2 tsp medium grain kosher salt
1/2 tsp fresh ground black pepper

Steps:

  • Bring a large pot of salted water to boil. Cook orzo as per package directions and add asparagus with 2 minutes left. Drain.
  • Toss with sundried tomatoes, basil, cheese, lemon juice, lemon zest, olive oil and salt and pepper.

3 tablespoons extra virgin olive oil
1/2 pound asparagus, cut into 1-inch pieces
1/4 cup sun-dried tomatoes, reconstituted either in olive oil or white wine
1/2 teaspoon dried thyme
2 to 3 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
1/2 to 1 pound pasta of your choice, cooked
1/4 cup grated Parmesan cheese

Steps:

  • Heat the oil in a saucepan and saute the asparagus for about 4 minutes. Add the tomatoes, thyme, parsley and salt and pepper. Saute an additional 3 to 5 minutes. Pour the vegetables over the cooked pasta and sprinkle the Parmesan cheese over the top.

A yummy and simple way to use fresh asparagus. I was inspired to write this recipe after watching my almost-4-year-old picky eater gobble up a mixture of orzo and sundried tomatos at Trader Joe's. The asparagus can easily be changed to another vegetable; I have successfully used brussels sprouts with a very pleasing result.

1 bunch asparagus, aprox. 1 lb
1 tablespoon extra virgin olive oil
2 -3 garlic cloves, chopped
1 dash sea salt
6 ounces orzo pasta
6 sun-dried tomatoes packed in oil
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon oil from tomatoes
1 tablespoon balsamic vinegar

Steps:

  • Preheat oven to 430 f. Wash asparagus, trim off woody ends, and then cut asparagus spears into 1 inch pieces. Combine in a baking dish with olive oil, garlic, and salt. Roast asparagus in oven for ~15 minutes, until just fork tender. Let cool slightly.
  • Cook orzo in salted water, according to package directions.
  • Cut tomatoes into small pieces or slices.
  • Combine all ingredients and mix well.

6 cups cooked orzo pasta (2 cups uncooked)
4 garlic cloves
1 teaspoon salt
1 teaspoon ground pepper
1 tablespoon Dijon mustard
6 tablespoons balsamic vinegar
1 cup olive oil
2 cups sun-dried tomatoes packed in oil, drained and chopped
2 cups kalamata olives or 2 cups oil-cured olives, pitted and halved
1 bunch fresh parsley, finely chopped
1/4-1/2 cup fresh grated parmesan cheese

Steps:

  • In a large saucepan, cook pasta in boiling water until just tender, about 8 minutes.
  • Drain.
  • Place garlic, salt, pepper, mustard and vinegar into a food processor.
  • Process well.
  • Add oil, process briefly until well blended.
  • Pour over orzo while pasta is still warm.
  • Add tomatoes to pasta along with olives and chopped parsley.
  • Sprinkle with Parmesan cheese.
  • Toss again and adjust seasonings, if necessary.
  • Serve immediately, or refrigerate for later use (can be made earlier in the day).
  • Best served at room temperature.

12 ounces orzo pasta
1 bunch fresh asparagus, cut into 1-inch pieces
1 pint grape tomatoes or 1 pint cherry tomatoes, halved
1 lemon, zested and juiced
4 tablespoons extra virgin olive oil
1 garlic clove, minced
2 tablespoons fresh parsley, minced
kosher salt
fresh ground pepper
parmigiano-reggiano cheese, grated (optional)

Steps:

  • Bring 2 large pots of water to boil. Add a big pinch of salt in each.
  • To one pot, add asparagus and blanch, about 2 to 3 minutes, depending on the thickness of your asparagus. Place blanched asparagus in a bowl of ice water to stop the cooking and keep them green.
  • To the second pot, add the orzo. Cook per package instructions. When tender, drain and place in a large bowl. Add blanched asparagus and tomato halves.
  • Mix olive oil, lemon zest, lemon juice, garlic, salt and pepper in a small bowl. Stir into orzo and vegetables. Stir in parsley and grated Parmigiano Reggiano (omit the cheese to make this vegan.)
  • This can be served warm, room temperature or cold.

  • Place the sun-dried tomatoes in a small bowl and cover with very hot water. Let sit to rehydrate while you prepare the orzo.
  • In a large Dutch oven or similar large, heavy-bottomed pot with a tight-fitting lid, heat the oil over medium-high heat. Once the oil is hot but not yet smoking add the onion and sauté until fragrant and beginning to soften, about 3 minutes. Add the orzo, garlic, salt, and black pepper. Sauté, stirring to combine the ingredients and coat the orzo with the onion and oil. Cook just until the garlic is fragrant, about 30 seconds. Be careful not to let the garlic burn.
  • Slowly stir in the milk and 2 cups of the broth. Bring to a gentle boil, stirring very frequently with a wooden spoon and scraping the spoon along the bottom of the pot to prevent the orzo from sticking. Cover the pot and reduce the heat to a light simmer. Cook until the orzo is al dente, most of the liquid is absorbed, and the orzo is very creamy, 8 to 10 minutes. Lift the lid every few minutes to stir and run the spoon along the bottom to prevent sticking If the pasta looks dry at any point, add several splashes of broth as needed to loosen it.
  • Drain and roughly chop the sun-dried tomatoes. Add them to the pot. Stir in the spinach, red pepper flakes, lemon zest and juice, Parmesan, and half of the basil. Continue to cook and stir until the spinach is just wilted and the cheese melts, about 1 minute. Taste and season with additional salt, black pepper, and red pepper flakes as desired. Serve hot, sprinkled with the remaining basil and additional Parmesan.
