1 cup water
½ cup loquat preserves
½ cup sweet chili sauce
¼ cup low-sodium soy sauce
¼ cup low-sodium Worcestershire sauce
¼ cup seasoned rice wine vinegar
¼ cup honey
1 envelope onion soup mix
¼ teaspoon red pepper flakes
¼ teaspoon onion powder
¼ teaspoon garlic powder
⅛ teaspoon ground cinnamon
⅛ teaspoon ground ginger

Steps:

  • Place short ribs in the crock of a slow cooker; season with salt and pepper.
  • Combine water, preserves, chili sauce, soy sauce, Worcestershire sauce, rice wine vinegar, honey, onion soup mix, red pepper flakes, onion powder, garlic powder, cinnamon, and ginger in a jar with a tight-fitting lid. Seal jar and shake until ingredients are well mixed; pour over the ribs, assuring all ribs are covered in sauce.
  • Cook on Low until the meat is fork-tender, 6 to 9 hours (or on High for 3 to 6 hours).

2 pounds chili peppers of your choice
1 onion, peeled and quartered
3 cloves garlic, peeled
1/4 cup cooking oil
1/2 cup rice wine vinegar (or cider vinegar)
1/2 cup brown sugar
1/2 cup fish sauce

Steps:

  • In a food processor, add in the chili peppers, onion and garlic. Process until desired consistency. I like mine a rough mince.
  • In a wok, large pot or large sauté pan, heat the cooking oil until shimmering on medium high heat. Add in the pepper/onion/garlic mixture and cook until fragrant, about 1 minute. Add in the remaining ingredients, mix well and bring to a simmer. Turn heat to low and cook for 20 minutes, stirring occasionally. Quickly taste and decide if you would like to add more spicy-hot chili pepper.
  • Taste and adjust seasonings. If you feel like it needs more saltiness and savoriness, add 1 tablespoon of fish sauce. Need it sweeter - 1 tablespoon brown sugar. If the sauce is lacking that tang, or high flavor note - 1 tablespoon vinegar.

1.5 tbsp red chili flakes (+ more to taste)
1/2 cup granulated sugar
1/4 cup rice vinegar
3 cloves garlic (- minced or grated)
1 cup water
1 pinch sea salt
0.5 tbsp tapioca flour / starch ((or less if you prefer a thinner sauce))
2 tbsp water
2 tsp grated ginger (- OPTIONAL)

Steps:

  • Add the vinegar, water, sugar, red pepper flakes, sea salt and garlic to a saucepan and bring to a simmer over medium-low flame. Cook for a few minutes until it starts to thicken. (If doing the ginger version then add it here as well )
  • In a small bowl whisk together the tapioca flour + 2 tbsp of water until smooth then add it to the simmering sauce making sure to stir frequently.
  • Simmer the sauce another minute or so until thickened to your liking. The sauce will continue to thicken as it cools down so keep that in mind as well. Use a little splash of water to loosen it up a bit if needed.
  • Allow to cool off completely before storing in tight lid jars in the refrigerator.

1/2 cup sweet chili sauce (Mae Ploy)
1/2 cup soy sauce
1 garlic, minced
peanut oil or vegetable oil
3 chicken breasts, boneless, skinless (4-5 ounces each)

Steps:

  • In a small bowl mix together sweet chili sauce, soy sauce and garlic. Pour 1/2 cup (half the mixture) into a small plastic food storage zip bag. Add chicken and turn to coat; refrigerate and marinade 30 minutes.
  • To a skillet, add a tablespoon or two of oil and heat over medium-high heat. Remove chicken from marinade and brown on one side for about 2-3 minutes (it may smoke a little from the sweet marinade). Turn the chicken over and brown for 2 minutes longer. Cover with a lid, turn the heat to low and let it finish cooking for about 8 minutes.
  • Place remaining chili sauce and soy sauce mixture in a small saucepan and simmer over low heat until heated through, about 5 minutes. Serve over chicken.

OR 1-2 teaspoons dried red chili flakes ((these are very hot, start with less and add more if desired))
1 1/2 teaspoons finely minced garlic
1 teaspoon finely minced ginger
1 teaspoon tamari or soy sauce ((use tamari for gluten free))
2 teaspoons cornstarch dissolved in 1 tablespoon water ((the sauce will thicken more once cooled))
1-2 drops natural red food coloring ((optional))

Steps:

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

1/2 cup rice vinegar
1/2 cup granulated sugar
1/2 cup water
2 tablespoons Shaoxing wine ((or dry sherry for gluten free))
1 tablespoon light soy sauce ((or tamari for gluten free))
3 Thai bird's eye chili peppers (, seeded and minced (or 2 teaspoons crushed chili pepper flakes))
6 cloves garlic (, minced)
2 slices ginger (, minced)
2 teaspoons cornstarch

Steps:

  • Combine all the ingredients except the cornstarch in a medium-sized non-stick pan. Heat over medium-high heat and stir occasionally until bringing to a boil. Turn to medium heat. Cook and stir for 5 minutes. Turn to medium-low heat.
  • Mix the cornstarch with 2 tablespoons water and stir until fully dissolved. Pour into the pan with the sauce. Stir constantly until the sauce thickens enough to coat the back of a spoon, 1 minute or so. Keep in mind that the sauce will further thicken once it cools. Taste the sauce and adjust the taste by adding more sugar if not sweet enough, or more vinegar if not sour enough. If the sauce turns out too thick, mix in a few spoons of water to thin it out while it's still hot.
  • Pour the sauce into a bowl and let sit until completely cooled. Serve it as a dipping sauce or store it in an airtight jar in the fridge for future use. It will keep in the fridge for about a week or in the freezer for up to 2 months.

Steps:

  • Add sugar, cayenne, minced garlic, soy sauce, salt, vinegar, and water to a saucepan and let it simmer (about 3-4 minutes), stirring occasionally till the sugar dissolves completely and the mixture reduces slightly.
  • Add the chilli paste and mix. Simmer again for 2-3 minutes.
  • Mix together cornflour and water in a bowl till no lumps exist and stir in this cornflour slurry into the sauce. Mix continuously till the sauce comes to a boil. Then reduce the heat and simmer till for 3-4 minutes till the sauce is thick, translucent and shiny. Turn off the flame.
  • Serve immediately or cool completely and then transfer to a clean jar. Refrigerate for up to 4 weeks.

2 c. plus 1/3 c. water, divided
2 c. rice vinegar
2 c. sugar
4 tsp. salt
4 fresh red Fresno, red serrano, or red jalapeño peppers, stems removed, minced (do not remove the seeds)
6 large garlic cloves, minced
1/4 c. plus 2 to 3 tsp. Clear Jel, ThermoFlo, or other canning starch

Steps:

  • In a medium-sized saucepan over medium to medium-high heat, stir together 2 cups of the water with the rice vinegar, sugar, salt, minced pepper, and garlic. Stir to dissolve the sugar and salt, and bring mixture to a boil. Boil for 5 minutes.
  • While sauce is boiling, use a small whisk or fork to mix the canning starch (I used 1/4 cup + 3 teaspoons of Clear Jel and was happy with the consistency) into the remaining 1/3 cup of water. While stirring the sauce vigorously, pour the starch/water mixture into the pan. Keep stirring and bring the mixture back to a boil. Lower the heat and simmer for 1 minute.
  • Use a ladle to scoop the sauce into half-pint (8-oz.) jars (I prefer the wide-mouth jars), leaving 1/4" headspace. Use a chopstick to remove air bubbles and then adjust the level with additional sauce if needed. Moisten a paper towel with vinegar and wipe rims of jars clean. Place lids on jars and fasten appropriately, whether it's turning a ring to fingertip tightness or fixing clamps in place.
  • Use canning tongs to transfer jars to a canner or large stock pot full of boiling water, with water covering jars by 2". Put lid on canner and return water to a boil and process for 10 minutes. Carefully transfer hot jars to a towel-lined counter before removing any rings, wiping the jars clean, and labeling.
  • Store jars in a cool, dark place for up to 1 year. Once opened, the sauce will be good for up to 3 weeks when stored in the refrigerator.

1/2 cup cornstarch
1 teaspoon baking powder
1 cup water (ice cold)
2 tablespoons canola oil
1 pound chicken thighs (boneless-skinless and cut into 1 inch pieces)
canola oil for frying
1 tablespoon oil
3 cloves garlic (minced)
3 green onions (sliced thinly, tip to tail not including the root)
1/2 cup Thai sweet chili sauce
1/2 teaspoon crushed red pepper
white sesame seeds
minced green onions

Steps:

  • Mix together the batter ingredients in a large bowl.
  • Heat a frying pan up with oil deep enough to fry your chicken pieces without them touching the bottom of the pan, a couple inches should be enough space.
  • Using a slotted spoon drain the batter as much as possible and slide the chicken into the pan.
  • Break apart the chicken after the crust starts to form and cook until the chicken is golden brown (4-5 minutes)
  • Work in batches to prevent the oil from dropping too far in temperature.
  • Remove the last batch of chicken from the pan and discard almost all the oil, leaving just a couple of tablespoons in the pan.
  • Add the garlic and green onions to the pan and cook it on medium heat for 20-30 seconds.
  • Add the chicken back in along with the sweet chili sauce and crushed red pepper.
  • Toss to combine and serve immediately.
  • Garnish with sesame seeds or green onions if desired.

3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

1/2 to 1 tablespoon dried crushed chile pepper (red pepper flakes)
1 1/2 tablespoons cornstarch
3 to 4 tablespoons cool water

Steps:

  • Gather the ingredients.
  • Add the vinegar, sugar, water, fish sauce, sherry, garlic, and pepper flakes to a saucepan or pot.
  • Bring to a rolling boil.
  • Reduce the heat to medium and let boil for 10 minutes, or until reduced by half. (Note that the vinegar will be quite pungent as it burns off; rice vinegar is less strong than regular white vinegar.)

  • Turn heat to low and continue to whisk and simmer sauce for two to three minutes.
  • Sprinkle 1/4 tsp. glucomannan powder/konjac flour into the sauce mixture and whisk vigorously. Begin cooking for one minute more. Sauce should thicken to a "dipping consistency". While the sauce will continue to thicken as it cools, you may add more glucomannan, 1/8 tsp. at a time, up to a total of a 1/2 tsp. if it appears too thin- but remember, glucomannan is very powerful stuff!

1/2 cup whole milk
1/2 pound ground pork
1/2 pound ground lamb
1/2 pound ground bison
3 garlic cloves, chopped
1 tablespoon peeled and finely grated fresh ginger
2 serrano peppers, chopped
2 shallots, chopped
1/2 tablespoon fish sauce
1 tablespoon soy sauce
1/2 teaspoon plum vinegar
1/2 teaspoon mirin
1 lime, juiced
1/2 cup chopped fresh cilantro leaves
Kosher salt and freshly ground black pepper
1 egg
3 to 4 tablespoons olive oil
1 jar sweet chili sauce
1/2 cup panko crumbs, toasted
3 tablespoons chopped crystallized ginger

Steps:

  • Soak the slice of bread in the milk in a small bowl.
  • Mix the ground meats, soaked bread, and all remaining ingredients, up to the olive oil, until well combined.
  • Roll the meat mixture into walnut-sized balls. In a large saute pan, over medium-high heat, heat the olive oil and sear the meatballs. If you can't fit them all in the pan at once, cook in batches. Sear into golden brown, about 8 to 10 minutes. Cool slightly.
  • In a small saucepan, heat the chili sauce over low heat.
  • Stick a toothpick or skewer into each meatball, then dip them into the sauce. Roll the tips in toasted panko and crystallized ginger and serve.
