SPICY ASIAN CHICKEN MEATBALLS
Delicious meatballs made with ground chicken and robust asian spices with a kick of heat that comes from Sriracha Sauce.

Steps:
- Preheat your oven to 400. Line a baking sheet with aluminum foil. Lightly spray with cooking spray. Remove any excess spray with a paper towel. Place all of the meatball ingredients into a large mixing bowl. Mix with your hands until well incorporated. Place in your refrigerator for 10 minutes to firm the mixture. Roll the meatballs into 1 1/2 - 2 inch balls and place on the baking sheet. Bake for 10-12 minutes or until an internal temperature of 165 is met. ***see tip in notes for how to roll chicken meatballs*** While the meatballs are baking, make the sauce. In a sauce pan, whisk together all of the sauce ingredients, minus the cornstarch. Once the ingredients are mixed well, gradually whisk in the cornstarch until the sauce reaches your desired thickness. Place the cooked meatballs in a large bowl and pour the sauce over top. Toss to coat. Garnish with sesame seeds and green onions.

ASIAN CHICKEN MEATBALLS
Steps:
- Cut bread to small pieces. Soak bread in milk for 10-15 minutes. Then using hand break any bigger pieces and make a smooth mixture.
- Drain excess water from minced chicken. Squeeze grated onion to remove excess liquid.
- Add all the ingredients mentioned under Meatball except Oil. Add bread milk mixture. Mix everything with hand till well incorporated.
- If you feel the mixture is still wet and difficult to make balls then add a couple of teaspoons of bread crumbs to the mixture. But the mixture should not be very dry. It should be smooth and hold shape while making balls
- With wet hands make small balls of equal size. (Use a cookies scoop to portion)
- Add oil to a pan.
- Working in batches place the meatballs in a single layer. Don't overcrowd the pan. Let it cook (on medium-low heat) undisturbed on one side. Then turn and cook further till the ball looks light golden brown in color.
- Repeat the above process till all the meatballs are cooked. (Use extra oil if required). Keep the cooked meatballs aside and let it rest.

ASIAN-STYLE CHICKEN MEATBALLS

- Preheat the oven to 375 degrees F.
- In a large mixing bowl, combine 2 tablespoons of the sambal, the soy sauce, ginger, chicken, water chestnuts, garlic, scallions, cilantro and 2 tablespoons water (this will keep the meatballs really moist!). Use your hands to squish the mixture together until combined.
- Form a little tester patty and then cook and taste to make sure the chicken is really delicious. If the seasoning isn't just right, add a little more soy sauce or a sprinky-dink of salt. When you're confident the meatball mix is perfectly seasoned, form the meatballs.
- Roll the meatballs in the peanuts, and place on a small baking sheet. Roast until meatballs are cooked through, 12 minutes.
- In a small bowl, add the mayonnaise and the remaining 2 tablespoons sambal. Stir to combine and refrigerate until ready to serve.
- Serve the meatballs hot with the chili-mayonnaise.
ASIAN CHICKEN MEATBALLS
I had a craving for a very moist, chicken meatball one day. I love Asian flavors. This is the result. This has become one of our standard meals. We usually serve with a vegetable stir-fry and rice. Don't be scared off by the large amounts of garlic and ginger, it cooks into a mellow yet flavorful blend of seasonings.

Steps:
- Coarsely chop ginger, garlic and green onions.
- Place in bowl of food processor.
- Add water chestnuts to food processor.
- Grind until a thick paste forms.
- There will still be some small pieces of water chestnut.
- Remove paste, place in mixing bowl.
- Add sesame oil, soy sauce, broth and egg to water chestnut paste.
- Add chicken.
- Combine all ingredients until well blended.
- Heat large skillet, add enough vegetable oil to cover the bottom of the pan (to help prevent sticking).
- Using hands, or a small scoop, form a ball of meat about the size of a golf ball, place in the hot skillet.
- The meat mixture is very wet and loose, it will not hold it's shape well, so keep the balls small or they will flatten as they cook.
- Saute meatballs about 2 minutes or until browned on bottom, turn gently to an uncooked side, and continue cooking.
- Keep turning the meatballs as they cook, so that all sides are browned evenly.
- Cut a meatball open to test for doneness by verifying that it is cooked through to the center.
- Remove cooked meatballs and keep warm until all are done.
- Serve plain, or with your favorite dipping sauce.
ASIAN-STYLE MEATBALLS
Use sweet ginger-sesame grill sauce or bottled stir-fry sauce to infuse ordinary meatballs with Asian flavor. This is from one of my favorite cookbooks, "BHG Off The Shelf Cooking."

- In a medium bowl combine egg, the 1/4 cup of the carrot, the bread crumbs, ginger, salt and garlic powder. Add meat and mix well. Shape meat mixture into 8 meatballs.
- In a large skillet cook meatballs over medium heat until brown, turning to brown evenly (meatballs will not be done). Remove meatballs from skillet. Wipe out skillet with paper towels.
- Add grill sauce and water to skillet, stir to combine. Add onion, drained water chestnuts, sweet red pepper, and the 1/2 cup carrot to skillet; bring to boiling.
- Return meatballs to skillet. Reduce heat. Cover and simmer for 12-15 minutes or until meatballs are done.
- Serve meatballs and sauce with hot cooked rice.

- Fry onions and garlic with olive oil until golden.
- Mix with a hook fried onion, garlic and all other ingredients.
- Grease a baking mold with olive oil.

MEATBALLS IN A SWEET 'N SPICY ASIAN SAUCE WITH WARM ASIAN SLAW
This is a great way to take a classic meatball and make it a little modern with an Asian sauce instead.....trust me......everyone will love them! I made yet, another batch of my quick and delicious Nana's Meatballs. I love making a recipe that I can use in different ways. I used half of the meatballs to have with a traditional red sauce over pasta and the other half with the Asian Sauce. I had two totally different dishes. I like serving the Spicy Asian Meatballs as an appetizer on top of a bed of this delicious Warm Asian Slaw. The next time you want to make meatballs, surprise your family and friends with a little something different. Enjoy!

Steps:
- Preheat the oven to 350 degrees.
- 1. Spray a 9x13" glass baking dish.
- 2. Mix together all meatball ingredients.
- 3. Using a melon scooper, form meatballs into 1.5" diameter balls, or use your hands, and place in a baking dish.
- 4. Bake for 30 minutes, until cooked through.
- Asian Dipping Sauce:.
- 1. Combine all dipping sauce ingredients in a small sauce pan and bring just to a boil.
- 2. Turn off heat and continue to stir and remove from heat.
- 3. Toss meatballs in the sauce and than remove them to a serving dish on top of the Warm Asian Slaw. Pour the remaining sauce on top all over the meatballs.
- 4. Sprinkle a few sesame seeds on top if you desire.
- 5. This sauce will keep in your refrigerator for a couple weeks.
- Warm Asian Slaw:.
- 1. Saute the broccoli slaw with the butter for about 1 minute.
- 2. Add the Asian sauce and saute for another 2-3 minutes until desired tenderness.
- Serve the meatballs tossed in the sauce over the warm slaw.
