ASIAN PORK STEAKS (MARINADE)

My Vietnamese fiance taught this to me. It has a strong flavor, so I serve it over a bed of rice with steamed veggies on the side. Regular Soy sauce works fine, but I prefer the low-sodium to ease the saltiness. You can fry, grill or broil the steaks, depending upon your taste. Very simple though! Prep time includes marinating, and cook time is for frying the steaks. --ETA-- I've made these as a dump recipe, and they worked great! I pour all the ingredients into a freezer bag, and when I wanted to cook them, I let them thaw overnight in the fridge. NOTE-- When you marinate them in a zippered bag, you only need half of the sauce to cover all the pork.

1 1/2 lbs pork steaks (bone in works fine, as does other pork cuts)
1 cup teriyaki marinade
2 cups low sodium soy sauce
1 -2 teaspoon diced garlic (to taste)
1 -2 teaspoon diced green onion (optional)

Steps:

  • Combine teriyaki, soy sauce, and garlic in a large zipped bag or casserole dish.
  • Add pork steaks and marinate 6 hours or overnight for more flavor (turning occasionally).
  • Fry the pork steaks over medium heat, with enough oil covering the bottom of the pan for 5-7 minutes per side (add more time for thicker cuts of pork).
  • OR You can broil the steaks in a 350°F oven for about 45 minutes, turning once after 20 minutes (depending upon thickness).

This is one of my favorite marinades to use for grilled pork chops. I usually just throw ingredients as I see fit, so the measurements are estimates. The roasted red chili paste can be found in the Asian section of your grocery store.

1 cup soy sauce
½ cup brown sugar
2 cloves garlic, crushed
1 tablespoon ground ginger
1 tablespoon ground cumin
1 tablespoon roasted red chili paste
6 (1-inch thick) pork chops

Steps:

  • Place the soy sauce, brown sugar, garlic, ginger, cumin, and chili paste in a large, heavy plastic zipper bag. Smush the bag a few times with your fingers to mix all the ingredients thoroughly and dissolve the brown sugar; place the pork chops into the marinade, and seal the bag. Allow to marinate for 30 to 45 minutes.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the pork chops from the marinade, and discard the marinade. Shake off excess marinade, and grill the pork chops until browned, the meat is no longer pink inside, and the chops show good grill marks, 5 to 7 minutes per side. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).

My local grocery store seems to put pork steaks on sale quite often, so I needed to find some other ways to make them. This makes them a little bit tropical, plus I just love grilled pineapple!!

4 pork blade steaks, about 3/4 inch thick
1 (8 1/4 ounce) can sliced pineapple (I like to use fresh pineapple, and then just use a can of pineapple juice for the marinade)
1 medium onion, chopped
1/2 cup soy sauce
1/4 cup vegetable oil
3 tablespoons light corn syrup
1 teaspoon ground ginger

Steps:

  • Trim the excess fat from the pork steaks, and place them in a large shallow container.
  • Drain the pineapple (if using fresh, just sub a can of pineapple juice in the marinade), reserving juice or syrup. Set pineapple slices aside.
  • Combine pineapple juice/syrup, onion, soy sauce, oil, corn syrup, and ginger in a small saucepan, stirring well. Cook, uncovered, over medium heat for 10 minutes, stirring frequently. Pour over the pork steaks. Cover and refrigerate for at least 8 hours, turning steaks occasionally if possible.
  • Remove the steaks from the marinade, reserving marinade. Grill steaks over low to medium coals for 35 minutes or until the desired degree of doneness. Turn and baste occasionally with the marinade.
  • Grill the pineapple slices over medium coals for 1 minute on each side. Garnish the pork steaks with the pineapple slices.

ASIAN MARINATED FLANK STEAK

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!

This has been a family favorite for years, it's an easy recipe that may also be made in an electric skillet instead of the oven, I have made this using cubed pork in place of the pork steaks/chops, and you can also make this using chicken pieces, see recipe#348602 the pork steaks can be browned in a skillet first if desired for extra flavor, use only low-sodium soy sauce for this, serve with cooked rice

6 pork steaks (or use 6-8 center-cut pork chops about 3/4-1-inch thick)
black pepper (to taste)
1/2 cup brown sugar
1 tablespoon cornstarch
1 teaspoon ginger
1/4 cup ketchup
1/4 cup Heinz Chili Sauce (use mild chili sauce)
1 -2 tablespoon fresh minced garlic (or to taste)
3/4 cup low sodium soy sauce (use only low-sodium soy sauce)
cooked rice

Steps:

  • Set oven to 325 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Season both sides of the pork steaks or chops with a small amount of black pepper, then place in the baking dish.
  • In a bowl stir together brown sugar with cornstarch and ginger, ketchup, chili sauce, garlic and soy sauce.
  • Pour the mixture over the pork; toss with hands to make certain that the pork is coated with sauce.
  • Cover with foil and bake for 1-1/2 hours or until pork is tender (pork chops may need a little less time to bake).
  • Serve with cooked rice.

5 lbs pork steaks (I use 3/4-inch thick sliced loin) or 5 lbs pork loin (I use 3/4-inch thick sliced loin)
1/3 cup hoisin sauce
3 tablespoons minced garlic
3 tablespoons oyster sauce
1/2 teaspoon white pepper
1 tablespoon salt
1 tablespoon rice wine
1 1/2 teaspoons five-spice powder

Steps:

  • Combine all ingredients, except pork, in a bowl and mix well.
  • Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
  • Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
  • Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
  • They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
  • Pork filled bags may be frozen with marinade and thawed to cook later.
  • **Note - Marinating time is not included in my "time to Make".
