GARLIC BUTTER NOODLES
I once had the famous Vietnamese-style garlic noodles featured at Crustacean in San Francisco and they were some of the best noodles I've ever eaten. I've since started making them at home and my version is very similar to the one I had at the restaurant. They are delicious!

Steps:
- Boil egg noodles in a pot until they are just cooked and still al dente. Drain out water and set noodles aside.
- In a small saucepan, add butter and heat on low heat until completely melted and it begins to bubble. Add garlic and gently stir, cooking a few minutes in the butter mixture until the aroma of the garlic is brought out (I stirred on low boiling heat for about 2-3 minutes). Careful to not let the garlic burn or brown. Add in remaining ingredients, except cheese, and stir until everything is thoroughly combined. Turn off heat.
- Transfer noodles to a large bowl. Pour in garlic sauce and toss noodles in sauce. If using, add in cheese and toss again. (As Reader Lorri in the comments pointed out, I don't actually recall Parmesan in the one I tried at the restaurant but several recipes I came across use it. It certainly doesn't hurt the recipe, but you can go either way and it still tastes good.) If desired, top with fresh chopped scallions. Serve immediately.

Steps:
- Bring a large pot of salted water to a boil. Cook the noodles/pasta according to package instructions. If using fresh noodles, you may simply need to blanch them. (Reserve some of the pasta cooking water, as you may need it in the sauce later.)
- Meanwhile, heat the butter in a large skillet over medium heat and add the garlic. Cook for 5 minutes, until lightly caramelized, and stir in the turmeric (if using), oyster sauce, soy sauce, brown sugar, and sesame oil. Stir for 1 minute and add the scallions.
- After 30 seconds, to let the scallions wilt, toss in the cooked pasta and parmesan cheese. If the sauce is too thick, add a few tablespoons of the noodle cooking water to loosen them up. Serve!

ASIAN GARLIC NOODLES (QUICK & EASY)
Super easy and garlicky noodles that I love making with wonton noodles. Of course any kind of pasta would work with this too. An excellent dish to eat on its own, but great when paired with simple seafoods too.

GARLIC NOODLES
These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

- Rinse the yellow noodles with running water to discard the oil from the noodles. Drain and set aside.
- Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles until al dente (you want it to still have a good chewy bite), or for a few minutes. You can taste the texture of the noodles while cooking. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.
- Prepare the Garlic Sauce using a saute pan on medium to low heat. Add the butter into the pan and when it melts, add the garlic and saute until aromatic but not browned. Add all the seasonings into the pan, stir to combine well. Transfer the garlic sauce into a small bowl.
- To serve, just toss all the noodles with the garlic sauce. Add the Parmesan cheese, toss to combine well. Serve immediately.
