1/3 cup rice vinegar (not seasoned)
2 tablespoons soy sauce
2 tablespoons honey mustard
1 tablespoon grated peeled ginger
3 tablespoons vegetable oil
3 tablespoons sesame oil
1 pound skinless, boneless chicken thighs
1 small head napa cabbage (about 1 pound), cut into bite-size pieces
1 medium carrot, thinly sliced
4 scallions, thinly sliced
1/4 pound snow peas, cut crosswise into thirds
Kosher salt
1/2 cup chow mein noodles

Steps:

  • Preheat a grill or grill pan to medium high. Make the dressing: Whisk the vinegar, soy sauce, honey mustard and ginger in a medium bowl, then add the vegetable and sesame oils in a slow stream, whisking until combined. Toss the chicken with 1/4 cup of the dressing in another bowl; let marinate 10 minutes at room temperature. Remove the chicken from the marinade (discard the marinade) and grill until cooked through, 4 to 5 minutes per side. Transfer to a cutting board; let rest 5 minutes. Meanwhile, toss the cabbage, carrot, scallions and snow peas with the remaining dressing in a large bowl. Cut the chicken into 1/2-inch pieces and toss with the salad. Season with salt. Top with the chow mein noodles.

4 slices peeled fresh ginger
3 tablespoons fresh lime juice
3 tablespoons peanut oil
2 tablespoons packed light brown sugar
2 tablespoons fish sauce
1/2 teaspoon Sriracha
1/2 head napa cabbage, thinly sliced
2 carrots, grated
4 ounces snow peas, trimmed and thinly sliced on the diagonal
1/2 cup fresh mint leaves, torn
1/3 cup chopped salted peanuts

Steps:

  • Combine the chicken and ginger in a medium saucepan and cover with water by 1 inch. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the chicken is cooked through, about 10 minutes. Drain and transfer the chicken to a cutting board.
  • Meanwhile, make the dressing: Whisk the lime juice, peanut oil, brown sugar, fish sauce and Sriracha in a small bowl; set aside.
  • Combine the cabbage, carrots, snow peas and mint in a large bowl. Add all but 2 tablespoons of the dressing and toss to coat.
  • Thinly slice the chicken. Top each serving of salad with the chicken and peanuts; drizzle with the remaining dressing.

1 tbsp. Toasted Sesame Seeds
1 tbsp. Black Sesame Seeds
1/4 c. Water
1/4 c. Sugar
3 tbsp. Honey
1/2 tsp. Red Pepper Flakes
Generous Pinch Of Kosher Salt
FOR THE VINAIGRETTE:
2 tbsp. Minced Fresh Ginger
2 cloves Garlic, Minced

Steps:

  • For the spicy honey sesame cashews:Preheat the oven to 350ºF. Prepare a sheet pan with a sheet of greased parchment paper.In a small bowl, combine cashews and sesame seeds. Set aside.In a small sauce pan, combine water, sugar, honey and red pepper flakes with a generous pinch of kosher salt. Bring it to a simmer and let cook for 2-3 minutes.Remove from the heat and add cashews and seeds to the pot. Stir to coat the nuts and seeds and then place on the prepared sheet pan. Bake cashews and seeds at 350ºF for 15 minutes until golden, stirring every 5 minutes. Transfer the nuts to a fresh sheet of parchment paper and set aside to cool and firm up. 2 tablespoons lime juice

2 heads romaine lettuce

Steps:
