ASIAN SESAME BROCCOLI SALAD
Steps:
- Blanch the broccoli: Bring a large pot of water to a boil and add in a generous pinch of salt after the water boils. Boil the broccoli florets for 1 minute and then place the broccoli into a bowl of ice water or run it under cold running water to stop the cooking process. This helps brighten the color and retain the crunchiness of the broccoli while removing some of the raw taste. Drain the broccoli very well from the ice bath and set it aside. Excess water will dilute the dressing.
- Make the dressing: In a small pot, heat the minced garlic and olive oil until the garlic starts to sizzle and becomes fragrant. Remove it from the heat and add in the sesame oil, soy sauce, rice wine vinegar, black and white sesame seeds, and chili pepper flakes.
- Mix the broccoli with the dressing and season it with salt and pepper. The longer the broccoli sits in the dressing, the more flavor it will absorb. This tastes the best after about an hour. Serve chilled or at room temperature.

ASIAN BROCCOLI SALAD
My friend Jane gave me this recipe. It's a sure-fire hit at potlucks and picnics. REALLY easy to make, and keeps well. If I know it (or leftovers) will have to wait in the fridge for more than a day, I skip the mushrooms.

Steps:
- Preheat oven to 425°F Lightly spray a large, rimmed baking sheet with non-stick cooking spray (or use a stoneware pan without spray.) Set aside.
- In a large mixing bowl, stir together the canola oil, chile-garlic sauce, sesame oil, raw sugar and minced garlic until even.
- Slice the broccoli crowns into long spears, keeping as much of the stem area intact as possible. Do not cut the spears too small or they'll burn instead of cooking to the desired crisp tender stage. Add all of the broccoli spears to the mixing bowl with the oil mixture and toss until everything is evenly coated. Transfer to the prepared pan, arranging the spears so they are in a single layer and sprinkle with salt to taste.
- Bake for 20-25 minutes, or until there are darkened, black, wilted edges on the cut areas and florets of the broccoli. Remove from the oven and serve immediately with hot, cooked rice or as an accompaniment to a stir fried meats or tofu.

ASIAN BROCCOLI SALAD WITH TANGY CHILI-GARLIC DRESSING
With broccoli's high levels of antioxidants, anti-inflammatory and pro-detoxification compounds, easy-to-absorb calcium and soluble and insoluble fiber, it's definitely a vegetable you want to be eating more of-and I'm not talking just the usual side of steamed broccoli. It's also a great base for super-tasty meals like this salad.

Steps:
- Roast the broccoli: Preheat the oven to 400 degrees F. Add the broccoli florets, oil and a large pinch of salt to a rimmed baking sheet lined with parchment paper. Toss to combine, and spread out in a single layer. Roast for 20 minutes, stir and continue roasting until broccoli is browning, 10 minutes more. Remove from the oven, and set aside to cool.
- Make the dressing: Warm the unrefined sesame oil in a small skillet over medium heat. Add the garlic and jalapeno, and cook until garlic is golden, 1 to 2 minutes. Transfer the mixture to a small bowl, and add the vinegar, tamari, toasted sesame oil and sesame seeds. Stir well to combine.
- Assemble the salad: Add the roasted broccoli, carrots, daikon and scallions to a large bowl, and toss to combine. Divide between 2 bowls, and drizzle with dressing. Sprinkle with toasted sesame seeds, and serve immediately.

- Heat oven to 400°F. Place the broccoli and tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoons oil, salt, and pepper, and toss to coat. Bake for 10 to 15 minutes or until the broccoli starts to brown and the tomatoes soften and start to pop open.
- In a blender or jar, add the salad dressing ingredients, and either shake well or process until the dressing is very smooth and creamy. Adjust spiciness by adding more or less chili sauce. We like 1 tablespoon and it gives it a nice kick without being very spicy.
- Shred cabbage and carrots. I use my food processor to finely shred cabbage, but prefer the texture of julienne carrots.

- Heat a small saucepan over medium heat. Add sesame oil and rinsed quinoa. Toast quinoa, stirring frequently, for 2-3 minutes, then add water. Bring to a boil over medium-high heat. Then reduce heat to low, cover and cook for 18-20 minutes (or until liquid is absorbed). Once cooked, turn off the heat and leave the lid on until serving (this helps make the quinoa fluffier).
- While the quinoa is cooking, add 1 inch of water to a medium saucepan, heat over medium-high heat, and insert a steamer basket (or steam in the microwave). Once water is simmering, add the edamame, then the broccoli and cover. Cook for 2 minutes to gently thaw the edamame and steam the broccoli. Then remove from heat and transfer to a large mixing bowl (for serving). Set in the refrigerator to chill.
- Next, prepare dressing. To a small mixing bowl add nut butter, chili garlic sauce, maple syrup, tamari (or coconut aminos), lime juice, sesame oil, minced ginger (optional), crushed peanuts (optional) and whisk to combine. Taste and adjust seasonings as needed, adding more maple syrup for sweetness, chili garlic sauce for heat, tamari for saltiness, or lime juice for acidity. Set aside.
