Chinese Char Siu Grilled Chicken image

We all love Grilled Chicken on the BBQ We all love Char Siu. So why not combine them & make char siu grilled chicken. Grilled chicken with Chinese bbq sauce

Provided by Sarah

Categories     Chicken

Time 45m

Number Of Ingredients 10

2 tablespoons brown sugar
2 tablespoons hoisin sauce
1 tablespoon Shaoxing wine ((can substitute rice wine or beer))
½ teaspoon five spice powder
¼ teaspoon white pepper
½ teaspoon sesame oil
2 cloves garlic ((minced))
5 drops red food coloring ((optional))
2 pounds chicken thighs and drumsticks ((900g))
salt

Steps:

  • Mix together the BBQ sauce by combining the brown sugar, hoisin sauce, Shaoxing wine, five spice powder, pepper, sesame oil, garlic, and red food coloring (if using). Put 1/2 of the BBQ sauce in a small bowl for serving, and set aside. The other half will be used to baste the chicken on the grill.
  • Prepare a medium-hot grill or preheat the broiler. If using the broiler, line a rimmed baking sheet with aluminum foil.
  • Season the chicken with salt to taste, and put the chicken on the grill or, if broiling, put it on the prepared baking sheet. Grill or broil, turning once, for 10 minutes per side--making sure to keep an eye on the chicken to ensure it doesn't burn.
  • Baste the chicken with the other half of the sauce mixture, and continue to grill or broil until the chicken is cooked through (time will vary depending on the size of your chicken thighs and drumsticks). Transfer the chicken to a serving platter, brush with the reserved sauce, and serve.

Quick and easy Asian marinated chicken thighs! Also great with chicken breast or flank steak. Marinate overnight for best flavor.

Provided by LoreleiLee

Categories     World Cuisine Recipes     Asian

Time 4h40m

Yield 4

Number Of Ingredients 9

⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon Thai-style sweet chili sauce
1 teaspoon chile-garlic sauce (such as Sriracha®)
3 cloves garlic, minced
¼ teaspoon curry powder
4 skinless, boneless chicken thighs

Steps:

  • Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
  • Preheat an outdoor grill for medium-low heat; lightly oil the grate.
  • Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
  • Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

Provided by Rachael Ray : Food Network

Time 35m

Yield 4 servings

Number Of Ingredients 17

2 cups chicken stock
2 tablespoons canola or peanut oil
1 lime, zested and juiced
1 cup long grain rice
1/4 cup chopped chives
1 1/2 pounds boneless, skinless chicken thighs or tenders, diced or thinly sliced
Freshly ground black pepper
1 chile pepper, thinly sliced
1 (1-inch) piece fresh ginger, grated or minced
2 large cloves garlic, thinly sliced or grated
1 large red bell pepper, seeded and thinly sliced or diced
1/3 cup hoisin sauce
1/3 cup orange marmalade
2 tablespoons tamari sauce or low-sodium soy sauce
1/2 cup unsalted dry roasted peanuts
1 bunch scallions, thinly sliced on an angle
Chopped cilantro, for garnish, optional

Steps:

  • For the rice: Bring 1 1/2 cups stock, 1 tablespoon oil, and lime zest to a boil. Add the rice, stir, reduce heat to medium-low to simmer, and cover. Cook 15 to 16 minutes, and then stir in the lime juice and chives. Turn off the heat and fluff the rice. Keep covered and warm on the stove until ready to serve.
  • For the chicken: Meanwhile, heat the remaining 1 tablespoon oil in a large non-stick skillet over high heat. When the oil smokes, add the chicken and season with black pepper. Brown evenly, and then remove to a plate. To the skillet, add chile, ginger, garlic, and red bell pepper and stir fry for 2 minutes. Return the chicken to the pan. Stir together the hoisin, marmalade, tamari and remaining 1/2 cup chicken stock. Add to the pan and reduce over high heat for 2 to 3 minutes. Stir in the peanuts and scallions. Turn off the heat.
  • Serve the chicken over rice in shallow bowls and garnish with cilantro, if desired.

CHINESE BARBECUED CHICKEN

Chinese Barbecued Chicken image

This is a terrific recipe that I found, and tweaked successfully, in Ken Hom's Quick and Easy Chinese Cooking. The original has double the amount of sesame oil but I feel a little of that goes a long way...double it if you wish. This can be served hot or cold. It's delicious! Prep time does not include 1 hour marinating time.

Provided by Hey Jude

Categories     Chicken

Time 55m

Yield 4 serving(s)

Number Of Ingredients 11

1 whole chicken (about 3-3 1/2 lbs.)
2 teaspoons salt
4 cloves garlic, peeled
2 slices fresh peeled ginger
5 tablespoons hoisin sauce
3 tablespoons rice wine or 3 tablespoons dry sherry
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 teaspoon chili paste
2 teaspoons sugar
1 teaspoon toasted sesame oil

Steps:

  • Cut the chicken into quarters and rub each piece evenly with the salt.
  • Combine the rest of the ingredients in a blender or food processor and puree them.
  • Place the chicken in a resealable plastic bag and pour the marinade over.
  • Squish around good so the marinade is evenly coating the chicken.
  • Set aside to marinate at least 1 hour at room temperature, or refrigerate overnight.
  • Preheat broiler, light a fire in an open gril or turn on your gas grill.
  • When your chosen cooking method is hot, place the chicken on the grill and cook, over indirect heat, for about 45 minutes turning occasionally, or until meat is no longer pink near the joints.
  • This is really good served with steamed jasmine rice and greens or stir-fried pea pods and mushrooms.

OVEN-BARBECUED ASIAN CHICKEN

Oven-Barbecued Asian Chicken image

From EatingWell, com: November/December 2011, Eating Well One-Pot Meals -- This Asian barbecued chicken made in a casserole dish is truly finger-licking good! You can make this with 2 bone-in chicken breasts (about 12 ounces each) instead of thighs and drumsticks, if you prefer. Remove the skin (if desired) and cut each chicken breast in half on the diagonal to get 4 portions about equal in weight.

Provided by KerfuffleUponWincle

Categories     Chicken Breast

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 11

1 bunch scallion
1/4 cup hoisin sauce
1 tablespoon reduced sodium soy sauce
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 teaspoon Asian chili sauce (such as Sriracha, or to taste)
1/4 teaspoon Chinese five spice powder (see TIPS BELOW)
1 -2 tablespoon honey (optional)
4 bone-in chicken thighs (1 1/4-1 1/2 pounds total, trimmed, remove skin if desired)
4 chicken drumsticks (1-1 1/4 pounds total ~ trimmed)
1 1/2 teaspoons toasted sesame seeds (see TIPS BELOW)

Steps:

  • Preheat oven to 350°F Coat a 9-by-13-inch (or similar-size) baking dish with cooking spray.
  • Thinly slice 1/4 cup scallion greens; set aside.
  • Mince the scallion whites. Whisk the scallion whites, hoisin sauce, soy sauce, ginger, garlic, hot sauce, five-spice powder, and honey (OPTIONAL) in a large bowl. Add chicken and toss to coat. Arrange the chicken in an even layer in the prepared baking dish, meatier-side down. Pour any remaining sauce from the bowl over the chicken.
  • Bake, turning once halfway so the meatier side is up, until an instant-read thermometer inserted into the thickest part without touching bone registers 165°F, about 1 hour.
  • Transfer the chicken to a serving platter and top with any remaining sauce from the baking dish.
  • Sprinkle with sesame seeds and the reserved scallion greens.
  • TIPS:.
  • Chinese five-spice powder is a blend of cinnamon, cloves, fennel seed, star anise and Szechuan peppercorns. Look for it in the spice section of the supermarket, or with other Asian ingredients.
  • Sesame seeds can be toasted in a small dry skillet over medium heat, stirring constantly, until golden and fragrant, about 2 minutes.

  • Preheat the oven to 350°. Wrap the garlic cloves in foil and bake for about 30 minutes, until soft. Squeeze the garlic from the skins into a small bowl.
  • Meanwhile, in a medium skillet, cook the peppercorns over moderately high heat, shaking the skillet occasionally, until they are smoking and fragrant, 2 minutes. Transfer the peppercorns to a spice grinder and let cool completely, then grind to a coarse powder.
  • In the same skillet, cook the chopped onion in the vegetable oil over moderate heat, covered but stirring occasionally, until the onion is caramelized, about 10 minutes. Add the roasted garlic, ground black pepper and oyster sauce and cook over moderately high heat, stirring, for 1 minute. Add the soy sauce and cook until reduced by half, about 1 minute. Add the water and white wine vinegar and simmer over moderate heat until the barbecue sauce is very thick, about 5 minutes. Transfer the barbecue sauce to a blender and puree until smooth.
  • Light a grill. Oil the grates and grill the chicken skin side down over moderately high heat until the skin is crisp, about 7 minutes. Turn the chicken and cook over moderate heat until the chicken is almost white throughout, about 5 minutes. Generously brush the barbecue sauce onto the skin; turn and grill until glazed, about 30 seconds. Generously brush the other side with sauce, turn and grill the chicken until glazed. Repeat the glazing on both sides. Transfer the chicken to a work surface to rest for 5 minutes.
