My family loves pasta salad during the hot summer months. It's a fresh twist on a penne pasta salad. You can substitute gluten-free pasta, if needed. The flavor is tangy and fresh. My husband, James, made this for our Mother's Day brunch as a side dish but you can add grilled chicken and enjoy it as your main course.

Steps:
- Toss the sun-dried tomatoes, onion, 1 tablespoon of the vinegar and 1/4 teaspoon salt together in a large bowl, then set aside.
- Bring 4 quarts water to a boil in a large Dutch oven or large pot. Stir in 1 teaspoon salt and the pasta and cook until the pasta is al dente. Drain the pasta and rinse under cold water until cool. Drain the pasta well and transfer to the large bowl. Add the arugula and parsley and toss to combine.
- Whisk the remaining 2 tablespoons vinegar, the oil, mustard, garlic and red pepper flakes together in a small bowl. Add to the pasta and toss until combined. Stir in the provolone and season with salt and black pepper.

- Thaw the octopus and cut off the head and beak.
- Place the octopus in a heavy saucepan with the celery, carrot, onion, garlic, wine, and water.
- Bring to a boil, then reduce the heat to a simmer.
- Continue to cook until the octopus is fork tender, about 60 minutes.
- It will release a lot of liquid as it cooks, and turn the cooking liquid purple which is normal.
- Preheat your broiler or grill.
- Remove from the heat and allow to cool.
- Remove the octopus from it's cooking liquid and place on a baking sheet.
- Lightly brush the octopus with olive oil and then broil or grill until it begins to brown.
- Allow to cool, then cut into bite sized pieces and place in a a salad bowl.
- Add the cherry tomatoes and arugula.
- Toss, then drizzle in just enough olive oil to lightly coat the greens and season with salt and pepper.
- Toss gently once more and arrange in individual serving bowls.
- Drizzle just a little of the aged balsamic over the salad in each bowl and serve.

- Cook the pasta to al dente per the directions on the box. Drain and cool.
- Wash and chop the cilantro and the parsley very fine.
- Chop into small bite-size peppers, onions, and celery. (I use the Valdivia Chopper to make a uniform size)
- Cut the cherry tomatoes in half and cube the cheddar cheese.
- Next, make the dressing, mix together the mayo, olive oil, apple cider vinegar, and garlic powder. Whisk until smooth.
- In a large bowl, larger than your serving bowl, combine the cooked pasta, the chopped cilantro, parsley, peppers, onions, celery, cherry tomatoes, and cheddar cheese. Toss.
- Add the creamy dressing and toss to coat. Then add the arugula and toss again.
