SHRIMP AND ARTICHOKE LINGUINE

Who doesn't love a great 30 minute meal? This shrimp and artichoke linguine recipe is so flavorful with a zesty garlic-lemon-herb sauce that will make your heart go pitter pat. So fresh, light and easy!

1 lb linguine (reserve 1 cup cooking liquid)
3 Tbsp olive oil
4 Tbsp unsalted butter
3 large or 4 medium garlic cloves (pressed or minced (about 1 1/2 Tbsp))
1 lb large shrimp (21-25 count, peeled and deveined)
1 tsp sea salt for shrimp
1/4 tsp black pepper (freshly ground)
Two 15-oz cans artichoke hearts (not marinated, well drained and quartered)
1/4 cup fresh parsley (finely chopped)
1 tsp grated lemon zest
1/4 cup freshly squeezed lemon juice (from 2 small lemons)
1/2 cup freshly grated parmesan cheese to serve

Steps:

  • Prep: Grate lemon zest from the first lemon then squeeze juice from both lemons. Drain artichoke hearts, cut into quarters and pat dry with papertowels.
  • Cook linguine in a large pot of water with 1 Tbsp salt (8-10 minutes) or according to package instructions. Reserve 1 cup pasta cooking liquid then drain pasta (no need to rinse).
  • Meanwhile, In a large (12-14 inch) heavy-bottomed pan over medium heat, add 4 Tbsp butter and 3 Tbsp olive oil. Once butter is sizzling, add 4 pressed garlic cloves an stir 1 minute. Add shrimp in a single layer and sprinkle with 1 tsp salt and 1/4 tsp black pepper. Saute shrimp 1-2 minutes per side, just until pink and not translucent.
  • Add artichokes and toss to combine for another 2 minutes, or just until warmed through. Remove from heat and stir in 1/4 cup chopped parsley, 1 tsp lemon zest, and 1/4 cup lemon juice.
  • Pour shrimp and artichokes over drained pasta and toss to combine. If juicier pasta is desired, drizzle with reserved cooking liquid from pasta (I added 1/2 cup pasta liquid).

Steps:

  • Heat the oil in a large skillet over medium heat. Add garlic and shallots and cook, stirring until softened but not browned, 2 to 3 minutes. Add shrimp, artichoke hearts, wine, and lemon juice and cook until the shrimp are cooked through, 3 to 4 minutes. Stir in the parsley, salt and pepper. Divide among 4 plates, garnish with additional parsley, and serve.

1 head cauliflower, broken into small florets
1 can water-packed artichoke hearts, drained cut into quarters
1/4 cup whole pitted black olives
8 ounces fresh shrimp or 8 ounces frozen shrimp, washed & drained
lettuce leaf (for garnish)
1 slice lemon, rind of (to garnish)
1/2 lemon, juice of
1 tablespoon fresh parsley, snipped
1/3 cup lite olive oil (use virgin if you wish)
2 green onions, chopped (white & green)
1/4 cup white wine vinegar
1 teaspoon sugar
1/2 teaspoon dried thyme
salt and pepper
1/8 teaspoon ground red pepper (optional)

Steps:

  • Steam the cauliflower for 5 minutes so they are still crisp, cool.
  • Mix all the vinaigrette ingredients except oil.
  • In a blender slowly add the oil in a steady stream while the blender is on.
  • Gently toss the cailiflower, artichokes, olives and shrimp, season.
  • Arrange cauliflower etc.
  • on individual plates on a lettuce leaf, chill.
  • To Serve pour dressing over, or serve on the side, garnish each plate with a piece of lemon peel.

1 head cauliflower, cut into bite-size florets
1 pound Jerusalem artichokes, cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1 tablespoon cumin seeds, toasted and ground
1/2 teaspoon cayenne pepper
Finely chopped fresh chives, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, combine the cauliflower and Jerusalem artichokes; toss them generously with olive oil and salt.
  • In a small bowl, combine the cumin and cayenne and add to the vegetables. Toss well to thoroughly combine.
  • Spread the veggies on a baking sheet in one even layer-use two baking sheets, if necessary. Roast 20 minutes, then stir the veggies so they have the chance to brown all over and rotate the pan to ensure even cooking. Roast another 20 minutes, then stir and rotate again.
  • Roast the vegetables for an additional 5 to 10 minutes, or until they are brown, tender and smell wonderful-almost like popcorn! If they aren't lovely and brown, let them continue to roast for another few minutes. Taste and adjust the seasoning, if necessary.
  • Remove the veggies from the oven, sprinkle with chives and transfer to a serving dish. Serve immediately.

4 large artichokes
1 lemon, juiced
2 tablespoons olive oil
Salt
4 tablespoons mayonnaise
2 tablespoons lemon juice
1 teaspoon honey
1 teaspoon mustard
1 pound shrimp, boiled and peeled
1/4 teaspoon paprika
Pinch saffron
1/2 pound cherry tomatoes

Steps:

  • Trim the sharp ends of each artichoke with scissors, and place in a large pot. Combine the artichokes with the lemon juice, olive oil, salt, and fill pot with enough water to cover the artichokes. Boil for 40 minutes or until tender. Remove artichokes from pot and let cool.
  • Once artichokes have cooled, scoop out the centers with a spoon, to remove the choke.
  • To prepare the sauce, combine mayonnaise, lemon juice, honey and mustard in a small bowl and mix well until smooth.
  • Mix the shrimp with 3 tablespoons of the sauce and add the paprika and saffron.
  • To serve, fill each artichoke with the remaining sauce. Garnish each artichoke by filling each leaf with a shrimp. Place on a large platter and serve with cherry tomatoes.

SHRIMP WITH ARTICHOKES

8 small or 5 medium-size artichokes
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1 tablespoon Italian parsley
3 large cloves garlic, chopped
2 tablespoons flour
Salt and freshly ground black pepper
16 jumbo shrimp, peeled and de-veined
1/2 cup dry white wine

Steps:

  • If the artichokes are small, trim the stem to within a half inch of the base and remove the tougher outer leaves. Cut each artichoke in eighths and place in a bowl. Toss with the lemon juice and cover with water. Set aside for 15 minutes. If you are using medium-size artichokes, trim the stem flush with the base and remove all the leaves. Using a sharp knife, cut away the center choke, leaving just the fleshy bottom or heart of the artichoke. Cut each in eighths and treat with the lemon as previously described.
  • Drain the artichoke pieces.
  • Heat half the oil in a heavy skillet over medium heat. Add the artichokes, parsley and garlic, reduce the heat to low and cook, stirring from time to time, about 20 minutes until the artichokes are lightly browned and tender when pierced with a sharp knife.
  • When the artichokes are tender, remove them from the skillet. Season the flour with salt and pepper to taste and toss the shrimp in the flour to coat them lightly. Add the remaining oil to the skillet and increase the heat to medium.
  • Add the shrimp to the skillet and stir-fry a minute or two, until they turn pink. Pour in the wine. Cook, stirring, until the wine just films the bottom of the pan. Return the artichokes to the pan, stir, season to taste with salt and pepper and serve.

1 (14 ounce) can artichoke bottoms, rinsed and drained
1 1/2 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 tablespoons olive oil
1 cup chopped onion
6 garlic cloves, thickly sliced
2 teaspoon lemons, zest of, grated
1/8 teaspoon red pepper flakes
1 cup white wine
1 cup chicken broth
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1 lb spaghetti or 1 lb angel hair pasta
1/2 cup diced tomato (optional)

Steps:

  • Rinse and drain artichokes, slice into 1/4 inch slices.
  • Pat the shrimp dry and toss with 1/4 teaspoon each of salt and pepper.
  • In a large sauté pan, heat olive oil over medium-high heat until sizzling.
  • Add half of the shrimp and quickly brown on both sides, about 1 minute per side.
  • Remove the shrimp to a bowl with a slotted spoon.
  • Brown the remaining shrimp and remove to bowl.
  • Decrease heat to medium-low.
  • In the same pan sauté the artichoke slices, onion, garlic, lemon zest, and red pepper flakes until the artichoke slices and onion start to brown,about 10 to 12 minutes.
  • Add the wine and stir gently to dislodge any browned bits from bottom of pan.
  • Cook until liquid is reduced by half.
  • Add the chicken broth,lemon juice,1 tablespoon of parsley, and the remaining salt and pepper.
  • Bring to a boil, then simmer until slightly thickened, about 10 minutes.
  • While sauce is cooking, Cook the pasta.
  • Drain pasta and return to pot.
  • Return shrimp to sauce just to warm through, no longer than 2 or three minutes.
  • Pour sauce over pasta and simmer over low heat, stirring constantly, coating pasta with the sauce, about 2 minutes.
  • Turn pasta out on to warm serving dish.
  • Sprinkle with parsley and diced tomato, if desired, and serve.

16 bottled artichoke bottoms, packed in oil
2 tablespoons finely chopped Italian parsley
1 teaspoon finely minced garlic
1 cup olive oil
1/4 cup freshly squeezed lemon juice

Steps:

  • Put the shrimp in a saucepan, and add water to cover. Bring to a boil, and remove from the heat. Let stand 15 minutes and drain.
  • When the shrimp are cool enough to handle, peel and devein them. Cut each shrimp crosswise on the bias into thin slices. There should be about 2 cups.
