Yield Serves 8

Number Of Ingredients 22

Filling
1 tablespoon olive oil
5 large garlic cloves, chopped
1/4 teaspoon fennel seeds
1 9-ounce package frozen artichoke hearts, unthawed
1/2 cup chopped fresh fennel
1/2 cup canned vegetable broth or water
2 tablespoons minced fresh fennel fronds
1 egg yolk
32 to 36 gyoza (round) wrappers or wonton wrappers
1 egg white
Sauce
1/4 cup olive oil
4 garlic cloves, chopped
1 cup chopped fresh fennel
1 1/4 teaspoons fennel seeds
1 28-ounce can Italian tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1/4 teaspoon dried crushed red pepper
1/8 teaspoon ground cloves
Fresh fennel fronds

Steps:

  • For filling:
  • Heat olive oil in heavy medium skillet over medium heat. Add chopped garlic and fennel seeds and sauté 3 minutes. Add artichoke hearts and chopped fennel and stir 1 minute. Add vegetable broth and bring mixture to boil. Cover skillet and cook until vegetables are very tender, about 12 minutes. Uncover and simmer until pan juices have evaporated completely, stirring occasionally, about 10 minutes. Scrape filling into processor and cool. Add fennel fronds and process to coarse puree. Season to taste with salt and pepper. Add yolk and blend.
  • Line baking sheet with plastic wrap. If using wonton wrappers, trim edges to form rounds. Brush entire surface of 1 wrapper lightly with egg white. Place 1 rounded teaspoon filling in center. Fold dough over, forming semi-circle. Seal edges, pressing out any air around filling. Place on prepared sheet. Repeat with remaining filling and wrappers. (Ravioli can be prepared ahead. Cover loosely with towel and plastic wrap and refrigerate up to 8 hours, or cover with plastic and freeze 3 days. Do not thaw frozen ravioli before cooking.)
  • For sauce:
  • Heat oil in heavy large saucepan over medium-low heat. Add garlic, fennel and fennel seeds and sauté until tender, about 12 minutes. Add tomatoes with their juices and next 4 ingredients. Simmer until sauce thickens, breaking up tomatoes with back of spoon, about 25 minutes. Season with salt and pepper. (Can be made 2 days ahead. Cover; chill. Rewarm before using.)
  • Boil ravioli in large pot of boiling salted water until tender, about 5 minutes. Drain well. Spoon some sauce on each plate. Arrange ravioli atop sauce. Garnish with fresh fennel fronds.

ROASTED FENNEL TOMATO SAUCE

Roasted Fennel Tomato Sauce image

Roasting the fennel tempers the liquorice-like flavor and enhances the sweetness of this bulbous vegetable. A pinch of peperoncini adds spice. Use a short pasta (rigatoni, fusilli or cavatelli are all good choices). Adapted from a recipe by Blake Royer at Serious Eats, which he adapted from _The Splendid Table's How to Eaty Supper_.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

2 fennel bulbs, cored and sliced
2 large onions, peeled and sliced
8 garlic cloves, roughly chopped
1/3 cup olive oil
1/2 teaspoon chili flakes
2 tablespoons fennel seeds
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (14 ounce) can whole tomatoes, crushed by hand
1/2 cup shredded parmesan cheese
1 lb short pasta

Steps:

  • Preheat the oven to 450°F Combine the fennel, onion, garlic, oil, chili flakes, fennel seeds, salt, and pepper in a roasting dish and roast, tossing once or twice during cooking, for 15 minutes.
  • In the meantime, bring a pot of salted water to boil and cook the pasta until al dente. Reserve some pasta cooking water.
  • After 15 minutes of roasting, stir the crushed tomatoes into the vegetables, combining well. Roast 5 to 10 minutes more, until the fennel is tender and starting to brown.
  • Reserve 1 cup of the pasta cooking water. Drain the pasta and toss with the roasted vegetables and Parmesan, adding some pasta cooking water if necessary until the sauce is loosened and coats the pasta. Serve immediately.

ARTICHOKE & FENNEL SALAD WITH FRESH WARM TOMATO VINAIGRETTE

Artichoke & Fennel Salad With Fresh Warm Tomato Vinaigrette image

Fresh ingredients, fennel, market tomatoes, baby artichokes (well, I am using frozen, but you can absolutely use fresh if you have the time and if they are available). Honestly I prefer buying frozen baby artichokes which are so much easier. This is a great side dish.

Time 1h30m

Yield 6-8 , 6-8 serving(s)

Number Of Ingredients 20

2 cups cherry tomatoes, cut in quarters
2/3 beefsteak tomato (or you can use plum tomatoes diced)
1/2 cup heirloom tomato (I like a purple or orange to give a bit different flavor, also diced)
1 large shallot, fine diced
1 tablespoon garlic, minced
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup fresh basil, diced fine
1 teaspoon fresh lemon juice
1 tablespoon kosher salt
1 teaspoon ground black pepper
2 (9 ounce) packages frozen artichoke hearts, I used Birds Eye Brand
2 large fennel bulbs, thin sliced
1 teaspoon lemon zest
1 tablespoon italian seasoning
2 tablespoons olive oil (to roast or grill)
salt
pepper
2 tablespoons fresh basil, minced
1/2 cup parmesan cheese, grated

Steps:

  • Vegetables -- In a large sauce pan add the olive oil and bring to medium heat. Add the vinegar, garlic, shallot and all the tomatoes and saute on medium to medium high heat until the tomatoes begin to fall apart. Bring to low heat and just simmer 15-20 minutes. Add the basil, salt and pepper to taste. The sauce is done.
  • Artichokes and Fennel -- Thaw the artichokes and then cut in half. Also cut the fennel, removing the center bulb area and then slice fairly thin. In a large bowl, add both the fennel and artichokes along with the olive oil, lemon juice, lemon zest, salt and pepper and Italian seasoning and toss to coat. Put on a cookie sheet lined with parchment or foil and bake at 425 degrees for about 15-20 minutes until they get soft and slightly golden brown. This can easily be done on the grill as well.
  • Plate -- Add the artichokes and fennel to each plate and top with some of the fresh tomato sauce, and garnish with fresh basil and parmesan cheese. ENJOY!
