2 tablespoons olive oil
1 medium yellow onion, chopped
1 medium green bell pepper, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1/2 teaspoon ground cumin
1 (16 ounce) can kidney beans, drained and rinsed
1 (10 ounce) frozen whole kernel corn, thawed (Del Monte preferred)
2 (16 ounce) cans low-sodium tomatoes, with liquid and chopped
1 (8 ounce) package macaroni, uncooked (Ronzoni Whole Wheat pasta)
1 (4 ounce) package low-fat monterey jack cheese, shredded

Steps:

  • In a dutch oven, cook the macaroni per the pkg; drain and set aside.
  • In a large skillet, heat the oil on med-high; add the onion, green pepper, garlic, chili powder and cumin.
  • Saute 5 min or until tender; then add the kidney beans, corn and tomatoes (with liquid).
  • Bring this mixture to a boil, then immediately reduce heat to low and simmer, stirring often, for 15 minutes.
  • Then add this mixture to the cooked and drained macaroni and toss well, to combine.
  • Either serve directly from the dutch oven or from a nice serving bowl with the monterey jack cheese sprinkled over it.

1 lb ground beef
1 medium onion, chopped
1 small bell pepper, chopped
26 -28 ounces spaghetti or 26 -28 ounces pasta sauce
2 (14 1/2 ounce) cans beef broth
2 cups uncooked pasta (I prefer macaroni noodles)

Steps:

  • Brown ground beef, drain.
  • Add onion& bell pepper and cook until tender.
  • Add pasta sauce and beef broth; bring to a boil.
  • Add pasta.
  • When mixture is bubbling, turn heat down to medium.
  • Cook over medium heat until pasta is tender.

1/4 cup flour
3/4 teaspoon seasoning salt
1 lb boneless skinless chicken breast, cubed
2 tablespoons vegetable oil
29 ounces canned tomatoes, diced and undrained
1 1/4 ounces taco seasoning mix
1 cup celery, thinly sliced
1 small onion, chopped
2 1/4 ounces ripe olives
1 cup long grain rice, uncooked
1 cup water
2 ounces cheddar cheese, shredded

Steps:

  • Combine flour and seasoned salt in Ziploc bag. Add chicken. Seal and shake to coat chicken.
  • Brown chicken in large skillet in oil over medium high heat. Add remaining ingredients, except cheese, and bring to a boil.
  • Cover, reduce heat and simmer 25 minutes until rice is tender and liquid is absorbed.
  • Serve with sprinkled cheddar cheese.

  • Brown ground beef and drain.
  • Add tomato paste, water, seasoning mix, onions, green peppers, and macaroni.

  • Cover and simmer for 20-25 minutes.
  • Top with shredded cheese.
