RASPBERRY PEACH AQUA FRESCA
This Mexican fruit cooler is sweet and refreshing - just the thing to serve alongside your barbeque on a sticky summer day. You can make it with any ripe fruit but this particular combination of raspberries and peaches is my favorite across the board.

Steps:
- Combine the raspberries and agave in a bowl. Macerate at room temperature for 30 minutes.
- Put the macerated raspberries, peaches, 4 cups cold water, lime juice and vanilla in a blender. Blend until smooth. Strain the mixture into a pitcher and add more agave if needed. Cover the pitcher and let chill for at least 1 hour before serving.
AGUAS FRESCAS

- Blend 5 cups of any chopped fruit (we used strawberries, cantaloupe, pineapple, honeydew, watermelon and mango) with 3 cups water, 1/2 cup sugar and 2 tablespoons lime juice. Add more sugar and/or lime juice to taste and serve over ice.
ZUPPA DI FRUTTA

Steps:
- Mix together the cream, the sugar, and the grappa. Blend well.
- Slice the peach, plum, and nectarine into 6 slices each. Divide slices among 6 shallow bowls. Cut strawberries in half, divide halves among the 6 bowls. Place 3 blueberries in each bowl.
- Divide the cream mixture among the 6 bowls.
BLACKBERRY AQUA'S FRESCA

Steps:
- Bring 8 cups of water to a boil in a large saucepan over medium heat. Add blackberries, mint, and tea bags. Remove from heat and let stand 1 hour at room temperature. Strain the mixture through a sieve, into a pitcher and discard the tea bags and solids. Add sugar and lemon juice to the tea, stirring until sugar dissolves. Pour into glasses or cups and garnish each serving with a mint sprig.
AGUA FRESCA

Steps:
- Purée fruit in a blender, adding just enough water (or water and ice) to blend. Strain purée through a fine sieve if it is fibrous or seedy.
- Put purée in a pitcher, adding more water (or water and ice) to make a total of 8 cups. Stir in sugar and mint, if using, and lime juice to taste. Serve.
