SIMPLE CRUNCHY POTATO AND ONION CASSEROLE - LOW CAL



Simple Crunchy Potato and Onion Casserole - Low Cal image

If you like crunchy potatoes, with no sauce, you'll love this casserole made in a shallow dish! We love it plain and simple, and fight over the crunchy parts, but feel free to add seasonings of your choice. If calories are no object, top the casserole with shredded cheese (or sour cream) and sprinkle with real cooked bacon pieces.

2 large onions, peeled and thinly sliced
4 large potatoes, peeled and thinly sliced
2 tablespoons butter, melted
1/4-1/2 teaspoon salt
1/8-1/4 teaspoon ground black pepper

Steps:

  • Note:*** This casserole has no sauce which allows some of the top and bottom potatoes to get crispy- the more the better! Be sure to use a 9x13-inch casserole. DO NOT use a deep dish casserole as this will prevent the potatoes from cooking properly and getting crunchy.
  • ***Preheat oven to 350 degrees.
  • Spray the 9x13-inch casserole with non-stick cooking spray.
  • Place half of potatoes in bottom of casserole dish.
  • Place layer of onions over potatoes.
  • Sprinkle with salt and pepper.
  • Place remaining potatoes on the top layer.
  • Drizzle butter over the entire casserole, using total of 4 tbs butter, if not counting calories.
  • Spray top of casserole with non-stick cooking spray.
  • Cover and bake 20 minutes in lower third of the oven.
  • Uncover and bake an additional 40-50 minutes until potatoes are done and casserole is golden brown on top.
  • If you are lucky, the bottom potatoes will be a little browned, too!
  • VARIATION: During last 5 minutes of baking, sprinkle casserole with 4 ounces shredded sharp cheddar cheese.
  • Let melt and serve.
  • HAM-POTATO VARIATION: Add 8-12 ounces cooked ham or smoked pork shoulder, cubed, between the onion and potato layers.
  • Bake as directed.

Creamy Mashed Potatoes with Crispy Brown Onions image

2 1/2 pounds Yukon gold or other yellow-fleshed potatoes
Salt
Vegetable oil, for frying
1/2 pound onions, cut crosswise into thin slices and separated into rings
All-purpose flour
Pinch freshly grated nutmeg
12 tablespoons (6 ounces) unsalted butter, cut into small pieces, at room temperature
1/2 cup heavy cream, brought to a boil
Freshly ground white pepper
Fresh parsley leaves, for garnish

Steps:

  • Fill a large mixing bowl with cold water. With a swivel-bladed vegetable peeler, peel each potato and remove any "eyes," then cut it in quarters with a sharp knife and put in the bowl of water.
  • Put the potatoes in a large pot and add cold water to cover them. Salt the water. Over high heat, bring the water to a boil, skimming off foam that rises to the surface; then reduce the heat to maintain a simmer and cook the potatoes just until tender enough to be pierced easily with a skewer or a sharp knife tip.
  • While the potatoes are boiling, prepare the onions: In a deep-fryer or a deep, heavy saucepan, heat about 3 inches of oil to 375 degrees F. Lightly dust the onion rings with flour and carefully drop them into the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry them until golden, 3 to 5 minutes, removing them with a slotted spoon or wire skimmer to drain on paper towels. Season lightly with salt and keep warm.
  • When the potatoes are done, drain them immediately. Using a ricer or a food mill, puree the potatoes into a mixing bowl. Add the nutmeg, 8 tablespoons of the butter, and the hot cream. With a wooden spoon, stir them into the potatoes. Season, to taste, with salt and pepper.
  • Mound the potatoes in a heated serving bowl. Put the remaining butter in a saucepan or skillet and, over medium-high heat, melt it and continue cooking just until it turns golden brown. Lightly season the butter with salt and immediately drizzle it over the potatoes.
  • Pile the crispy onions on top of the mashed potatoes. Garnish with parsley and serve immediately.

4 large russet potatoes, scrubbed, cut into 1/4-inch slices
1 tablespoon butter or 1 tablespoon margarine
2 garlic cloves, minced
1 teaspoon dried thyme
2 large eggs
1/4 cup skim milk
1 cup fine breadcrumbs
1 teaspoon italian seasoning
1 large yellow onion, cut into 1/4-inch rings
salt and pepper

Steps:

  • Heat oven to 450F degrees and lightly grease a 13"x9" ovenproof dish.
  • Arrange potatoes, overlapping slightly and brush with butter (margarine).
  • Sprinkle potatoes with garlic, salt, pepper and thyme.
  • In a bowl whisk together the eggs and milk; mix well.
  • Mix bread crumbs and Italian seasoning.
  • Dip onion rings into the milk and then in the crumbs.
  • Pat the crumbs onto the onion rings so they fully cover and adhere to the rings.
  • Arrange onion rings in a single layer on top of the potatoes.
  • Bake the casserole, turning the onion rings once during baking for about 30-35 minutes, or until the potatoes are cooked and the onion rings are crisp and brown.

¼ cup butter
1 box (7.2 oz) Betty Crocker® homestyle creamy butter or roasted garlic mashed potatoes
1 can (15.25 oz) Green Giant® whole kernel corn, drained
1 cup shredded Cheddar cheese (4 oz)
1 can (2.8 oz) French-fried onions

Steps:

  • 1.) Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 3-quart saucepan, heat milk, water and margarine to boiling. Stir in contents of both pouches of potatoes (from potatoes box) just until moistened; let stand 1 minute. Stir with fork until smooth. Stir in corn.
  • 2.) Spoon half of potato mixture into dish. Sprinkle with ½ each of the cheese and onions. Top with remaining potatoes; sprinkle with remaining cheese and onions.
  • 3.) Bake 10 to 15 minutes or until cheese is melted and onions are golden.

½ teaspoon onion powder

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a large baking pan.
  • Place potatoes into a large bowl.
  • Whisk oil, onion powder, garlic salt, pepper, and paprika together in a small bowl. Pour over potato cubes, hand-tossing to coat. Place potatoes into the prepared pan, spreading them so that they are evenly dispersed.

1 ½kg Desirée potatoes , cut into roughly 1in chunks
3 tbsp olive oil
1 onion , as thinly sliced as you can
small bunch dill , roughly chopped

Steps:

  • Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
  • Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

4 onions, medium, peeled and sliced
2 tablespoons butter
4 garlic cloves, minced

3 tablespoons parsley, chopped
1/2 cup whipping cream
1/4 teaspoon paprika

Steps:

  • Preheat oven to 350°.
