1 1/2 cups dried apricots
2 cups flour
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
4 eggs
1 tablespoon orange zest
1 teaspoon vanilla
1 teaspoon water

Steps:

  • Chop the apricots.
  • Sift flour, sugar, baking soda, and salt into a medium bowl.
  • In a large bowl, beat 3 eggs, orange zest, and vanilla with an electric mixer until just combined. Stir in the flour mixture and beat until a stiff dough is formed.
  • Fold in apricots.
  • In a small bowl, beat the remaining egg with the water. Form the dough into 2 logs, about 12 inches long each. Place on a greased cookie sheet and flatten slightly. Brush with egg wash.
  • Bake at 350 degress for 40-50 minutes, until golden. Allow the logs to cool on the baking sheet for about 10 minutes.
  • With a serrated knife, cut the baked logs diagonally into 1/2 inch thick slices. Place the slices (cut side down) on the baking sheet.
  • Bake at 350 degrees for 10 or 15 minutes more, until golden Cool on a wire rack. After cool, keep fresh in an airtight container.

1/2 cup ground coffee
1 tablespoon unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup sugar
2 tablespoons unsalted butter, at room temperature
1/4 cup honey
1 teaspoon vanilla extract
3 large eggs
3/4 cup macadamia nuts, roughly chopped
1 12-ounce bag white chocolate chips
2 1/2 cups sweetened shredded coconut, toasted

Steps:

  • Preheat the oven to 350 degrees F line a baking sheet with parchment paper. Whisk the flour, coffee, cocoa powder, baking soda and cinnamon in a medium bowl. Combine the sugar, butter, honey, vanilla and eggs in a large bowl with a mixer on medium-high speed. Reduce the mixer speed to low; beat in the flour mixture until just combined. Stir in the macadamia nuts with a wooden spoon.
  • Form the dough into two 3-by-8-inch logs on the prepared baking sheet, about 3 inches apart. Bake until browned, about 25 minutes. Let cool 10 minutes, then transfer to a cutting board. Cut into 1/2-inch-thick slices using a serrated knife.
  • Reduce the oven temperature to 325 degrees F. Arrange the slices cut-side down on the baking sheet; return to the oven and bake 20 more minutes, flipping the cookies halfway through. Let cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
  • Melt the white chocolate chips in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water), stirring until smooth. Dip the biscotti partway into the melted chocolate, then roll in the coconut. Place on a baking sheet lined with fresh parchment; refrigerate until set, about 30 minutes.

Apricot and Almond Biscotti are so delicious with sweet apricots and lightly roasted almonds. Crisp and crunchy, they are ready to dip in a hot cup of coffee or tea. These Italian biscotti are really easy to make and are the perfect addition to your holiday cookie tray!

2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup sugar
4 Tablespoons butter (room temperature)
2 large eggs
1 teaspoon finely grated orange zest
2 teaspoons freshly squeezed orange juice
½ teaspoon vanilla extract
1 cup whole almonds (toasted and coarsely chopped)
1 cup dried apricots (chopped)
1 teaspoon finely grated orange zest
2 teaspoons freshly squeezed orange juice

Steps:

  • Preheat the oven to 325ºF. Position a rack in the center of the oven. Line a baking sheet with parchment paper.
  • Remove enough zest from one large orange to make 1 tsp. set aside.
  • Squeeze the orange to obtain 2 teaspoons of orange juice.
  • Combine the flour and baking powder in a medium bowl and mix together thoroughly.
  • In a large bowl with an electric mixer, beat the sugar, butter, eggs, salt, orange zest, orange juice and vanilla for 2 to 3 minutes, until thick and pale.
  • Add the flour mixture to the mixing bowl a little bit at a time. Add in the chopped apricots and almonds and mix on medium-low speed until all the ingredients are moistened.
  • Let the dough rest a couple of minutes in the mixer bowl.
  • Scrape out the dough with a rubber spatula onto a lined cookie sheet (I used a sheet for each log) and divide the dough in half.
  • Spray hands with cooking spray. Divide the dough into two equal pieces, then shape each into a flattened log, about 3 inches wide and 12 inches long. If you are using one baking tray, place logs a few inches apart on the baking sheet so they won't stick together as they bake. If you have two sheets, place one log on each lined baking sheet.
  • Bake until dough is firm but gives slightly when pressed, about 20-25 minutes.
  • Transfer sheet to a wire rack and let logs cool completely (could take a full 30 minutes). Reduce oven temperature to 300 degrees.
  • Transfer the first loaf carefully to a cutting board. When the logs have completely cooled down, begin slicing the first log by pressing a very sharp knife straight down into the dough. Place the cookies back on the baking sheet, cut sides up. Keep in mind that the when you slice on a bigger angle, you will get much longer cookies. If you slice short angles, you'll get small biscotti. Place the second log on the cutting board and repeat process cutting out the cookie pieces and placing on the baking sheet.
  • Bake 7 minutes, flip biscotti, and bake 7 minutes more.
  • Set the sheet on a rack to cool completely. Store in an airtight container on the counter for up to 3 days. After 3 days, safest to store in the refrigerator.

1 cup granulated sugar
2 eggs
1/4 cup milk
2 teaspoons almond extract
3 cups all-purpose flour
2 teaspoons baking powder

1 cup toasted macadamia nuts
2/3 cup dried apricot, sliced
12 ounces white chocolate, melted (375 g)

Steps:

  • Line 2 rimless baking sheets with parchment paper or grease; set aside.
  • In large bowl, beat in eggs, milk and almond extract. In separate bowl, whisk together flour, baking powder and salt; stir into butter mixture. Stir in nuts and apricots.
  • On lightly floured surface, form into four 2-inch wide logs. Place, 3 inches apart, on prepared pans. Bake in top and bottom thirds of 350°F oven, rotating and switching pans halfway through, until light golden and firm, about 22 minutes. Let cool on pans for 10 minutes.
  • Transfer logs to cutting board. Using chef's knife, cut diagonally into ½ inch wide slices. Stand slices upright, ½ inch apart, on prepared pans; bake in top and bottom thirds of oven, rotating and switching pans halfway through, until dry, about 30 minutes. Transfer to rack; let cool.
  • Dip half of each cookie into chocolate; return to rack and let set. (Make ahead: Layer between waxed paper in airtight container and store for up to 5 days or freeze for up to 3 weeks.) Makes about 48 cookies.

I don't like biscotti in general, they are too hard and I don't dunk anything in milk or coffee, just not my thing...my good friend and past landlady Terry made these biscotti and I only tried them to make her happy. Oh my god! They were so good and NOT hard, crisp but tender! If biscotti is not your thing, give these a try, you might change your mind!

1/2 cup butter
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons Amaretto
2 cups unbleached all-purpose flour (+)
2 tablespoons all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup macadamia nuts
2/3 cup white chocolate chips

Steps:

  • In a mixing bowl cream butter and sugar until light and fluffy.
  • Beat in eggs, vanilla and liqueur.
  • In a bowl combine the flour, baking powder and salt.
  • Add to the creamed mixture, mixing until blended.
  • Fold in nuts and chocolate chips. Divide dough in half.
  • On a greased and floured baking sheet pat out into two logs about 1/2 in high, 1 1/2 inches wide and 14 inches long, placing them at least 2 inches apart.
  • Bake in the middle of a preheated 325 degree oven for 25 minutes or until lightly browned.
  • Transfer from baking sheet to a rack.
  • Let cool for 5 minutes. Place on a cutting board.
  • With a serrated knife slice diagonally on a 45 degree angle about 1/2 inch thick.
  • Place the slices upright on the baking sheet and return to the oven for about 8 minutes longer to dry slightly.
  • Let cool on a rack.
  • Store in a tightly covered container.

1 1/2 cups self raising flour
1 cup whole meal flour
1 teaspoon baking powder
3/4 cup caster sugar
3 eggs (lightly beaten)
2 lemons, juice and zest of (I prefer lemon) or 2 limes, juice and zest of (I prefer lemon)
1 cup roasted raw macadamia nuts (leave whole)

Steps:

  • Preheat oven to 200'C.
  • Sift the flours, baking powder and sugar into a bowl and stir to mix well.
  • In a separate bowl combine the eggs, nuts, juice and rind of either the lemons or limes.
  • Add the egg mix to the dry ingredients and mix to form a stiff dough.
  • Turn out the dough onto a floured board and divide into two and shape into 2 logs.
  • Place the 2 logs onto a baking tray which has been lined with a piece of baking paper, or has been greased and floured.
  • Bake at 200'C for 15minutes.
  • Remove logs from oven and allow to cool completely.
  • Cut into thin slices (I use a bread knife for this) and place in a single layer onto a baking paper lined baking tray.
  • Return to oven which has been turned down to 150'C and bake for 10mins or until firm and golden.
  • When cold store in an airtight container.

1 (18 1/4 ounce) package pillsbury golden butter recipe cake mix
1 cup all-purpose flour
2 1/2 teaspoons ground ginger
2 teaspoons lime zest
1/2 cup butter, melted and slightly cooled
2 large eggs
1 1/2 cups coarsely chopped macadamia nuts
1 cup white chocolate chips
1 tablespoon Crisco shortening

Steps:

  • HEAT oven to 350°F Position rack in center of oven. Spray cookie sheet with no-stick cooking spray.
  • PLACE cake mix, flour, ginger, lime peel, melted butter, eggs and macadamia nuts in large mixing bowl. Blend 1 to 2 minutes with an electric mixer on low speed until well blended, scraping bowl often (dough will be very stiff).
  • TRANSFER dough to prepared cookie sheet. With floured hands, shape dough into two rectangles, each 14-inches long by 3-inches wide by 3/4-inch thick, about 4 to 5 inches apart on sheet. Mound the dough so it is slightly higher in the center than at the edges.
  • BAKE 30 to 35 minutes or until firm to touch. Remove from oven and cool on sheet for 10 minutes. Leave oven on.
  • CUT each rectangle into 3/4-inch slices on the diagonal using a sharp kitchen knife, while still on cookie sheet. Carefully turn slices onto their sides. Return cookie sheet to oven.
  • BAKE an additional 10 minutes. Turn oven off and let biscotti remain in oven until crisp; 30 to 40 minutes. Remove from oven and transfer biscotti onto a rack. Cool completely.
  • PLACE white chocolate chips and shortening in a resealable food storage bag. Microwave 30 seconds on MEDIUM HIGH (70% power). Knead mixture in bag. Microwave another 30 seconds on MEDIUM HIGH. Knead. If necessary, microwave an additional 10 to 15 seconds, until chips are melted. Cut a small corner from bag. Drizzle melted white chocolate over biscotti.
