GRANDMA'S KOLACKY COOKIES

A cookie recipe given to me by my husband's Polish grandma (busia) that I have to double because they fly off the plate -- one recipe for them and one for me! My favorite Solo filling is Apricot, but any are wonderful.The pronounciation is "Kolatchkie", but I've never seen it spelled any other way than Kolacky! (Dough can be refrigerated and cookies frozen after making.)

3 cups sifted flour
1 1/2 cups butter
1/2 cup sour cream
1 (8 ounce) can solo brand filling
sifted confectioners' sugar

Steps:

  • Cut butter into flour with two forks to resemble small peas, as you would pie crust. Stir in sour cream with serving spoon and mix well.
  • Form into 2 balls and store, covered, in refrigerator to chill. Taking out one ball at a time, dust each with flour and roll on floured surface to approximately 1/8 thickness. (Note: If dough starts tearing, it may need more flour or to be chilled a bit more.).
  • Cut with larger round cookie cutter or coffee cup, Fill center with approximately 1-2 teaspoons Solo, Bring up each side and pinch to close.
  • Bake at 350 dg. for 12-15 minutes, until bottiom of cookie is just beginning to brown. Cool on wire racks then dust with powdered sugar. Enjoy!

1 cup butter, softened
6 ounces cream cheese, softened
2 tablespoons white sugar
2 cups all-purpose flour
3/4 cup dried apricot
1 1/2 cups water
3/4 cup white sugar

Steps:

  • To make Filling: Combine apricots and water in heavy saucepan and cook covered over medium heat for 10 minutes or until apricots are soft. Cook UNCOVERED 5 to 10 minutes or until most of the water has been absorbed.
  • Mash apricots, stir in 2 tablespoons of sugar and let filling cool. Set aside.
  • To make Dough: Cream butter and cream cheese until fluffy; add 3/4 cup sugar and beat well. Add flour and mix well. Shape dough into ball and chill 1 hour.
  • Turn dough onto well-floured surface, working with only half the dough. Roll into 1/8 inch thickness and cut into 2 inch squares. Spoon 1/2 teaspoon of apricot filling into the center of the square. Bring four corners to center, pinching to seal.
  • Bake at 400 degrees F for about 15 minutes. Optional - you may baste with butter halfway thru baking period.
  • Optional - drizzle LIGHTLY with powdered sugar/milk frosting if you desire sweeter kolaches.

This is a Danish bun version of Kolacky, a delicious pastry. Use your own favorite sweet dough recipe instead of this particular one, if you prefer. 2 (¼ ounce) packages of active dry yeast
1½ cups water (hot to the touch from the tap)
½ cup vegetable oil, or 1/2 cup butter, melted
½ cup granulated sugar
2 eggs
2 teaspoons salt
1/3 cup powdered milk
3 cups all-purpose flour
2½-3 cups bread flour
1 (12.5 ounce) can solo apricot pastry filling
1 egg, beaten for brushing on the pastries
glaze:
1-1/4 cups confectioners' sugar
3 tablespoons milk or water
½ teaspoon white vanilla

Steps:

  • 1. Grease a large bowl with shortening set aside.
  • 2. In a large mixing bowl, add first 6 ingredients and mix on low to medium speed for about 2 minutes.
  • 3. Add the all-purpose flour and powdered milk; beat for 2 minutes more. Stir in the bread flour and mix well. (You may need to add a little more flour if the batter is too sticky).
  • 4. Add the dough to a lightly floured surface and knead the dough for about 10 minutes.
  • 5. Form the dough into a smooth ball and place it into the greased bowl, turning the dough over so that both sides are greased. Cover with a piece of plastic wrap. Let dough rise in a warm place until doubled; approximately 1-2 hours depending on the warmth of the area.
  • 6. Line 2 large cookie sheets with parchment paper; set aside.
  • 7. Punch down the dough. Divide the dough in half.
  • 8. On a lightly floured surface, roll out half of the dough to ¼ inches thick. Use a glass or a cookie cutter that is 3-4 inches in diameter and cut out rounds of dough as closely as possible so there will not be much dough left over. Note: Do not re-roll left over dough. It will make the pastry tough.
  • 9. Place cut-out rounds onto the parchment lined cookie sheets about 1-2 inches apart. Cover with a towel and let sit in a warm place for about 40-45 minutes.
  • 10. Repeat with the other half of dough.
  • 11. Make a well or depression in the center of each piece of dough round. I use the back of a rounded cookie scooper or you can use your fingers to make a small well. Fill each indent with 1 Tablespoon of apricot filling.
  • 12. Brush around the tops and sides of the pastry with 1 beaten egg. Set in a warm place and let rise for another 15-20 minutes; uncovered.
  • 13. Preheat oven to 325 degrees.
  • 14. Bake kolacky at 325 degrees for approximately 25-30 minutes.
  • 15. Remove pastries from baking sheets and cool on racks. Drizzle glaze over the kolacky, while warm but, not hot.
  • 16. Glaze: Stir milk into sugar and mix until creamy. Add vanilla. Drizzle over pastries. You can add more confectioners' sugar to make it thicker, or thin it with a little milk or water.

7-3/4 to 8-1/4 cups all-purpose flour
2/3 cup sugar
1 tablespoon active dry yeast
2 teaspoons salt
2-1/2 cups 2% milk
1 cup plus 2 tablespoons butter, cubed, divided
4 egg yolks
2 cans (12 ounces each) apricot cake and pastry filling
GLAZE:
3/4 cup confectioners' sugar
1 to 2 tablespoons water

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat milk and 1 cup butter to 120°-130°. Add to dry ingredients; beat until moistened. Add egg yolks; beat on low speed for 30 seconds. Beat on high for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Shape into 1-1/2-in. balls; roll each into a 2-1/2-in. circle. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes., Using the end of a wooden spoon, make a 1-1/2-in. indentation in the center of each roll; fill with about 2 teaspoons apricot filling. Melt remaining butter; brush over dough., Bake at 350° for 15-20 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients; drizzle over warm rolls.
