APRICOT-TARRAGON ICE CREAM
Steps:
- Combine tarragon with milk and heavy cream and bring just to a simmer. Cover and let set for 1 hour. Combine yolks with the sugar and whisk until pale. Bring the cream back to a simmer and slowly pour the cream mixture into the yolks while stirring. Return the mixture to the pan and cook over low heat and continue stirring until the mixture thickens and coats the back of a spoon. Strain, pour into a container and chill in an ice bath. Cover and refrigerate for 24 hours. Romove from refrigerator and stir in apricot puree. Process in a an ice cream maker according to manufacturer's directions.
APRICOT, ALMOND & PINEAPPLE SOUR CREAM COFFEE CAKE
I created this pineapple sour cream coffee cake recipe for a contest at the Los Angeles County Fair in the 1980s. My kids were very proud of me when my name was called for first place. - Preheat oven to 350°. In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. In another bowl, whisk flour, almond flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition., Transfer half the batter to a greased 10-in. springform pan. Mix pineapple and apricot preserves; drop by tablespoonfuls over batter. Carefully top with remaining batter. Sprinkle with almonds. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool completely. Remove rim from pan. Sprinkle with confectioners' sugar if desired.

Steps:
- Wash and pit the apricots, chop them coarsely and simmer in three tablespoons of water until tender. Puree in a food processor and set aside.
- Beat together the eggs, yolks and sugar until the sugar has dissolved and the mixture is pale and lemon colored. (This can easily be done in a food processor.)
- Meanwhile, heat the cream and milk with the vanilla and coriander seeds. Remove from heat just before mixture reaches the boiling point.
- Pour mixture in a thin stream into the eggs and mix thoroughly. Pour into a double boiler and put over very hot water on a medium flame. (You can also use a thick saucepan placed on an iron trivet over a low flame.) Cook until thickened to the consistency of custard.
- Remove from heat and cool, whisking occasionally. Remove coriander bag. Strain mixture into a bowl and add the apricot puree. Chill thoroughly, then place the mixture in an ice cream maker and follow manufacturer's directions.
CARDAMOM-SCENTED PEACH-APRICOT COBBLERS
These single servings of peach cobbler have some exciting surprises under their drop-biscuit tops: cardamom and allspice. While the spices work to perfume each and every bite, sliced apricots bring a touch of acidity which helps to make every bite more delicious than the last.

- Filling: Preheat oven to 375°F. Stir together peaches, apricots, granulated sugar, cornstarch, lemon juice, cardamom, allspice, and salt. Divide mixture between six 1 1/2-cup ramekins or gratin dishes (about 1 1/3 cups each).
- Biscuits: In a bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. Cut in butter to form clumps no larger than small peas. Stir in buttermilk and cream until a soft, sticky dough forms.
- Spoon about 1/3 cup dough on top of each ramekin (fruit mixture should not be completely covered). Brush tops with cream; sprinkle with sanding sugar. Transfer to a baking sheet and bake until golden brown and bubbling, 55 to 70 minutes. Let cool 30 minutes; serve with ice cream.

- Cherry-Vanilla Simmer 2 cups cherry juice, 1/2 cup sugar and 1 split, scraped vanilla bean (seeds and pod) over medium heat until syrupy, 15 to 20 minutes; strain.

- Rhubarb Shrub Make Rhubarb syrup (No. 4). Stir in 1 1/2 cups water, 1/2 cup lemon juice and 1/4 cup white vinegar. Cover; refrigerate 2 days. Stir; mix each 1/2 cup with 1/2 cup seltzer.
- Cantaloupe Puree 4 cups cubed cantaloupe, 1/4 cup honey, the juice of 1 lemon and a pinch of salt; strain, pressing on the solids. Mix with seltzer.
- Currant Simmer 1 cup black or red currant jelly with 2 tablespoons water until smooth; strain. Let cool completely. Mix with seltzer.
- Balsamic-Fig Simmer 1 cup fig preserves with 2 tablespoons each balsamic vinegar and water until smooth; strain. Let cool completely. Mix with seltzer.
- Licorice Simmer 1 cup each sugar and water with 1 tablespoon anise seeds over medium heat until syrupy, 5 minutes; strain. Let cool completely. Mix with seltzer.
- Espresso-Licorice Simmer 2 cups water, 1 cup sugar, 1/2 cup brewed espresso and 1/4 teaspoon anise seeds over medium heat until syrupy, about 10 minutes; strain.
