EASY BAKED STICKY APRICOT SALMON



Easy baked sticky apricot salmon image

Apricot salmon baked until sticky and glossy is the most delicious, easiest dinner recipe served with broccoli and is perfect for meal prep.

800 g (1,7lbs) salmon ((trimmed into 4 skin-on fillets) )
¾ cup (180ml) apricot jam/preserves
1-2 tbsp (15-30ml) soy sauce
2 tbsp (30ml) lemon juice
pinch of chilli flakes/red pepper flakes ((optional) )
½ tsp garlic powder
2 tbsp (30ml) water
salt and pepper (to taste )

Steps:

  • Pre-heat the oven to 220ºC/430ºF.
  • Combine all the glaze ingredients and bring to a simmer in a small saucepan. Allow to cook for a few minutes until the glaze has thickened and coats the back of a spoon easily. Adjust seasoning (add more soy or lemon juice if necessary) and allow to cool slightly.
  • Line a baking tray with foil and grease with a little oil/cooking spray. Place the salmon fillets on the tray, skin-side down. Pour over the glaze and place in the oven.
  • Allow to bake for 7-10 minutes, spooning the glaze over the salmon every 2-3 minutes, until the salmon is cooked to your preference, and is glossy and sticky.
  • Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.

Steps:

  • Mix 1/4 cup apricot preserves, 1 1/2 tablespoon mustard, and 1 teaspoon balsamic vinegar in a bowl to make glaze. Divide glaze between 2 separate bowls.
  • Whisk 2 tablespoons balsamic vinegar, 2 teaspoon apricot preserves, 1 teaspoon mustard, salt, and pepper together in a bowl. Drizzle in 1/4 cup olive oil, whisking constantly, until dressing is emulsified.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Brush 1 teaspoon of olive oil over both sides of each piece of salmon. Season with salt and pepper.
  • Place salmon flesh-side down in the center of the grill pan. Set timer for 3 1/2 minutes and press "Start." Flip salmon so skin side is down. Brush with glaze from one of the bowls. Set timer for 4 minutes and press "Start." Remove salmon to a plate and spoon glaze from the second bowl on top. Let salmon rest for 5 minutes.
  • Place 1 1/2 cup arugula and 1/2 cup cherry tomatoes on each serving plate. Drizzle with dressing. Top with cooked salmon fillets.

2 jalapenos, cut into rings
1 tablespoon garlic, minced
1/2 cup white wine
3 tablespoons whole-grain mustard
1 cup apricot preserves
Four 6-ounce salmon fillets, skinned and boned
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
Four 3-inch fresh rosemary sprigs
1 lemon, zested

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saute pan over medium heat, heat oil. When hot, add jalapenos and saute until caramelized. Add garlic, and before it begins to brown, deglaze with white wine. Next add mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes and let completely cool.
  • Place parchment paper on planks, add salmon, lightly salt and pepper, place a rosemary sprig on each fillet, and liberally apply cooled apricot mixture.
  • Place cedar plank on gas burner. When plank has begun to smoke, place into preheated oven.
  • Cook salmon until medium-rare; remove from oven and let sit for 2 to 3 minutes until serving. Garnish with lemon zest.

1 cup quinoa
1 1/4 cups chicken broth
1 1/2 lbs. salmon fillet (4 6-oz. fillets)
1/2 tsp. salt (divided)

1/3 cup apricot preserves
1 Tbsp. dijon mustard
4 green onions
2 cloves garlic
1 yellow pepper
1 medium zucchini
1 cup frozen peas (thawed)
2 Tbsp. soy sauce

Steps:

  • Bring quinoa and broth to a boil. Reduce heat, cover and simmer until liquid has evaporated, about 10-15 minutes. Fluff with a fork. *Note, this is less than the recommended amount of liquid.
  • Prepare ingredients: Preheat broiler to high. Season salmon with 1/4 tsp. salt and 1/8 tsp. pepper. Stir together apricot preserves and dijon mustard and spread over salmon filets. Slice green onions. Mince garlic. Chop zucchini. Chop pepper.
  • Heat large skillet over medium high heat. Add remaining 1 Tbsp. oil to pan, and when it's hot, add vegetables to pan, stirring occasionally for about 7-8 minutes.
  • While the veggies are cooking, broil the salmon on the second or third rack for about 10-12 minutes, or until cooked through.
  • When the quinoa is done cooking, add to veggie pan and toss together. Add soy sauce to pan and stir until the liquid has evaporated.

1 Tbsp unsalted butter
1 Tbsp honey
1 1/2 Tbsp dijon mustard
2 lb salmon filet (cut into 6 equal portions)
1/2 tsp sea salt

1 1/2 lbs broccoli (cut into medium florets)
2 Tbsp olive oil
1/2 tsp sea salt (or to taste)

Steps:

  • Preheat Oven to 450˚F. Line a large baking sheet with parchment paper or silpat.
  • Place broccoli florets on lined baking sheet and toss with 2 Tbsp olive oil, and season with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Roast broccoli by itself at 450˚F for 5 minutes to soften, since broccoli needs a little more time to cook than salmon then remove from oven.
  • Meanwhile, in a small saucepan, combine all glaze ingredients, bring to a simmer and cook 1 minute then remove from heat and set aside.
  • Push broccoli to the long sides of the baking sheet and arrange salmon (skin-side-down) in the center, leaving a little space between each filet. Season salmon with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Divide glaze evenly between each filet, spreading to coat the top and sides. Bake uncovered at 450˚F for 6-10 minutes*, or until flakey and just cooked through.

Salt & pepper
2-3 scallions, chopped
1-2 tbsp sesame seeds, to top
1/4 cup fruit-sweetened apricot jam
1/4 cup coconut aminos or low sodium soy sauce
1/4 cup water
2 tbsp dijon mustard
1 tbsp sesame oil
1 clove of garlic, crushed
1/4 tsp salt
1/2 tsp of tapioca flour, or sub cornstarch, arrowroot or regular flour

Steps:

  • Pat the salmon dry and season lightly with salt and pepper. Place it into a baking dish, around 9 x 13 or big enough to fit the fillet.
  • In a small bowl, whisk together all of the glaze ingredients except for the tapioca flour. Pour it over the salmon, and let it marinate for 20 minutes. Optional, but if you're baking a large fillet, you can slice the salmon going across, not cutting fully through, but creating slits so that the marinade seeps through, and the middle section cooks evenly.
  • Preheat the oven to 375 F while the salmon marinates.
  • After the salmon marinates, bake the salmon for 20 minutes on the middle rack. Remove the baking dish from the oven, and mix the tapioca flour into the sauce. To prevent clumps, you can mix the tapioca flour in 1 tbsp of water before pouring it in.
  • Place the dish back into the oven and bake for an additional 5 minutes, then broil for 2-3 minutes. Cooking time may vary depending on the thickness and size of your salmon.
  • Once the salmon is done, remove from oven and top with sliced scallions and sesame seeds.
