Delicious and easy fruit bars that make good use of your food processor. These bars have a very intense not-too-sweet apricoty flavor, so are best if cut into small squares.

Number Of Ingredients 12

1/2 cup butter, chilled
1 cup flour
1/4 cup powdered sugar
1 pinch salt
18 -20 dried apricot halves, soaked in water and drained (20-30 minutes)
1/2 cup raisins, soaked in water and drained (I soak both the raisins and the apricots in the same water)
3 tablespoons lemon juice, divided
2 large eggs
1/2 cup sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup unsalted cashew halves or 1/2 cup cashew pieces

Steps:

  • Preheat oven to 350°F.
  • Cut butter in pieces and place in the food processor bowl (fitted with the steel knife) with flour, powdered sugar and a pinch of salt.
  • Process until blended using on/off turns (5-10 seconds).
  • Press into a 9 x 9-inch pan.
  • Bake for 15-20 minutes.
  • While crust is baking, make the topping.
  • Place drained apricots, raisins, one tablespoon lemon juice and 1/2 cup sugar in the processor bowl and process until chopped finely (5-10 seconds).
  • Pour into a seperate bowl and set aside.
  • Add eggs to processor bowl and mix using on/off turns for 5-10 seconds.
  • Add 2 tablespoons lemon juice, baking powder, 1/8 teaspoon salt, and apricots/raisin mixture.
  • Process using 3 on/off turns.
  • Fold in cashews, using one on/off turn.
  • Spoon mixture over baked crust, spreading evenly and covering whole crust.
  • Return to oven for 30-35 minutes or until done.
  • Cool on rack and sprinkle with powdered sugar if desired.
  • Cut into squares.

1 1/4 cups dried apricots, quartered
3/4 cup water
1 1/3 cups dark raisins
1/2 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons cornstarch
1/4 teaspoon pumpkin pie spice
3/4 cup unsalted butter, softened
1 cup brown sugar, packed
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups rolled oats

Steps:

  • In a saucepan, combine apricots, water, raisins, sugar, lemon juice, cornstarch & pumpkin pie spice, & cook over medium heat, stirring constantly, until mixture boils & thickens. Remove from heat & cool.
  • Preheat oven to 375 degrees F, & grease a 13"x9" baking dish.
  • In a large mixer bowl, cream butter & brown sugar.
  • Add flour, baking powder, salt & rolled oats, & mix well.
  • Pat half of this mixture into bottom of prepared baking dish, then spread cooled fruit mixture over that.
  • Sprinkle remaining flour mixture evenly over the fruit & lightly press it down.
  • Bake 22-25 minutes, or until firm in the center & topping is crisp.
  • Cool completely before cutting into 2" squares.

1 (13-ounce) jar apricot jam or preserves (about 1 1/4 cups)
8 dried apricots, chopped into 1/4-inch pieces (about 1/3 cup)
1 3/4 cups all-purpose flour
1 packed cup light brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon fine sea salt
3/4 teaspoon baking soda
1 3/4 cups old-fashioned oats
1 cup (4 ounces) coarsely chopped walnuts
1 cup (2 sticks) unsalted butter, melted
1 egg, at room temperature, beaten
1 teaspoon pure vanilla extract

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9 by 13 by 2-inch metal baking dish with vegetable oil cooking spray. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil cooking spray and set aside.
  • Filling: In a small bowl, mix together the jam and the apricots. Set aside.
  • Crust: In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg and vanilla and stir until incorporated.
  • Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan. Using a spatula, spread the filling over the crust leaving a 1/2-inch border around the edge of the pan. Cover the filling with the remaining crust mixture and gently press to flatten. Bake until light golden, about 30 to 35 minutes. Cool for 1 hour. Cut into bars and store in an airtight container for up to 3 days.

Steps:

  • In a large bowl, beat butter and cream cheese until well blended. Combine flour and salt; gradually add to butter mixture and mix well. Shape into four 5-in. logs; cover and refrigerate for 8 hours or overnight., On a lightly floured surface, roll 1 log into a 12x8-in. rectangle. Spread with about 1/4 cup spreadable fruit; sprinkle with 5 tablespoons walnuts and 1/4 cup raisins. Combine 1/2 cup sugar and cinnamon; sprinkle 2 tablespoons over the top. 2 15- to 16-ounce cans whole apricots in heavy syrup, drained well, halved, pitted, syrup reserved
3 tablespoons golden raisins
2 tablespoons dark rum
1/2 teaspoon ground cinnamon
3 tablespoons honey
Vanilla ice cream

Steps:

  • Boil apricot syrup in heavy small saucepan until reduced to 2/3 cup, about 15 minutes. Mix in 3 tablespoons raisins, 2 tablespoons rum and 1/2 teaspoon ground cinnamon. Reduce heat to medium-low and simmer 1 minute. Transfer to medium bowl and mix in 3 tablespoons honey. Refrigerate sauce until cold, at least 1 hour. Mix in apricots. (Rum-raisin sauce can be prepared 1 day ahead. Cover and keep refrigerated.) Scoop ice cream into bowls; top with apricots and sauce.

1/2 lb raisins
1/4 lb dried apricot
3 quarts vinegar
4 onions, finely chopped
1/2 cup fresh red chile, seeds and stems removed, chopped (i use serranos)
1/2 lb brown sugar
1/4 cup grated gingerroot
1 tablespoon salt
2 tablespoons coriander seeds, freshly ground
2 tablespoons mustard seeds, freshly ground

Steps:

  • Add raisins and apricots to vinegar. Soak overnight.
  • Pour into a pot and add the rest of the ingredients.
  • Bring this to a slow boil and stir it constantly until it gets thick enough to drip off the spoon.
  • You can ladle into sterilized jars while hot and seal. It'll last a while.
  • Serve at room temperature. Refrigerate after opening or remaining quantities.

140g light muscovado sugar
3 tbsp golden syrup
140g butter
250g rolled oats
85g raisin or sultanas
85g walnut pieces (or use your favourite nuts, roughly chopped)
50g sesame or mixed seeds
25g dried cranberry
50g ready-to-eat apricot , finely chopped

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
  • Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

  • Preheat the oven to 400 degrees F (200 degrees C). Line an 8x8-inch baking dish with parchment paper.

Originally taken from BH&G "New Cook Book", 1989--now that I live overseas, I love these older cookbooks because so many of the recipes are still "from scratch" and don't use convenience products that are too expensive or haven't come here yet.   • In medium saucepan, combine 1 cup diced dried apricots and 3/4 cup water. Bring apricot mixture to boil; reduce heat. Cover and simmer 5 minutes. Meanwhile, combine 1/4 cup sugar and 1 tablespoon all purpose flour. Stir into apricot mixture. Cook and stir 1 minute more or until mixture is very thick. Stir in 1/2 cup coconut.
