APPLESAUCE BARS
Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
- In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

- Prepare bottom of a 11 x 7 ~inch pan with vegetable pan coating.
- Sift together flour, baking soda, spices and salt. Cream together margarine and sugar. Add egg to margarine mixture and beat until light and fluffy. Alternately add the dry ingredients and applesauce, stirring just enough.

I ran across this recipe a few weeks ago in one of my cooking magazines and wanted to post them. You can either use the chunky applesauce or the regular applesauce in this recipe. It tastes great with both. PS. I made these this weekend for my son who just loves these, I made these with Splenda.

- In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg.
- In a large mixing bowl, cream butter with sugar until light and fluffy.
- Add eggs and vanilla; beat well.
- Stir in flour mixture.
- Add applesauce, pecans and raisins and stir until blended.
- Pour into a greased and floured 15x10x1-inch jelly roll pan.

A delicious quick and easy apple pie bar. You can experiment with different varieties of cookie dough, oatmeal for example as well as the applesauce filling could be substituted with apricot or peach. - Preheat oven to 350 degree F.
- Spray an 11 x 7 baking pan (preferably shiny).
- In a small bowl, mix together the cinnamon, nutmeg and sugar, set aside.
- On a lightly floured board roll out one half of the dough to cover the bottom and slightly up the sides of the baking pan.
- Spread the applesauce evenly over this dough layer.
- Coarsely grate the remaining half of the dough over the applesauce filling.
