Steps:
- Bring milk and chicken broth for gravy to simmer over low-medium heat (don't scorch). Next, add garlic, onion powder, pepper and salt. In a small cup/bowl, add corn starch to cold water and mix thoroughly until starch is dissolved. Increase heat to gravy and slowly stir in the starch/water mixture as it bubbles and thickens. Preheat vegetable oil in skillet or fryer to 350 degrees F at a 2-3 inch depth. Be careful not to exceed temperature to reduce the risk of fire. Mix dry ingredients for "dusting" and "coating" in two large bowls until evenly mixed. Mix dry ingredients for batter in large bowl until evenly mixed. Add oil, crack and add eggs, then milk and water. Beat by hand until lumps are minimal. In order: place the chicken breasts one-by-one into the dusting and cover both sides with a thin layer of product; dip into batter and remove (allow excess to drain); place in breading and "seal" in batter with a dry, but not excessively thick, coating. Fry immediately. Be careful not to remove coating from chicken breasts when handling and placing into the oil. Fry for approximately six to eight minutes (time varies with equipment, amount of chicken and its thickness). Internal temperature should be a minimum of 165 degrees F. Remove and drain on paper towel. Serve with your favorite side dishes.

- Directions: 1 Simmer milk and chicken broth for gravy over low heat, being careful not to scorch. 2 Add garlic, onion powder, pepper and salt to gravy. 3 In a small dish, stir together cold water and cornstarch. 4 Stir cornstarch slurry into gravy, stirring constantly, and increase heat, cooking until gravy is thickened. 5 Set gravy aside and keep warm. 6 Heat 2-3 inches of oil in a deep skillet to 350F. 7 Mix ingredients for dusting and coating in separate bowls. 8 Stir together dry ingredients for batter in a bowl. 9 Add oil, eggs, milk, and water, stirring with a whisk until mixture is smooth. 10 Place a chicken breast into the dusting mixture and cover both sides. 11 Then dip chicken breast in the batter and allow excess batter to drain. 12 Then place battered chicken breast in the coating mixture, covering batter evenly but not too thick. 13 Fry chicken at once for 6-8 minutes or until chicken reaches 165F. 14 Do the same with the other breasts, but do not crowd pan. 15 Drain Chicken when cooked and serve hot with Country Gravy. TIPS: May want to spice up the gravy with poultry seasoning, etc...

- Whisk together the first 8 ingredients, coat chicken in mixture, and marinade for at least 2 hours.
- Whisk together the next 9 ingredients, cover, and chill until needed.
- Grill the marinated chicken breasts for 3-5 minutes per side, or until cooked through. Discard marinade.
- Brush grilled chicken with reserved dressing, sprinkle with cheese, and broil until cheese has melted.
- Serve the chicken over a bed of crumbled chips.
JUST LIKE APPLEBEE'S CHICKEN FRIED CHICKEN
Steps:
- 1. Pound the chicken between two sheets of wax paper, large baggie or celophane. Sprinkle on the kosher salt, garlic powder and pepper on the chicken breast.
- 2. Place 2 cups of flour in a shallow bowl. I add more seasonings to the flour. Stir together the baking powder, pepper, garlic powder salt.
- 3. Place in another bowl the buttermilk and the egg. Add a dash of Tabasco sauce optional.
- 4. Than dredge each chicken piece into the flour. Do this 2 and it is called double dipping.
- 5. Heat the shortening to 325 degrees. Fry each chicken until golden brown 3 to 5 minutes per side. Place on a paper towel to drain.
- 6. Drain the fat from the skillet, reserving 1/4 cup of the liquid and solids for the gravy. Stir in milk and cream heat to medium, and bring the gravy to a simmer. Cook until thick. Season. Spoon gravy over chicken. Done!

- Step 1: In a bowl or seal-able plastic bag. Combine stir fry sauce, Asian toasted sesame dressing, soy sauce, and teriyaki sauce. Add chicken and mix well with the sauce. Cover and refrigerate for 1 hour.
- Step 2: In a medium bowl toss coleslaw mix with 2 tablespoons of Asian sesame dressing. Set aside.
- Step 3: Heat olive oil in a wok over high heat. Add chicken with the marinade and stir fry until the chicken is fully cooked. Remove from the wok and transfer to a bowl. Add about 1/2 inch of oil to the wok over medium high. Fold the wonton wrappers into a triangle formation but do not seal. Place into the hot oil and fry until golden brown on one side. Turn once and fry until golden brown on the other side. Drain on paper towels.
- Step 4: To make tacos- place a small amount of the chicken mixture into the bottom of the fried wonton. Top with coleslaw mixture, green onion, cilantro and red onion.
CHICKEN FRIED CHICKEN
I love this recipe! We eat this at least once a week. My kids love it with mashed potates or dirty rice. I have never actually used exact measurements so if you need to add a little more or less, it is ok. (Update: I have omitted the previous step 9. Thanks for the advice!)

- Pour enough oil to cover bottom of skillet or frying pan. Heat pan to medium heat (300-350 degrees).
- Mix flour, salt and pepper in pie dish.
- Pour Milk into a bowl.
- Put saltine cracker crumbs in another pie dish.
- Beat chicken breats with mallet to desired thickness. (I usually place breast in a ziploc bag to beat and I like the breasts pretty thin.).
- Dip in milk, then flour mixture, then eggs, then saltines.
- Place breasts in pan. Repeat with each chicken breast.
- Cook chicken for approximately 5 minutes each side or until a golden brown.
- .
- Remove from pan and place on a papertowel lined plate to remove excess grease.
- Serve with gravy to top.
- Enjoy!

SANTA FE CHICKEN SALAD (APPLEBEE'S)
Do not let the list of ingredients keep you from making this salad. Most of the ingredients are for the marinade and salsa which should be made the day before and refrigerated. The remaining ingredients are the salad and side items. It is super quick to throw together the next day and tastes awesome. The tequila-lime chicken is outstanding on its own and you may want to make extra Pico de Gallo to keep in the fridge. I have adapted this recipe from a former Applebee's employee. The recipe is scaled down for one serving, so adjust for more servings. Cooktime is marinade time.

- Combine marinade ingredients in a container with lid. Add Chicken and place in refrigerator overnight.
- Combine Pico de Gallo ingredients in a small bowl with lid and place in refrigerator overnight with chicken.
- Remove chicken from marinade and sprinkle with fajita seasoning. Grill skin-side down for about 5 minutes, turn and continue to grill for about 10 minutes or until chicken is cooked through. I use my George Forman grill with fantastic results (about 7 minutes).
- While the chicken is grilling combine ranch dressing with 2 Tablespoons of the Pico de Gallo. Set Aside.
- Prepare Garnishes.
- Toss salad greens with cheese and remaining Pico de Gallo (or less - to taste). Sprinkle with fried tortilla strips or lightly crushed tortilla chips.
- Cut chicken into strips and place on top of greens. Add Garnishes to plate.
