Cooked in the slow cooker, this warm pudding is smooth and creamy on a cold winter morn.

4 cups apples - peeled, cored and sliced
½ cup brown sugar
¾ teaspoon ground cinnamon
½ teaspoon salt
2 tablespoons small pearl tapioca
1 lemon, juiced
1 cup boiling water
½ cup raisins

Steps:

  • Place the apples, brown sugar, cinnamon, salt, and tapioca into a bowl, and toss to coat apple slices.
  • Place the apple mixture into a slow cooker. Pour lemon juice and boiling water over the apples.
  • Set the cooker to High and cook until apples are tender and thickened, 3 to 4 hours.
  • Mix in raisins if desired; serve warm.

4 cups sliced peeled tart apples (cut in eighths)
3/4 cup honey
3 tablespoons butter
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2-1/2 cups water
1/3 cup quick-cooking tapioca
Cream, ice cream or whipped cream

Steps:

  • In a Dutch oven, combine the first 6 ingredients. Cover and simmer just until apples are tender. , Using a slotted spoon, transfer apples to a bowl. Add water and tapioca to pan. Cook and stir until thickened and clear. Pour over apples. Serve warm with cream, ice cream or whipped cream.

4 medium tart apples, peeled and sliced
2 cups water
1 cup packed brown sugar
1/2 cup quick-cooking tapioca
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground nutmeg

Steps:

  • Arrange the apples in a 2-qt. baking dish coated with cooking spray. In a saucepan, combine the water, brown sugar, tapioca, lemon juice, salt and nutmeg. Let stand for 5 minutes. Bring to a boil over medium heat, stirring constantly. Pour over the apples. Cover and bake at 350° for 30-35 minutes or until apples are tender. Serve warm.

3/4 cup pearl tapioca (OR 1/2 cup minute tapioca)
cold water
2 1/2 cups boiling water
1/2 teaspoon salt
7 sour apples
1/2 cup white sugar

Steps:

  • Soak pearl tapioca for one hour in enough cold water to cover; drain; add boiling water and salt.
  • Note that minute tapioca requires no soaking.
  • Cook in double boiler until transparent.
  • Core and pare apples; arrange in a buttered pudding-dish; fill cavities with sugar.
  • Pour over the tapioca and bake in a moderate oven till apples are soft.
  • Serve with sugar and cream or a custard sauce.
  • Recipe note: Rhubarb or pineapple may be substituted for apple, and sugar added to taste.

One of my father's favorite Fall desserts. His mother used to make it in the oven, but my mother adapted it to the crock pot to make it simpler. A great way to use the abundance of apples right now! Something different, something yummy and comforting.

4 cups apples, peeled and sliced
1/2 cup brown sugar
3/4 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons dry tapioca
1 lemon, juice of
1 cup boiling water (must be boiling)
1/2 cup raisins (optional)

Steps:

  • In medium bowl, toss apples with brown sugar, cinnamon, salt and tapioca until evenly coated.
  • Place apples in crock pot.
  • Pour lemon juice over top.
  • Pour in boiling water.
  • Cover and cook on high for 3-4 hours.
  • Add raisins (if using) before serving, but don't cook with everything else (Not sure why, but my mother never does).
  • Serve warm.

BAKED APPLE TAPIOCA

This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

3 c tart apples, sliced
2 Tbsp butter, cut in cubes
1/4 tsp cinnamon
1/8 tsp nutmeg (my addition)
1/3 c quick cooking tapioca
1 c light brown sugar
1 tsp salt
2 1/2 c water
lemon juice, 1-2 tbsp.

Steps:

  • 1. Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  • 2. Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  • 3. Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  • 4. Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.

1/2 cup/70 g tapioca (soaked overnight in plenty of water)
1 1/3 cups/350 ml milk
1 teaspoon vanilla extract
1 tablespoon butter, plus more as needed
2 tablespoons runny honey, agave nectar, or brown sugar
For the Apples and Apricots:
12 dried apricots (like the tapioca, soaked overnight, but in about 1 cup/250 ml orange juice)
1 cup/250 ml or so water
1 cinnamon stick
A few tablespoons of orange juice
1 tablespoon agave nectar or honey
2 eating apples, peeled, cored, and sliced

Steps:

  • Having soaked the tapioca overnight, drain and place it in a saucepan with the milk, vanilla extract, and butter. Bring to a boil, turn to low, and simmer, stirring in the honey, agave, or sugar, for another 10 minutes.
  • Cut your overnight magically plumped apricots into halves or quarters, if desired. In another saucepan, place the water, cinnamon, orange juice, agave or honey, and apples and bring to a boil, giving it a good stir now and then. Simmer for about 10 to 15 minutes, or until the apples are tender.
  • Now, here you can do one of two things. Serve the stewed fruit as is on top of the tapioca or put the tapioca in a small ovenproof dish with another tablespoon of butter, pour the apples and apricots on top, and bake at 350°F/180°C for 15 or so minutes. The choice, Cilla, is yours.
