Adding grated apple to bulk pork sausage yields tangy, flavorful breakfast patties. - 1 In a bowl, combine the sausage, apple, bread crumbs, cream and egg yolk and stir until well blended. Stir in the salt and pepper. Divide the mixture into 12 equal portions and shape each portion into a patty 2 inches in diameter and 1/4 inch thick. Arrange the patties on a rimmed baking sheet or tray and refrigerate for 15 minutes, or cover tightly with plastic wrap and refrigerate overnight. Bring to room temperature before cooking. 2 Preheat an oven to 200 degrees F. 3 Place a large fry pan over medium-low heat and lightly brush it with canola oil. Place 4 of the patties in the pan and fry until browned on one side, about 3 minutes. Carefully flip the patties and fry until browned on the other side and cooked through, about 4 minutes more. Transfer the patties to an ovenproof dish and keep warm in the oven. 4 Cook the remaining patties in the same way, oiling the pan between batches. Keep warm until ready to serve. Arrange the patties on a serving platter and serve immediately. 5 Serves 6.
APPLE-SAGE SAUSAGE PATTIES
Steps:
- Peel and coarsely shred apple; place apple in a colander over a plate. Let stand 15 minutes. Squeeze and blot dry with paper towels., In a large bowl, combine egg, parsley, sage, garlic, seasonings and apple. Add turkey; mix lightly but thoroughly. Shape into sixteen 2-in. patties. Place patties on waxed-paper-lined baking sheets. Refrigerate, covered, 8 hours or overnight., In a large nonstick skillet, heat 2 teaspoons oil over medium heat. In batches, cook patties 3-4 minutes on each side or until golden brown and a thermometer reads 165°, adding more oil as needed. Freeze option: Place uncooked patties on waxed-paper-lined baking sheets; wrap and freeze until firm. Remove from pans and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time to 4-5 minutes on each side.

Steps:
- Shape sausage into 8- 1/4 inch patties.
- Cook celery, and onion in butter until tender, but not brown; remove from heat.
- Add water.
- Add stuffing mix, apple, parsley, chili sauce, mustard, and pepper; mix well.
- Place about 1/2 cup of the stuffing on 4 of the patties.
- Top with remaining patties.
- Press around the edges to seal.
- Place in a 13x9x2-inch baking pan.
- Bake in a 375 degree oven for 35 to 40 minutes or until done.

The smell of this stuffing being prepared is heavenly. It is a fight to keep the family from "sampling it" until it is all gone! This stuffing is cooked in a 9x13 pan - not inside the turkey.

- Broth Mixture- Combine gravy mix, melted butter& broth.
- Bring to a boil in a saucepan over medium heat until slightly thickened.
- Stuffing Mixture- In a large skillet fry sausage and bacon until almost crisp then remove to a large bowl.
- Discard all but 2 tbl of the bacon drippings; add onion, celery, mushrooms, apples, parsley& herbs.
- Sauté mixture for 5 minutes.
- Mix in stuffing cubes.
- Add to the bowl with bacon& sausage.
- Pour broth mixture over ingredients.
- Mix well.
- Season to taste with salt& pepper.
- Place stuffing into 9x13 pan, cover with foil and heat in 350F oven for 30 to 45 minutes until hot.

BREAKFAST TURKEY SAUSAGE PATTIES
From the Healthy and Light section of July 2005 issue of Southern Living. Recipe description says any sweet crisp apple or pear may be substituted for the Fuji apple. I was suprised how spicy and flavorful these were. My husband really enjoyed them, and he hates turkey and all forms of fruit combined with meat. Go figure.

- Peel and core apple; coarsely shred apple with a hand grater. Place in a wire mesh strainer; drain well, pressing gently with paper towels.
- Combine all ingredients except oil; stir until blended.
- Shape mixture into 16 patties (about 2 tablespoons each).
- Place patties on a wax paper-lined baking sheet.
- Cover and chill 8 hours or overnight.

INSIDE SURPRISE HAMBURGER - SAUSAGE PATTIES
This recipe mixes hamburger and sausage together in one patty, and the combines the "fixings" along with the cheese on the inside to make 3 man-size patties.

- Prepare the seasoning mix by combining the brown sugar, paprika, kosher salt, black pepper, garlic powder, red pepper, basil, cinnamon, and thyme into a small jar. Shake well to mix.
- Finely dice the onion and jalapeno.
- In a large bowl, mix the hamburger, sausage, jalapeno, and onion until well incorporated. (Also, mix in bacon if using.).
- Separate the mixture into 3 equal size parts. Then divide each part into half. This will give you 6 parts of meat mixture.
- Shape each meat mixture portion into a hamburger patty.
- Season the top of three meat patties with the seasoning mixture. Use as much or as little as you like -- your taste determines the amount of seasoning.
- Tear your cheese into slices, and place in the middle of the three patties that you seasoned the tops of. (If using bleu cheese place in center of patty in the shape of a mound.).
- Place the remaining unseasoned patties on top of the cheese, making sure to seal the edges of the patties together so the melted cheese will not run out while grilling. It is IMPORTANT to get the patties sealed together so the cheese stays inside when melted.
- Season the top of the combined patty (remember that you already seasoned the inside patty)with the seasoning mixture.
- Allow patties to sit in the refrigerator for 30 minutes or so before grilling.
- Grill the patties until how you enjoy your hamburger cooked.

- Heat oil in a small saute pan over medium heat, and cook onion until translucent and soft, about 3 minutes. Add apples and cook until soft, about 5 minutes. Let cool.
- Combine chicken with onion-apple mixture and remaining ingredients, mixing with your hands. Form into 1 1/2-inch-round patties, and chill until ready to use.
- Preheat oven to 350 degrees. Heat a little oil in a medium ovenproof saute pan, and brown patties over medium-low heat 2 minutes on each side; transfer pan to oven, and bake until cooked through, about 10 minutes.

- Bake, covered, for 30 minutes at 350° F.
- Uncover and bake for 10 minutes longer.

- Cut apples in half through the stem. Cut a tiny slice off the uncut side so the halves lie flat, if necessary. Using a melon baller or spoon, discard the core and seeds, then remove most of the apple flesh, leaving a 1/4- to 1/2-inch-thick shell. Finely chop the flesh.
