This is a creamy, sweet apple treat with just a hint of spice! Enjoy it with some ice cream or whipped cream!

CRUST
1 box yellow cake mix
8 Tbsp butter, melted
1 large egg
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
CREAM CHEESE FILLING
16 oz cream cheese, room temperature
1 1/2 c brown sugar, firmly packed
1 large eggs
2 tsp vanilla extract
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
21 oz canned apple pie filling
STREUSEL TOPPING
3/4 c all purpose flour
3/4 c brown sugar, firmly packed
1 tsp ground cinnamon
5 Tbsp melted butter

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray the bottom of a 13" x 9" baking dish.
  • 2. Prepare crust by mixing together all crust ingredients in a large bowl. Press dough into the bottom of the baking dish. Set aside.
  • 3. In the same bowl you made the dough in, beat cream cheese for 3 minutes until smooth. Add brown sugar and beat for another 3 - 4 minutes. Add eggs, vanilla, cinnamon, nutmeg and cloves. Beat for 5 minutes. Pour filling evenly over dough.
  • 4. Take a knife and run it thru the apple pie filling, breaking up the large pieces of apple. Spoon the apple pie filling evenly over cream cheese.
  • 5. In same bowl you made the filling in, mix together all the topping ingredients until crumbly. Sprinkle topping evenly over apple pie filling.
  • 6. Bake for 45 - 55 minutes or until cream cheese filling is set and, if using a glass dish, the crust is a golden brown. Remove from oven and allow to cool.
  • 7. Cut into bars and serve with ice cream or whipped cream, if desired.

¼ cup white sugar

2 medium Granny Smith apples - peeled, cored, and sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  • Combine graham cracker crumbs, sugar, melted butter, and cinnamon in a medium bowl. Press into the bottom of the prepared springform pan to form a crust.
  • Bake in the preheated oven until golden, 7 to 9 minutes. Cool to room temperature, 15 to 20 minutes.
  • While crust cools, mix apples, brown sugar, and cinnamon until coated and set aside.
  • Beat cream cheese and white sugar in a large bowl until smooth. Slowly add milk. Best in eggs one at a time. Stir in sour cream, flour, and vanilla extract on low speed or by hand until smooth. Do not overmix; you may have some small bits of cream cheese in the mix, but those will melt as the cheesecake cooks.
  • Pour 1/2 of the filling over the prepared crust. Arrange coated apples over the filling, leaving a 1/2-inch border. Top with remaining filling.
  • Bake in the preheated oven for 40 minutes.
  • While cheesecake is baking, combine flour, brown sugar, and melted butter in a bowl. Sprinkle quickly over the cheesecake. Continue baking until set, about 20 minutes more.
  • Turn the oven off but do not open the door, allowing the cheesecake to cool in the oven for at least 4 hours; this helps prevent cracking. Refrigerate to allow cake to fully set before serving, 2 to 4 hours more.

1 pkg betty crocker oatmeal cookie mix
1/2 c firm butter or margarine
2 (8oz) pkg cream cheese, softened
1/2 c sugar
2 Tbsp all purpose flour
1 tsp vanilla
1 large egg
1 can(s) apple pie filling
1/2 tsp cinnamon
1/4 c chopped walnuts
1 jar(s) caramel ice cream topping (optional)

Steps:

  • 1. Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. 2 Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes. 3 Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth. 4 Spread cream cheese mixture evenly over partially baked crust. 1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
20 ounces (565g) cream cheese, room temperature
3/4 cup (168g) packed brown sugar
3 tbsp (24g) all purpose flour

1 1/2 tsp vanilla extract

Steps:

  • Preheat oven to 300 degrees and prepare a 9×13 inch pan with parchment paper that sticks up above the sides of the pan, so that you can remove the bars later for easy cutting.
  • 2. In a medium bowl, combine the flour, brown sugar and cinnamon.
  • 3. Cut in butter into the flour mixture with a pastry blender or fork until mixture is crumbly.
  • 4. Press evenly into the bottom of the pan and bake for 8-10 minutes. When the crust is done baking, turn the temperature up to 325 degrees.
  • 5. In another large bowl, combine the chopped apples, flour, cinnamon and nutmeg and set aside.
  • 6. To make the filling, blend the cream cheese, brown sugar and flour in a large mixer bowl on low speed until well combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter. Scrape down the sides of the bowl.
  • 7. Add the sour cream, vanilla extract, cinnamon and nutmeg and mix on low speed until well combined.
  • 8. Add the eggs and egg white one at a time, mixing slowly to combine. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • 9. Pour the batter into the pan with the crust and spread evenly.
  • 10. Spread the cinnamon apples evenly over the top of the cheesecake filling.
  • 11. In another small bowl, combine the flour, brown sugar, cinnamon and nutmeg for the streusel.
  • 12. Add the melted butter and stir together until crumbly.
  • 13. Sprinkle the streusel evenly over the apples.
  • 14. Bake the bars for about 45 minutes or until the center is just set. Remove the bars from the oven and allow to cool on the counter for about 45 minutes, then refrigerate until cold and firm.
  • 15. Use the parchment paper to remove the bars from the pan and cut into bars. Serve cold. Bars are best when stored well covered in the fridge and eaten within 4-5 days.

2/3 cup Cascadian Farm® organic French vanilla almond granola

Steps:

  • Heat oven to 325°F. Lightly grease 8- or 9-inch square pan with butter or cooking spray.
  • In food processor, place graham crackers, granulated sugar and lemon peel. Cover; process until fine crumbs form. Add melted butter. Cover; process until crumbs are evenly moistened. Press mixture in bottom of pan. Bake 10 minutes or until lightly browned. Cool 10 to 15 minutes.
  • Meanwhile, wipe food processor bowl with paper towels to remove any crumbs. Add cream cheese, eggs, cinnamon, nutmeg, 1/4 cup lemon juice and 1/2 cup brown sugar. Cover; process until smooth and creamy. Pour filling over partially baked crust.
  • In small bowl, toss apples with 1 teaspoon lemon juice. Sprinkle over filling.
  • In medium bowl, mix 3/4 cup brown sugar, the flour and cold butter with fork or fingers until crumbly. Stir in granola. Sprinkle over apples and filling.
  • Bake 35 to 40 minutes or until topping is lightly browned and center is almost set (center should jiggle only slightly when moved). Cool on cooling rack 1 hour. Refrigerate at least 1 hour or until chilled. Cut into 3 rows by 3 rows.
