SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.

- Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
- Serve and enjoy!

Steps:
- Gather the ingredients. Preheat the oven to 350 F.
- Peel, core, and slice the apples. Slice on the thinner side and make them the same thickness so they will cook evenly.

- Prepare 9x13 pan with non-stick spray; preheat oven to 350.
- Prepare APPLES: toss sliced apples with lemon juice, sugar, cinnamon, nutmeg and cornstarch. Pour apple mixture into prepared pan. BAKE APPLES 10 minutes.
- While apples are baking, combine STREUSEL ingredients; set aside.
- Prepare BATTER: Mix batter dry ingredients in a bowl. When apples are done, whisk in milk and melted butter (batter will thicken if it sits). Immediately pour batter over hot apples; sprinkle streusel on top.
- Return to oven; bake 40-45 minutes or until top is browned and apples are bubbling.

- Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. - Butter a deep 2-quart baking dish. Place the apples in the baking dish. They should be at least 2 1/2-inches deep; add more if necessary. MOM'S APPLE COBBLER

- Heat oven to 350 degrees. Melt butter in a 13x9x2 inch baking dish ( I prefer to use a glass one). Cut shortening into flour until particles resemble fine crumbs. Add milk and stir with a fork only until dough leaves the side of the bowl. Turn out dough onto a lightly floured board or pastry cloth, and knead just until smooth. Roll dough out into a large rectangle about 1/4 inch think. Sprinkle cinnamon over chopped apples, then sprinkle apples evenly over the dough. Roll up dough like a jelly roll and dampen the edges with water to seal. Slice dough into about 16 slices, 1/2 inch thick. Place slices in baking dish with the melted butter. In saucepan, heat water and sugar until dissolved. Pour the sugar syrup around the rolls. This will look like too much liquid, but dough will absorb it while baking. Bake for 55-60 minutes.
- VARIATION: This cobbler can also be made with other fresh, frozen, or canned fruits such as blackberries, cherries, or peaches. If the fruit is packed in liquid, drain and substitute for part of the water in the sugar syrup. Add enough water to make two cups of liquid.

This is the first on the dessert table to be devoured at any function or festivity! I made this up from a pie I had eaten at a restaurant years ago. This recipe makes two deep dish pies.

- Make the filling: In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
- In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes. (If you'd like to make it ahead of time, the filling will keep refrigerated for up to 3 days.)
- Heat oven to 375 degrees. Lightly grease a 9-by-13-inch pan with a thin layer of butter or a coating of nonstick spray, and scoop the filling into the pan.
- Prepare the cobbler: In a medium bowl, whisk the flour, brown sugar, cinnamon, baking powder and salt together to combine. Add the butter and toss well until each piece is coated fully with flour. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles a coarse meal; the butter should be almost completely worked into the flour.
- Make a well in the center of the bowl, then add the buttermilk, egg and vanilla. Use a fork or small whisk to first beat the egg lightly, then stir all the ingredients together until well combined.
- Using a spoon, drop the batter in large dollops all over the cobbler. (Most of the surface will be covered, but some of the filling should still be visible.) Generously sprinkle turbinado sugar over the surface.
- Transfer to the oven and bake until the filling is bubbly and the biscuit topping is golden brown, 40 to 45 minutes. Cool at least 10 minutes before serving warm.
