SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.

Steps:
- Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
- Serve and enjoy!

- Position a rack in the middle of the oven. Preheat the oven to 350°F Line 12 muffin tin cups with paper cupcake liners.
- Make the swirl and topping: In a small bowl, stir the sugar and cinnamon together.
- Make the cupcakes: In a small bowl, mix together the grated apple and the 2 tablespoons cinnamon sugar; set aside.
- In a large bowl, stir the flour, sugar, baking soda, and salt together. Make a well in the center of the flour mixture and add the eggs, oil, and vanilla, stirring until blended. Stir the reserved apple mixture, with any juice that bas been released.
- Spoon about 2 tablespoons of the batter into each paper liner. Sprinkle ½ teaspoon cinnamon sugar over the batter in each liner. Spoon the remaining batter over the cinnamon sugar, using a scant 2 tablespoons of batter for each cupcake.
- Use a pastry brush to dab the top of the batter with the melted butter. Sprinkle the remaining cinnamon sugar over the top of the cupcakes.
- Bake just until the top feels firm and a toothpick inserted in the center comes out clean, about 25 minutes.
- Cool the cupcakes for 10 minutes in the pan on a wire rack. Remove the cupcakes from the pan onto a wire rack and let cool completely.

- Put 14 paper baking cases in a muffin pan, or place 14 double-layer paper cases on a baking sheet.
- First make the topping. Put the flour, sugar, cinnamon and nutmeg in a bowl. Cut the butter into small pieces, then either rub it in by hand or blend in the processor until the mixture resembles fine breadcrumbs. Set aside while you make the cakes.
- To make the cupcakes, add the bicarbonate of soda to the jar of apple sauce and stir until dissolved. Put the butter and sugar in a bowl and beat together until light and fluffy. Gradually beat in a egg. Sift in the flour, cinnamon and nutmeg and, using a large metal spoon, fold into the mixture, alternating with the apple sauce.
- Spoon the mixture into the paper cases. Sprinkle a little topping over each cupcake to cover the tops and press down gently.
- Bake the cupcakes in a preaheated oven, 180'C/350'F/Gas Mark 4, for 20 minutes or until well risen and golden brown. Leave the cakes for 2-3 minutes before serving warm or transfer to a wire rack to cool.

- Preheat the oven to 350 F Grease an 8x8" baking pan.
- Melt 2/3 cup butterin a small saucepan and let it cook until it is golden brown but not burnt.
- Set aside to cool slightly. In a baking bowl, combine flour, baking powder, and salt.
- In another baking bowl, combine the melted butter, brown sugar, and granulated sugar, and stir until smooth.
- Add the eggs one at the time. then vanilla, and lemon juice and mix well. Add the dry ingredients and stir until just combined.
- Spread the batter in the prepared pan. In a saucepan, melt 1/4 cup butter for the cinnamon swirl.
- Add the sugar and cinnamon and stir to combine. Drizzle the cinnamon sauce over the blondie batter and use a butter knife to swirl it inches Don't try to do a fancy pattern; it all bakes together.
- Bake for 35 to 45 minutes, until a toothpick inserted in the center comes out with just a few crumbs on it. Cool completely before serving.

- In medium bowl, beat 1/2 cup sugar and the cream cheese with electric mixer on medium speed until smooth.
- Beat in egg.

- In large bowl, beat remaining ingredients on low speed 30 seconds, scraping bowl occasionally.
- Beat on high speed 3 minutes, scraping bowl occasionally.
