2 apples - peeled, cored, and diced
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon ground cinnamon, divided
1 teaspoon salt
4 eggs
½ cup half-and-half
4 tablespoons cream cheese, softened
3 stale cinnamon bagels, cubed
¼ cup chopped pecans, or more to taste

Steps:

  • Grease an 8-inch square baking dish.
  • Place apples, butter, brown sugar, 1/2 tablespoon cinnamon, and salt into a skillet over medium heat. Saute until sugar bubbles, about 5 minutes. Set aside.
  • Place eggs, half-and-half, cream cheese, and remaining cinnamon into a blender and blend until smooth.
  • Scatter cubed bagels, cooked apples, and pecans in the bottom of the prepared baking dish. Pour egg mixture on top, making sure to submerge bagel cubes. Let sit in the refrigerator 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until no liquid remains, 30 to 40 minutes. Serve hot.

1/4 cup corn syrup
3 large apples, peeled and chopped

1 loaf (1 pound) day-old cinnamon bread
1/2 cup chopped pecans
10 large eggs
1 cup 2% milk
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, combine brown sugar, butter and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir 2 minutes or until thickened. Set aside., In a small bowl, combine apples, lemon juice, sugar and pie spice. Arrange half of the bread slices in a greased 13x9-in. baking dish. Top with apples; drizzle with half of the caramel sauce. Sprinkle with pecans; top with remaining bread., In a large bowl, combine eggs, milk, salt and vanilla. Pour over top. Cover and refrigerate overnight. Cover and refrigerate remaining caramel sauce., Remove strata from refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting., In a microwave, heat the reserved sauce. Drizzle warm sauce over strata.

1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 ½ cups half-and-half cream
6 tablespoons butter, melted

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.

Steps:

1 1/2 cups all-purpose flour, plus more for the work surface
2 tablespoons sugar
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks) unsalted butter, chilled, cut into 1/2-inch pieces
3 tablespoons ice water
2 small Golden Delicious apples, peeled, halved, cored and cut into 1/8-inch-thick slices
1 Pippin apple, peeled, halved, cored and cut into 1/8-inch-thick slices
1/4 cup plus 1 tablespoon sugar
1 teaspoon fresh lemon juice
1 large egg white beaten with 1 tablespoon of water (for egg wash)
2 tablespoons sliced almonds, toasted

Steps:

  • Mix the flour, sugar and salt in a food processor. Add the butter. Pulse until the mixture resembles a coarse meal. Add the ice water and pulse until moist clumps form. Gather the dough into a ball; flatten into a disk. (If the dough still crumbles and does not form into a ball, add another tablespoon of ice water.) Wrap the dough in plastic and refrigerate until firm, about 1 hour.
  • Position the rack in the center of the oven and preheat the oven to 400 degrees F.
  • Combine the apples, 1/4 cup of the sugar and lemon juice in large bowl; toss gently to blend. Set aside for 10 minutes.
  • Meanwhile, dust a large sheet of parchment paper with flour and roll out the dough on the paper to an 11-inch round. Transfer the dough and parchment paper to a large heavy baking sheet. Spoon the apple mixture over the dough, leaving a 2-inch border. Fold the dough border over the filling to form an 8-inch round, leaving the apples exposed in the center. Pleat loosely and pinch the dough to seal any cracks. Brush the crust with the egg wash and sprinkle with the remaining 1 tablespoon of sugar.
  • Bake the crostata until the crust is golden and the apples are tender, about 40 minutes. Transfer the baking sheet to a rack; cool for 10 minutes. Slide a metal spatula under the crust to free the crostata from the parchment. Cool the crostata to lukewarm. Sprinkle with the almonds and serve.

1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
  • Preheat the oven to 450 degrees F.
  • Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
  • For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.
  • Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

  • Whisk the eggs, milk, mustard, salt, and nutmeg together in a large bowl. Using a spatula, carefully fold in the dried bread, allowing it to soak up the majority of the liquid. Set aside for at least 15 minutes.
  • In a large skillet, melt 1 tablespoon of butter over medium heat. Add the kielbasa and cook, turning once, until browned on both sides, about 3 minutes. Transfer the kielbasa to a cutting board, but keep all of the butter and kielbasa fat in the pan. Reduce the heat to low, add the onions and cook, stirring occasionally until tender but not browned, about 5 minutes. Add the apples and cook until softened, about 3 minutes. Season lightly with salt and allow the mixture to cool a bit. Once the sausage is cooled, slice it into 1/2-inch rounds.
  • Add the cooled apple mixture, kielbasa, and Gouda to the soaked bread and fold together with a spatula until evenly combined. Transfer to the prepared baking dish or pan and bake until golden brown and a skewer inserted in the center comes out clean, 35 to 45 minutes. (Alternately, let the uncooked mixture rest overnight and bake it the next day straight out of the fridge, adding about 10 minutes to the baking time).

  • Whisk the milk, cream, eggs, salt, and pepper in a large bowl and pour evenly over the strata. Top with the Parmesan cheese. Chill the strata, covered with plastic wrap, at least 2 hours and up to 12 hours.
  • Preheat the oven to 350°F. Bake the strata uncovered until puffed, golden brown, and cooked through, about 50 minutes. A thin knife inserted in the middle of the strata should come out clean. If the top browns too quickly, cover with a sheet of aluminum foil. Let stand 5 minutes before serving.
