CARAMEL APPLE SPICE THUMBPRINTS

1/3 cup (67g) granulated sugar
1/2 teaspoon apple pie spice*
2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
1 and 1/2 teaspoons apple pie spice*
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (230g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
1 large egg, at room temperature
1 and 1/2 teaspoons pure vanilla extract
homemade salted caramel*

Steps:

  • Mix the topping ingredients together in a small bowl. Set aside.
  • Whisk the flour, apple pie spice, baking powder, and salt together in medium bowl. Set aside.
  • In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on medium-high speed until smooth and creamy, about 2 minutes. Add the egg and vanilla extract, and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine. Add the dry ingredients to the wet ingredients and mix on low until combined.
  • Roll balls of dough, a little less than 1 Tablespoon each (about 1 inch balls), and then roll generously into apple pie spice/sugar mixture to coat. Place dough balls onto a large lined baking sheet. Using your thumb or the end of a spatula (see post above), make an indent into each cookie. If you find that the balls are cracking when you make an indent, use your hands to push back together.
  • Chill the shaped cookies for at least 2-3 hours and up to 4 days. Cover them if chilling for longer than 3 hours.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat. Remove chilled and shaped cookies from the refrigerator. Divide between both baking sheets, spacing the cookies about 2-3 inches apart.
  • Bake for 12 minutes, remove from the oven, and spoon 1/2 teaspoon of caramel into each indentation. If the indents have lost their shape or have puffed up, use the end of a spatula to make an indent again. Place cookies back in the oven for 1-2 more minutes.
  • Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Caramel will set after a couple hours.

Steps:

  • Heat oven to 350°F. In small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Cover; set aside.
  • In large bowl, beat 1/2 cup butter, the shortening, 1/2 cup granulated sugar and the brown sugar with electric mixer on medium speed until thoroughly mixed. Beat in eggs and 1 teaspoon vanilla until well blended. Beat in oats, cinnamon, nutmeg, baking soda and flour, scraping side and bottom of bowl once, just until blended. Stir in apples and walnuts.
  • On ungreased cookie sheets, drop dough by rounded tablespoonfuls (scant 1/4 cup) about 2 inches apart.
  • Bake 13 to 17 minutes or until edges are golden brown and centers are set. Cool 2 minutes; remove from cookie sheets to cooling racks. Using spoon, drizzle about 1 teaspoon glaze onto each warm cookie. Cool completely, about 10 minutes.

1 (7.4 ounce) box apple cider drink mix (such as Alpine® Spiced Apple Cider)

½ teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 (14 ounce) package caramel bits (such as Kraft®)

Steps:

  • Whisk flour, baking soda, cinnamon, and baking powder together in a bowl.
  • Combine butter, apple cider drink mix, sugar, and salt together in another bowl. Beat using an electric mixer until light and fluffy. Beat in eggs 1 at a time. Add vanilla extract and mix well. Add the flour mixture gradually; mix until just combined. Refrigerate dough for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Microwave caramels in a microwave-safe bowl until softened, about 20 seconds. Flatten caramels using the bottom of a glass.

1 teaspoon ground cinnamon

1 cup apples, peeled and diced small

Steps:

  • In a large bowl, cream together butter and sugars. Mix in vanilla and egg until smooth.
  • In a medium bowl whisk together flour, pudding mix, baking soda, cinnamon, salt, and nutmeg. Add dry mixture to wet ingredients and mix until combined well. Stir in apples and white chocolate chips (if using). Chill in the fridge for one hour. *I tried it with chilling and not chilling and didn't notice a big difference. Chilled dough will make a thicker cookie.
  • For the Cinnamon Sugar: In a small bowl, combine the sugar and cinnamon.
  • Preheat oven to 350 degrees and line baking sheets with parchment paper. Take around 2 Tablespoons of dough and roll into a ball and then roll generously in the cinnamon sugar. Place on prepared baking sheet.
  • Bake for 10-12 minutes. Allow cookies to cool completely on the baking sheet - they will continue to bake as they cool. Store in airtight container at room temperature.

12 caramels (unwrapped, cut in half )
1 cup sugar

  • Sift together baking soda, baking powder, cinnamon and flour. Set aside.
  • Cream butter and sugar. Blend in salt and vanilla. Slowly, one packet at a time to avoid an apple cider dust bomb, blend in Apple Cider Drink Mix packets (I'm telling you this from experience). Lastly, blend in eggs.
  • Half and cup at a time, add in sifted flour mix. Cover with plastic wrap and refrigerate for 1-2 hours.
  • Unwrap all of the caramels and put in a small bowl. Line cookie sheets with parchment paper. Preheat oven to 350 degrees.
  • In a small bowl combine sugar and pumpkin pie spice for the cookie roll.
  • Spoon out a small amount of cookie dough, approximately 2 heaping teaspoons. Roll into a ball and smash flat in the palm of your hand. Place 1/2 caramel in the center and roll tightly around to prevent any holes. Roll in cookie roll sugar and place 2 inches apart on your lined cookie sheet.
  • Bake for 11-14 minutes, cookies will look slightly undercooked. Allow to cool for 5 minutes before transferring to a cooling rack.

  • In a large bowl, whisk the oats, flour, baking powder, baking soda, cinnamon, ginger, and salt until combined.
  • In another large bowl, beat the butter and sugars until light and fluffy. Add the eggs and vanilla and beat to combine. Add the dry mixture to the wet mixture and beat until just combined. Fold in the apple.
  • Chill the dough for 1 hour until cold and firm.
  • Preheat the oven to 375º with a rack in the upper and lower third and line a few baking sheets with parchment paper. Place heaping tablespoons of dough on the sheets, about 1″ apart.

1 7.4 oz box Alpine Spiced Apple Cider Instant Original Drink Mix (10 packets - found next to hot chocolate mix)
2 eggs
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 14 ounce bag Kraft chewy caramels

Steps:

  • Preheat oven to 350°. Line cookie sheets with parchment paper (you need this so that the caramel doesn't stick to the bottom of your cookie sheet).
  • In a small bowl whisk together flour, baking soda, baking powder and cinnamon.
  • With an electric mixer, cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.
  • Beat in eggs, one at a time.
  • Add vanilla and mix well.
  • Gradually add flour mixture to butter/egg mixture. Mix until just combined.
  • Scoop out cookie dough ball about the size of a walnut (about 2 tablespoons).
  • Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely.
  • Shape the dough into a ball, and place on parchment covered cookie sheets about 3 inches apart.
  • Bake 11-14 minutes, or until very lightly browned around the edges. They may not look quite done in the center but that is OK.
  • Once the cookies are done, carefully slide the parchment off of the baking sheet right out onto the counter.
  • Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down on the parchment or on a cookie rack. If they are not upside down while they cool they may drizzle caramel out the bottom.
  • Makes around 2-3 dozen cookies. Eat at room temperature or slightly warmed in the microwave.

2/3 cup (135g) packed light or dark brown sugar (I prefer dark)
1/3 cup (65g) granulated sugar
2 large eggs, at room temperature
1/3 cup (80ml) milk*
2 teaspoons pure vanilla extract
1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large apple, peeled and finely chopped (about 2 cups)*
1/2 cup (1 stick or 115g) unsalted butter
1 cup (200g) packed light or dark brown sugar
1/3 cup (5 Tablespoons; 80ml) heavy cream, divided
1/4 teaspoon salt
2 - 3 cups (240-360g) confectioners' sugar, sifted

Steps:

  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners - this recipe makes about 14 cupcakes. Set aside.
  • Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until combined. Whisk in the eggs, one at a time, until smooth then whisk in the vanilla extract and milk. Set aside.
  • Whisk the flour, baking soda, baking powder, salt, cinnamon, and nutmeg together in a large bowl. Slowly add the wet ingredients to the dry ingredients and stir gently until combined. The batter will have a few lumps. Fold in the apples.
  • Fill the cupcake liners 3/4 of the way full with batter. Bake for 21-23 minutes, rotating the pan halfway through baking. A toothpick inserted in the center will come out clean when done. Remove from the oven and allow to cool completely before frosting.
  • While the cupcakes are cooling, melt the butter in a small saucepan over medium heat. Once melted, add brown sugar and 2 Tablespoons of heavy cream. Whisk constantly until sugar has dissolved. Whisk in the salt, then stop whisking as mixture begins to simmer. Simmer without stirring for 2 minutes. Remove from heat and cool for 30 minutes. With a handheld or stand mixer fitted with a whisk attachment, beat in 2 cups confectioners' sugar and the remaining heavy cream. Slowly add 1/2 - 1 cup more confectioners' sugar until you reach your desired thickness. Add a little cream or milk if you find the frosting too thick. Frost cooled cupcakes and drizzle with salted caramel, if desired.
  • Cover and store leftovers in the refrigerator for up to 5 days.

1 cup packed light brown sugar
½ cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups white whole-wheat flour
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon apple pie spice
¼ cup whole milk
1 ½ cups finely chopped peeled Granny Smith apples (about 2 apples)
20 caramel candies (such as Kraft Caramels)
1 ½ teaspoons water

Steps:

  • Arrange oven racks in upper third and middle positions; preheat to 350 degrees F. Line 3 baking sheets with parchment paper. Beat brown sugar and butter in a large bowl with an electric mixer on medium speed until light and fluffy, 3 to 4 minutes. Add egg; beat until fully incorporated, about 30 seconds. Add vanilla; beat until incorporated, about 15 seconds.
  • Whisk flour, baking soda, salt and apple pie spice together in a medium bowl. Gradually add the flour mixture to the butter mixture alternately with milk, beginning and ending with the flour mixture and beating on low speed until just combined after each addition. Gently fold in apples.
  • Scoop the dough using a 1 1/2-inch cookie scoop (or by rounded tablespoonfuls) and arrange 2 inches apart on the prepared baking sheets. Bake 2 of the pans until the cookies are browned on the bottoms and set, 12 to 14 minutes, rotating the pans between the top and middle racks halfway through the baking time. Let the cookies cool on the pans for 5 minutes. Transfer the cookies to a wire rack and let cool completely, about 20 minutes. Meanwhile, repeat the process with the remaining pan, using the middle oven rack.
  • Place caramel candies and water in a small microwaveable bowl. Microwave on High until completely melted and smooth, about 1 minute, stirring after 30 seconds. Drizzle the warm caramel mixture over the cooled cookies. Let stand at room temperature until the caramel is set, about 15 minutes (or chill until set, about 5 minutes).

Steps:

  • Line three 12-spotted cupcake pans with liners.
  • Preheat the oven to 350 degrees F.
  • Blend the butter with vanilla.
  • Combine the eggs, egg yolks, and sugar in a large bowl.

Steps:

  • In a small bowl, make the cinnamon sugar topping. Mix the 1/3 cup of sugar and the 1/2 teaspoon of apple pie spice. Set aside.
  • In a medium bowl, whisk together the flour, apple pie spice, baking powder, and salt. Set Aside.
  • In your stand mixer with the paddle attachment or large bowl with a hand mixer. Cream the butter and sugar on medium speed for about 2 minutes until it is smooth and creamy. Add the egg and vanilla and beat on high speed until light and fluffy. Scrape down the sides of the bowl halfway through.
  • Add the flour to the dough and mix slowly until combined.
  • Roll dough into balls - about 1 tablespoon of dough each. Roll the dough balls in the sugar apple pie spice mixture.
  • Place dough balls on a parchment lined baking sheet. Use the end of a spatula to make an indent into each cookie. Chill the cookie balls for at least 2 hours and up to 3 days.
  • When ready to bake, preheat the oven to 350°F. Place chilled cookies on a parchment paper lined or silicone baking mat lined baking sheet. Place cookies about 2 inches apart.
  • Bake cookies for 12-14 minutes. The cookies will be just set if you gently poke one. Remove from oven and spoon about 1/2 teaspoon of caramel into each indentation. If while baking, the indentations have puffed up you can use the end of the spatula to remake the indent. Place caramel filled cookies back in the oven and bake for 1-2 minutes until lightly golden.
  • Allow cookies to cool on the sheets for 5 minutes then move to a wire rack to cool completely.
  • Store cookies in the refrigerator for up to one week. Storing in the fridge helps keep the caramel set. If stacking, stack between layers of wax or parchment paper to avoid the caramel sticking.
