Steps:
- Mix the topping ingredients together in a small bowl. Set aside.
- Whisk the flour, apple pie spice, baking powder, and salt together in medium bowl. Set aside.
- In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on medium-high speed until smooth and creamy, about 2 minutes. Add the egg and vanilla extract, and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine. Add the dry ingredients to the wet ingredients and mix on low until combined.
- Roll balls of dough, a little less than 1 Tablespoon each (about 1 inch balls), and then roll generously into apple pie spice/sugar mixture to coat. Place dough balls onto a large lined baking sheet. Using your thumb or the end of a spatula (see post above), make an indent into each cookie. If you find that the balls are cracking when you make an indent, use your hands to push back together.
- Chill the shaped cookies for at least 2-3 hours and up to 4 days. Cover them if chilling for longer than 3 hours.
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat. Remove chilled and shaped cookies from the refrigerator. Divide between both baking sheets, spacing the cookies about 2-3 inches apart.
- Bake for 12 minutes, remove from the oven, and spoon 1/2 teaspoon of caramel into each indentation. If the indents have lost their shape or have puffed up, use the end of a spatula to make an indent again. Place cookies back in the oven for 1-2 more minutes.
- Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Caramel will set after a couple hours.

- Whisk flour, baking soda, cinnamon, and baking powder together in a bowl.
- Combine butter, apple cider drink mix, sugar, and salt together in another bowl. Beat using an electric mixer until light and fluffy. Beat in eggs 1 at a time. Add vanilla extract and mix well. Add the flour mixture gradually; mix until just combined. Refrigerate dough for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.

- In a large bowl, cream together butter and sugars. Mix in vanilla and egg until smooth.
- In a medium bowl whisk together flour, pudding mix, baking soda, cinnamon, salt, and nutmeg. Add dry mixture to wet ingredients and mix until combined well. - Sift together baking soda, baking powder, cinnamon and flour. Set aside.
- Cream butter and sugar. Blend in salt and vanilla. Slowly, one packet at a time to avoid an apple cider dust bomb, blend in Apple Cider Drink Mix packets (I'm telling you this from experience). Lastly, blend in eggs.
- Half and cup at a time, add in sifted flour mix. Cover with plastic wrap and refrigerate for 1-2 hours.
- Unwrap all of the caramels and put in a small bowl. Line cookie sheets with parchment paper. Preheat oven to 350 degrees.
- In a small bowl combine sugar and pumpkin pie spice for the cookie roll.
- Spoon out a small amount of cookie dough, approximately 2 heaping teaspoons. Roll into a ball and smash flat in the palm of your hand. Place 1/2 caramel in the center and roll tightly around to prevent any holes. Roll in cookie roll sugar and place 2 inches apart on your lined cookie sheet.
- Bake for 11-14 minutes, cookies will look slightly undercooked. Allow to cool for 5 minutes before transferring to a cooling rack.

- Preheat oven to 350°. Line cookie sheets with parchment paper (you need this so that the caramel doesn't stick to the bottom of your cookie sheet).
- In a small bowl whisk together flour, baking soda, baking powder and cinnamon.
- With an electric mixer, cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.
- Beat in eggs, one at a time.
- Add vanilla and mix well.
- Gradually add flour mixture to butter/egg mixture. Mix until just combined.
- Scoop out cookie dough ball about the size of a walnut (about 2 tablespoons).
- Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely.

- Bake 11-14 minutes, or until very lightly browned around the edges. They may not look quite done in the center but that is OK.
- Once the cookies are done, carefully slide the parchment off of the baking sheet right out onto the counter.
- Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down on the parchment or on a cookie rack. If they are not upside down while they cool they may drizzle caramel out the bottom.

- Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners - this recipe makes about 14 cupcakes. Set aside.
- Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until combined. Whisk in the eggs, one at a time, until smooth then whisk in the vanilla extract and milk. Set aside.
- Whisk the flour, baking soda, baking powder, salt, cinnamon, and nutmeg together in a large bowl. Slowly add the wet ingredients to the dry ingredients and stir gently until combined. The batter will have a few lumps. Fold in the apples.

- While the cupcakes are cooling, melt the butter in a small saucepan over medium heat. Once melted, add brown sugar and 2 Tablespoons of heavy cream. Whisk constantly until sugar has dissolved. Whisk in the salt, then stop whisking as mixture begins to simmer. Simmer without stirring for 2 minutes. Remove from heat and cool for 30 minutes. With a handheld or stand mixer fitted with a whisk attachment, beat in 2 cups confectioners' sugar and the remaining heavy cream. Slowly add 1/2 - 1 cup more confectioners' sugar until you reach your desired thickness. Add a little cream or milk if you find the frosting too thick. Frost cooled cupcakes and drizzle with salted caramel, if desired.

- In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars on medium speed for 3-4 minutes. Scrape down the bowl, and mix in the eggs one at a time. Stir in the vanilla and molasses. In a separate bowl, whisk together the flour, cinnamon, apple pie spice, baking soda, and salt. Add the dry ingredients into the wet ingredients, and mix until just combined. Scrape down the bowl again with a rubber spatula, and slowly mix in the rolled oats. Preheat oven to 350°, unwrap about 16 caramels, line a baking sheet with parchment paper. Using a large cookie scoop, scoop out a mound of dough, pull it apart, insert a caramel in the middle and press the dough back together into a slightly flattened ball. Place on a baking sheet, 2 inches apart, and repeat until all your dough is gone. Bake for 10-12 minutes, until the edges are golden brown, its okay if the middles look slightly undercooked, they will finish cooking on the pan as they cool. Allow to set for 5-7 minutes before transferring to a cooling rack. Once completely cooled, store in a large ziplock bag on the counter.

- Line three 12-spotted cupcake pans with liners.
- Preheat the oven to 350 degrees F.
- Blend the butter with vanilla.
- Combine the eggs, egg yolks, and sugar in a large bowl.
- Set the eggs and sugar over simmering water and whisk constantly until eggs reach 110 degrees F.
- Transfer the mixture to a stand mixer and whip on high speed until very foamy.
- Once foamy, switch to medium speed and continue mixing for 15 minutes.
- Turn the mixer off and fold in the flour.
- Mix 1 cup of batter into the butter. Fold the butter mixture into the rest of the batter.
- Divide the batter into the cupcake liners, filling each one ⅔ full.
- Bake for 20 to 25 minutes.
- Allow them to cool in the pan for 5 minutes before transferring to a cooling rack.
- Combine 76 grams of the sugar with the egg whites in a mixer bowl.
- Combine water with the rest of the sugar in a saucepan and cook on medium heat until it reaches the softball stage at 249 degrees F.
- When the syrup reaches 230 degrees F, start whipping the egg whites at medium speed.
- Once the syrup reaches 240 degrees F, remove it from the heat and slowly stream the syrup into the egg whites as they whip.
- Continue whipping until completely cool.
- Once cool, switch to a paddle attachment, and little by little, one at a time, add the cubes into the whites.
- Beat until smooth, light, and fluffy.
- Beat in the caramel sauce.
- Cover and refrigerate for about 2 hours until ready to use.

- In a small bowl, make the cinnamon sugar topping. Mix the 1/3 cup of sugar and the 1/2 teaspoon of apple pie spice. Set aside.
- In a medium bowl, whisk together the flour, apple pie spice, baking powder, and salt. Set Aside.
- In your stand mixer with the paddle attachment or large bowl with a hand mixer. Cream the butter and sugar on medium speed for about 2 minutes until it is smooth and creamy. Add the egg and vanilla and beat on high speed until light and fluffy. Scrape down the sides of the bowl halfway through.
- Add the flour to the dough and mix slowly until combined.
- Roll dough into balls - about 1 tablespoon of dough each. Roll the dough balls in the sugar apple pie spice mixture.
- Place dough balls on a parchment lined baking sheet. Use the end of a spatula to make an indent into each cookie. Chill the cookie balls for at least 2 hours and up to 3 days.
- When ready to bake, preheat the oven to 350°F. Place chilled cookies on a parchment paper lined or silicone baking mat lined baking sheet. Place cookies about 2 inches apart.
- Bake cookies for 12-14 minutes. The cookies will be just set if you gently poke one. Remove from oven and spoon about 1/2 teaspoon of caramel into each indentation. If while baking, the indentations have puffed up you can use the end of the spatula to remake the indent. Place caramel filled cookies back in the oven and bake for 1-2 minutes until lightly golden.
- Allow cookies to cool on the sheets for 5 minutes then move to a wire rack to cool completely.
- Store cookies in the refrigerator for up to one week. Storing in the fridge helps keep the caramel set. If stacking, stack between layers of wax or parchment paper to avoid the caramel sticking.
