- In mixer, put in oil, sugar, eggs; mix.
- Sift together the flour, cinnamon, baking soda and salt. Add to the oil mixture and mix well.
- Chop the apples and walnuts.
- Stir in the apples and walnuts.
- Bake at 350° about 80 minutes.
- Sauce: Cook the brown sugar, butter and pinch of salt on top of stove until thick. Pour over cooled cake.

These cupcakes contain all the flavors of a caramel-dipped apple with the loving touch of apple pie spices and salted caramel. These cupcakes are moist with tender pieces of apple nestled inside, then topped with a velvety salted caramel buttercream frosting. Steps:
- Preheat oven to 350 degrees. Prepare muffin pans with cupcake liners.
- In large bowl, combine flour, sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, ginger and cloves.
- In a medium bowl, whisk eggs. Then whisk in oil, milk and vanilla.
- Add wet ingredients to dry ingredients and beat at medium speed until combined.
- Fold in chopped apples.
- Fill cupcake liners 2/3 full with batter.
- Bake for 18-19 minutes, until a toothpick inserted into the center comes out clean or cakes bounce back when pressed lightly.
- Allow cupcakes to cool completely.
- Meanwhile, prepare your caramel buttercream.
- In saucepan over medium heat, melt butter. With a wooden spoon, stir in brown sugar and continue to stir until dissolved. Then stir in heavy cream, vanilla and salt. Once mixture reaches a slow, rolling boil, cook for 5-7 minutes or until mixture begins to thicken to a syrupy consistency. Remove from heat and set aside to cool. Once cooled to a manageable temperature, transfer to a mixing bowl.
- With an electric mixer, gradually beat in confectioner's sugar until mixture is smooth and velvety. If necessary, use a little more or less to reach the desired consistency.
- Frost cupcakes using your desired method. I prefer to pipe it in a thick swirl, using a wide round tip or spreading with a flat spatula.

- Sift together dry ingredients.
- Cream together shortening and sugars until fluffy.
- Add vanilla and then eggs 1 at a time, beating well after each egg.
- Add dry ingredients alternately with buttermilk.
- Beat 2-3 minutes using high speed of mixer.
- Pour into 2 greased and floured 8-in. pans.
- Bake in 350 degree oven 25-30 minutes.
- Frost when cool.

- Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly.
- Add cream and continue stirring until mixture comes to a boil.
- Remove from heat.

- Coat slow cooker bowl with nonstick cooking spray. Place 1 long sheet of nonstick foil in bottom of slow cooker bowl, with ends hanging over handles.
- Whisk together flour, pumpkin pie spice, baking soda, baking powder and salt; set aside.
- Beat together butter and brown sugar on high speed for 1 minute. Beat in egg. Scrape down sides of bowl and, on low speed, beat in buttermilk (mixture will look curdled). Beat in applesauce. Add flour mixture to bowl and beat on low speed until combined.
- Spread batter into slow cooker. Place a clean dish towel over slow cooker then put cover on top. Cook on HIGH for 2-1/4 to 2-1/2 hours or until toothpick inserted in center comes out clean. Use foil handles to lift cake out of slow cooker. Cut into slices. Garnish with caramel sauce, whipped topping and pecans, if desired.

- Add rest of dry ingredients and beat til mixed.
- Fold in apples and pecans. Pour into greased and floured large round, deep cake pan. *Use greased and lightly floured parchment paper

- Begin by making the cake. Preheat the oven to 350 degrees Fahrenheit. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well blended. Set aside. In the bowl of an electric mixer, beat the eggs, granulated sugar, brown sugar, applesauce, vegetable oil, and vanilla extract together with the paddle attachment until combined. Gradually add the dry ingredient mixture to the mixing bowl and beat until the batter is smooth. Turn off the mixer and stir in the raisins and pecans. Evenly distribute the batter between 2 well-greased and lightly floured 8-inch cake pans and bake for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Flip out onto a wire rack to cool.
- While the cake is baking/cooling, you can get started on the frosting. The first step to this frosting is making the caramel. In a small thick-bottomed saucepan, mix together the water and 1/3 cup of the granulated sugar until well blended. Bring to a boil over medium-low heat and continue boiling until the mixture turns a light caramel color, only stirring once every four minutes. This could take anywhere between 8 to 15 minutes, the speed will depend upon the heat of your stovetop. Remove the pan from the heat and quickly stir in the heavy cream, brown sugar, and 1/4 cup of the butter until incorporated. Be careful as the mixture will spit and hiss a bit. If the sugar begins to clump up when you're stirring do not fret, just stir as best as you can for about 30 seconds and then put the pot back on the heat and bring it back to a boil again over medium-low heat.
