- Preheat the oven to 350F degrees.
- Grease and flour a 9x13 inch cake pan.
- In a large bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger & nutmeg.
- In a large bowl using an electric mixer beat together the oil, sugars, eggs and vanilla. Then stir in the apple sauce, grated apple and sour cream.
- Slowly beat in the flour mixture, turning off the mixer and scraping down the sides of the bowl as necessary.
- Pour into the prepared pan and bake for 40-45 minutes or until an inserted toothpick comes out clean.
- In a large bowl beat together the butter until soft. Then beat in the cream cheese until no lumps remain.
- Slowly beat in the powdered sugar about 1 cup at a time. Beat in 1-2 tablespoons cream as needed until the desired sweetness is reached.
- Frost the cooled cake, then top with chopped walnuts.

SPICY GINGER APPLESAUCE CAKE WITH CREAM CHEESE FROSTING
This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

- Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
- In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
- Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
- Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
- When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
- Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

- Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with cooking spray; set aside.
- Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
- Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
- Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.
- Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, 75 to 90 minutes.
- Remove from oven, and cool slightly on a wire rack.
- Invert cake onto rack; turn cake right-side up to cool completely on rack, and serve drizzled with caramel sauce.
FRESH APPLE SPICE CAKE
Steps:
- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
APPLE SPICE CAKE WITH CREAM CHEESE ICING
Steps:
- Preheat the oven to 350 degrees F.
- Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
- In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
- Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
- Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
- Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
- Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

- Preheat your oven to 350 degrees and grease/flour a bundt pan.
- In a bowl measure out and sift the dry ingredients (flour, baking powder, baking soda, spices, and salt) together. If you don't have a sifter, simply spoon the flour into the measuring cups and don't pack them down once full. Then stir or whisk in the remaining dry ingredients.
- In a large bowl cream 1 cup of the butter and the sugars together until well-combined. Add in the eggs, one at a time.
- To the butter mixture add the vanilla, light sour cream, and applesauce. Mix to combine.
- Gradually add the dry ingredients into the bowl with the wet ones (and I do mean gradually, i.e. 1/4-1/3 of the mixture at a time. Your kitchen may need redecorating but doing so by adding all of the flour at once and attacking it with your mixer isn't the way to go.).
- Once all of the dry ingredients are incorporated, fold in the diced apples and the walnuts (if using). The batter will be fairly thick, so don't panic. Pour the batter into the prepared bundt pan.
- Place the pan on the lowest rack of your oven and bake for 65-75 minutes.
- When the cake is done, allow it to cool IN THE PAN for half an hour. (A fan placed behind the cooling cake to waft the aroma throughout your home is really nifty, but not a necessity).
- While the cake is cooling make the glaze.
- Whip the cream cheese and remaining 1 tablespoon of the butter until well-combined and fluffy.
- Mix in the maple extract. Beat in the powdered sugar (again, gradually!) until all of it is well incorporated. Add the milk, in increments, until the mixture has reached a "glaze-like" consistency. Drizzle the glaze over the cooled cake.

- Heat oven to 350 degrees.
- Butter a 9" spring form pan.
- Place all cake ingredients into bowl of mixer.
- Beat on lowest speed until apples are in 1/4" chunks and their juice has thinned the batter slightly.
- This takes about 3 minutes.
- Pour batter into prepared pan and smooth the top.
