APPLE SPICE CAKE WITH CREAM CHEESE ICING
Steps:
- Preheat the oven to 350 degrees F.
- Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
- In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
- Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
- Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
- Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
- Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

- Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with cooking spray; set aside.
- Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
- Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
- Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.
- Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, 75 to 90 minutes.
- Remove from oven, and cool slightly on a wire rack.
- Invert cake onto rack; turn cake right-side up to cool completely on rack, and serve drizzled with caramel sauce.

- Preheat oven to 350F and line a 8-inch square baking pan with overhanging parchment paper.
- In a large bowl, whisk together the flour, sugar, spices, baking soda and salt.
- Make a well in the centre of the dry ingredients and add the milk, apple cider, oil and vanilla. Stir until just combined. Don't over mix.
- Pour the batter into the prepared pan and bake for 24-26 minutes, or until a toothpick inserted into the middle comes out clean.
- Remove from the oven and let cool completely on a wire rack.
- To make the frosting, place the softened butter in a mixing bowl. Using a stand mixer or handheld electric mixer, cream the butter until smooth.
- Gradually add the sifted powdered sugar a 1/4 cup at a time until the frosting is smooth and fluffy, stopping to scrape down the sides of the mixing bowl as needed. (You can add more powdered sugar if you like your frosting thicker and sweeter).
- Add in the apple pie spice and vanilla and beat again until incorporated.
- Spread the frosting on the cooled cake. Slice and serve.

- Preheat the oven to 350 degrees. Grease three 8-inch round cake pans with butter, shortening, or spray. Line with parchment paper, then grease or spray with cooking spray.
- Sift the flour, baking powder, baking soda, cinnamon, allspice, ginger, and salt into a medium bowl.
- In the bowl of a stand mixer beat together the oil, buttermilk until smooth. Add the egg whites and yolk and, shredded apples and beat until smooth.
- With the mixer on low speed, slowly add the dry ingredients just until combined and there are no lumps, do not overmix. The batter should be thick but pourable.
- Pour the batter evenly among the 3 cake pans and bake 25-30 minutes, until a toothpick inserted in the center comes out clean.
- Remove and let cool almost completely in the pan. Turn the cakes out onto a cooling rack. Allow the cakes cool completely before frosting.
- Once the cake is completely cooled, place one layer on a plate, cake stand, or rotating stand. Spread frosting until half-inch thick, using a dough scraper or flat knife smooth the frosting until level. Repeat for second layer.
- Place the third cake layer by flipping it and placing it top down. This gives you sharp edges for the top of your cake. Frost the cake sides and top using an icing spatula or flat knife and a dough scraper to smooth and level.
- Using an electric mixer with the paddle attachment, beat the butter until creamy.
- Gradually add the powdered sugar and beat until smooth.
- Add the vanilla extract and add the cream until the frosting is smooth but still holds it's shape.

- Sift together the flour, baking powder, baking soda and other spices including salt and set aside.

- To make the frosting, simmer the maple syrup in a sauce pan until it reduces by half, about 20 minutes. Remove from heat and add butter. Stir until incorporated and add vanilla and cream. Stir powdered sugar into mixture and beat with a wire whisk until smooth. Let it cool completely before pouring over the cooled cake.
