- Add the mayo, sour cream, sugar, vinegar, lime juice, and some salt & pepper to a small bowl and whisk together until smooth. Give it a taste and adjust ingredients if needed to suit your tastes (e.g. add more sugar or vinegar).
- Prep your apples and scallions.
- Add the coleslaw mix to a large bowl, along with the apples and scallions. Pour the dressing over top and toss until combined. Season with extra salt & pepper as needed (this is a fairly big salad so I am generous with both).
- Coleslaw can be served immediately or chill it for a few hours first.

- In a large serving bowl, combine the kohlrabi and apple matchsticks. Add the cheese, if using, and the tarragon leaves and sunflower seeds. Shave lemon zest liberally over the bowl (I probably used about half of a small lemon's worth or more).
- Drizzle in 1 tablespoon olive oil and 1 tablespoon lemon juice, then sprinkle lightly with salt and black pepper. Use your hands to gently toss the salad, then add another drizzle of olive oil and lemon juice if the salad seems dry. Finish with another light sprinkle of salt and pepper and serve immediately.

BROCCOLI SLAW SALAD WITH APPLE - BROCCO SLAW
This is an easy, quick salad that even kids love. It's a good way to get them to eat broccoli if they think they don't like it! Most supermarkets have packaged brocco slaw in the produce section. If not, you will have to make very thin matchsticks of broccoli stems, about 2-3 inches long. Don't use the crowns at all. You will need to add in 5% shredded carrot and 5% shredded red cabbage to the broccoli matchsticks. Then continue with the recipe. - Transfer the shredded cabbages to a large bowl and add the shredded carrots and apple. Toss to combine. Reserve.
