This apple slaw recipe is easy and fast. It makes a great side salad or addition to tacos or sandwiches. It especially pairs well with pork!

1/2 cup mayo
1/2 cup sour cream (or Greek yogurt)
1 teaspoon granulated sugar
1 teaspoon vinegar (use white or cider)
1 tablespoon fresh lime juice
1 pound coleslaw mix
1 small bunch scallions (chopped (green parts only))
1 Granny Smith apple (chopped fine (or julienned))
1 red apple (chopped fine (or julienned))
Salt & pepper (to taste)

Steps:

  • Add the mayo, sour cream, sugar, vinegar, lime juice, and some salt & pepper to a small bowl and whisk together until smooth. Give it a taste and adjust ingredients if needed to suit your tastes (e.g. add more sugar or vinegar).
  • Prep your apples and scallions.
  • Add the coleslaw mix to a large bowl, along with the apples and scallions. Pour the dressing over top and toss until combined. Season with extra salt & pepper as needed (this is a fairly big salad so I am generous with both).
  • Coleslaw can be served immediately or chill it for a few hours first.

2 small kohlrabi (about 1 pound, I used the green variety but purple would be prettier), cut into matchsticks about 1/4″ wide
1 large Honeycrisp apple (about 1/2 pound), cored and cut into matchsticks about 1/4″ wide
1/3 cup grated gouda cheese (optional, not shown)
1/4 cup fresh tarragon leaves
3 tablespoons toasted sunflower seeds*
Lemon zest, to taste
1 to 2 tablespoons olive oil, to taste
1 to 2 tablespoons lemon juice, to taste
Flaky sea salt (like Maldon) and freshly ground black pepper, to taste

Steps:

  • In a large serving bowl, combine the kohlrabi and apple matchsticks. Add the cheese, if using, and the tarragon leaves and sunflower seeds. Shave lemon zest liberally over the bowl (I probably used about half of a small lemon's worth or more).
  • Drizzle in 1 tablespoon olive oil and 1 tablespoon lemon juice, then sprinkle lightly with salt and black pepper. Use your hands to gently toss the salad, then add another drizzle of olive oil and lemon juice if the salad seems dry. Finish with another light sprinkle of salt and pepper and serve immediately.

1/4 cup olive oil
1 heaping teaspoon Dijon or other good-quality mustard, or to taste
1 tablespoon lemon juice
1 tablespoon honey
2 cups cored and shredded red cabbage (about 8 ounces)
8 radishes, chopped
2 medium Granny Smith or other tart, crisp apples, cored and shredded or grated
1 red onion, chopped or grated
Salt
Black pepper
1/2 cup chopped fresh parsley

Steps:

  • Put the oil, mustard, lemon juice and honey in a large bowl and whisk until well combined.
  • Add the cabbage, apples, radishes and onion and toss until thoroughly combined. Sprinkle with salt and pepper and refrigerate until ready to serve. (It's best to let the slaw rest for an hour or so to allow the flavors to mellow. You can let it sit even longer, up to a few hours, before the apples start to discolor; just drain the slaw before continuing.)
  • Just before serving, toss with the parsley. Adjust seasoning to taste.

3 cups chopped cabbage
1 carrot (scraped and shredded)
2 apples (unpeeled and chopped, (can use 1 red and 1 green,. I used red delicious))
1/4 to 1/2 cup chopped onion ((I used purple because I think it is prettier but could use regular or green onion))
1 teaspoon celery seeds or 1/2 cup chopped celery
1/2 cup mayonnaise or Miracle Whip
2 tablespoons honey
1 tablespoon white granulated sugar
2 teaspoons white vinegar
1/8 teaspoon black pepper
pinch salt

Steps:

  • Combine cabbage, shredded carrot, chopped apples, onion and celery seeds and toss. Whisk together mayonnaise, honey, sugar, white vinegar, black pepper and salt
  • Pour over slaw. Mix well with spoon. Refrigerate 2 to 3 hours before serving. Makes about 4 cups or 8 servings.

If not, you will have to make very thin matchsticks of broccoli stems, about 2-3 inches long. Don't use the crowns at all. You will need to add in 5% shredded carrot and 5% shredded red cabbage to the broccoli matchsticks. Then continue with the recipe. 1 scallion (-finely chopped)

1/2 lemon or lime (-juiced)
1 tbsp apple cider vinegar
3/4 tbsp extra virgin olive oil
1 tbsp maple syrup
1 pinch sea salt ((to taste))
1 pinch red pepper flakes ((or to taste))

Steps:

  • In a small bowl whisk together the apple cider vinegar, maple syrup and olive oil until emulsified. Season to taste with the sea salt and red pepper flakes and set aside.
  • Cut your apple into thin sticks and hit it with a squeeze of the lemon to prevent oxidation / browning. Place them in a mixing bowl together with the shredded cabbage, carrot, parsley and scallions.

¼ head red cabbage (outer leaves removed)

1 large Rave® apple (cored and julienned (cut into fine matchsticks))

  • Using a sharp Chef's knife, remove the tough core from the cabbages. Then slice each quarter into thin shreds. You can also do that using a mandoline or a food processor.

  • Make the dressing by whisking all the dressing ingredients in a bowl. Taste and adjust the ingredients as needed.
