This is one of those recipes you always come back to. A flavorful tomato sauce and mildly spiced meatballs make a hearty sandwich filling, or they can be served over pasta. I broil the meatballs first to quickly brown them. -Jean Glacken, Elkton, Maryland

2 large eggs, lightly beaten
1/4 cup whole milk
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 pound ground beef
1/2 pound bulk Italian sausage
SAUCE:
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 small onion, chopped
1/2 cup chopped green pepper
1/2 cup dry red wine or beef broth
1/3 cup water
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
6 Italian rolls, split
Shredded Parmesan cheese, optional

Steps:

  • In a large bowl, combine eggs and milk; add the bread crumbs, cheese, salt, pepper and garlic powder. Add beef and sausage; mix well. Shape into 1-in. balls. Preheat broiler. Place meatballs in a 15x10x1-in. baking pan. Broil 4 in. from the heat for 4 minutes; turn and broil 3 minutes longer. , Transfer to a 5-qt. slow cooker. Combine the tomato sauce and paste, onion, green pepper, wine, water and seasonings; pour over meatballs. Cover and cook on low for 4-5 hours. Serve on rolls. Sprinkle with shredded cheese if desired.

1 lb bulk pork sausage with sage
2 1/2 cups shredded sharp Cheddar cheese (10 oz)
2 cups original all-purpose baking mix
1 Braeburn apple, peeled, shredded (2 cups)
Paprika, if desired

Steps:

  • Heat oven to 400°F. Line cookie sheets with cooking parchment paper.
  • In large bowl, mix sausage, cheese, baking mix and apple with hands until well blended. Shape mixture into 1 1/2-inch balls; place 1 inch apart on cookie sheets.
  • Bake 12 to 14 minutes or until golden brown and no longer pink. Sprinkle lightly with paprika. Serve warm.

Delicious pork sandwiches - perfect for a hearty dinner that's ready in just 25 minutes.

8 oz bulk pork sausage
1 tablespoon vegetable oil
2 eggs
Salt and pepper, if desired
1/4 cup apple butter
4 slices (1/2 inch thick) Italian bread
1/2 cup shredded sharp Cheddar cheese (2 oz)
2 tablespoons butter, softened

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Divide sausage in half and shape into flat patties slightly bigger than the diameter of each bread slice. Place patties in hot skillet and cook about 8 minutes, turning once, until pork is no longer pink in center. Drain on paper towel-lined plate. Drain fat from skillet and wipe out with a wadded paper towel.
  • In same skillet, heat oil over medium heat until hot. Break each egg into skillet and sprinkle with salt and pepper if desired. Cook until whites of eggs are set. Flip eggs so yolks face down (flip eggs away from you to avoid being splashed with hot oil). Use tip of spatula to pierce each yolk. Cook eggs 1 minute or until yolks are set. Remove eggs from skillet and place directly on top of sausage patties on paper towels.
  • Spread 2 tablespoons apple butter on one side of 2 bread slices. Top each slice with sausage and egg. Sprinkle each with 1/4 cup cheese. Cover with remaining bread slices. Spread half of the butter over the top slices of bread.
  • In same skillet, place sandwiches butter sides down. Spread remaining butter over top slices of bread. Cook uncovered over medium heat about 5 minutes or until bottoms are golden brown. With spatula, carefully turn sandwiches over. Cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted. Serve hot.

2 28-ounce cans whole San Marzano tomatoes, crushed by hand
1 6-ounce can tomato paste
2 bay leaves
1 1/2 cups grated parmesan cheese (about 3 ounces), plus 1 small piece parmesan rind
1/2 cup chopped fresh parsley
4 cloves garlic, chopped
Kosher salt and freshly ground pepper
3/4 cup breadcrumbs
1/2 cup whole milk
1 1/2 pounds ground beef chuck
2 large eggs
1 1/2 pounds sweet and/or hot Italian sausage, cut into 1-inch pieces
2 loaves Italian bread, cut into 3-inch pieces and split open
Shredded mozzarella cheese, for topping

Steps:

  • Combine the crushed tomatoes, tomato paste, bay leaves and parmesan rind in a 6-quart slow cooker. Add 1 cup water, 1/4 cup parsley, 2 chopped garlic cloves, 1/2 teaspoon salt and a few grinds of pepper.
  • Combine the breadcrumbs and milk in a medium bowl; soak 2 minutes. In a separate bowl, combine the beef, eggs, 1 cup parmesan, the remaining 1/4 cup parsley and 2 chopped garlic cloves, 1 teaspoon salt and 1/2 teaspoon pepper. Add the breadcrumb-milk mixture and mix with your hands until combined. With damp hands, shape into 24 meatballs, about 1 1/2 inches each; transfer to the slow cooker.
  • Add the sausage pieces to the slow cooker, then cover and cook on low, 7 hours. Remove the bay leaves and parmesan rind and stir in the remaining 1/2 cup parmesan. Season with salt and pepper. Serve on the bread and top with mozzarella.
