- In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
- Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
- Pour in 4 go 6 cups chicken broth. Simmer until step 5.
- In a large bowl, mix 3 eggs, a scoop of grainy mustard and 3 tablespoons each chopped parsley and tarragon.
- Add to the bowl 8 cups each toasted pumpernickel and sourdough bread cubes and the hot broth mixture.
- Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.
PORK CHOPS, GOLDEN APPLE AND RAISIN SAUCE, WHOLE WHEAT PASTA MAC-N-CHEDDAR

- Heat a large pot of water for pasta. Season water with salt and cook pasta to al dente.
- Add apples to a medium pot and stir in cider, sugar, raisins, cinnamon and a pinch of salt. Place pot over medium-high heat and cook until tender, about 12 minutes.
- Season chops with salt and pepper. Heat 2 tablespoons extra-virgin olive oil in a skillet over medium-high heat. Add chops and cook 6 to 7 minutes on each side.
- While chops cook, heat 2 tablespoons butter in a sauce pot over medium heat. Whisk in flour and cook a minute then whisk in milk and season with salt and pepper. Grate cheese and stir into sauce and season with nutmeg, to taste, and a dash of hot sauce. Reduce heat to low.
- Add broccoli to pasta last 2 minutes of cook time. Drain and return to pasta pot. Add cheese sauce and stir to coat.
- Add mustard and syrup to chops and glaze, 1 minute.
- Serve pork with apple sauce, macaroni and cheddar with broccoli along side.
SPICED APPLES AND RAISINS

- Melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, cardamom, and dry mustard; season with salt and pepper. Squeeze in the lemon juice to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Serve spiced apples and raisins with holiday pork, turkey or ham.
RAISIN SAUCE FOR BAKED HAM

- Serve the raisin sauce warm, with sliced ham or other pork dishes, and enjoy.

In our home, baked ham was reserved for the holidays. Always decorated with pineapple rings, cherries and studded with cloves it still never did it for me. - Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
- For Topping:
- Mix old-fashioned oats, brown sugar, all purpose flour, ground cinnamon and salt in large bowl. Add unsalted butter and rub into mixture until coarse crumbs form. Mix in chopped walnuts.
- For Filling:

Still sharing my treasure trove of old recipes recently found again. As w/most of the others, the original source has been lost w/the passage of time. This sounds so good to me, is an amazing quick-fix & can be served hot or cold in several ways to create a lovely dessert. Enjoy!

- Melt butter in a non-stick skillet. Add apples & sprinkle w/sugar.
- Saute (stirring constantly w/a wooden spoon) till apples begin to get tender (about 2-3 min).
- Add raisins & saute for a couple of min to heat them through & continue to cook the apples.
- Remove the skillet from the heat, stir in the cognac & swirl the apples around til it is well-mixed into the sauce.
- Serving Suggestions: If you want to serve hot (or warm), use apple mixture to top pound cake slices or vanilla ice cream & sprinkle w/the chopped pecans. -- If you want to serve cold, refrigerate mixture till ready for use & then assemble the desserts as already stated.
