Steps:
- Combine apples with sugar, raisins, and pecans; let stand half an hour.
- Stir in oil, vanilla, and egg.
- Combine remaining ingredients in a separate bowl; stir into apple mixture 1/3 at a time, just enough to moisten.
- Pour batter into greased 9x13 inch pan. Bake at 350 degrees for 35-40 minutes. Cool slightly before serving.
APPLE CAKE WITH RAISINS
This is a dense and moist apple cake, almost like a carrot cake made with apples, which could be served as dessert, brunch, or morning coffee treat.

Steps:
- In a medium bowl, mix the apples and sugar. Let stand about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10x15 inch baking pans.
- Stir the water into the bowl with apples. Blend eggs and margarine in a small bowl, and mix with the apples. Mix in the flour, baking soda, cinnamon, and salt. Stir in the raisins and walnuts. Transfer to the prepared pans.
- Bake 1 hour in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool slightly before turning out of pans.
- In a medium bowl, blend confectioners' sugar, hot water, and vanilla extract. Drizzle over the cakes while still warm.

I got this from Linda, my friend of 40 years! She has given the recipe to many people and once you try it, you'll know why. I've made it with a combo of white and whole wheat flour. I've also used applesauce in place of the oil - it still tastes great!

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking dish with cooking spray; dust with 1 tablespoon flour.
- Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
- Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
- Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
- Mix brown sugar, flour, and cinnamon for topping in a bowl. Cut in cold butter. Stir in walnuts and apple.
- Combine flour, baking powder, and salt for cake in a bowl. Beat white sugar and butter together in a large bowl with an electric mixer until creamy. Add dry ingredients. APPLE RAISIN COFFEECAKE
Steps:
- Preheat oven to 350 degrees F. Grease & flour 9 x 13 cake pan or baking dish. Combine all dry ingredients and mix well. Add eggs, vanilla, butter and milk. Mix well. Add apples and raisins mix again to stiff batter. Pour into pan.
- Bake for 50 minutes or until toothpick inserted in center comes out clean.
- Remove from oven to cool and while still warm drizzle with glaze. Serve warm.
