Steps:
- First make the breadcrumbs in a food processor, so they are fine.
- Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
- Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
- Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
- Since nothing has been pre-frozen, these will freeze well.
- Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
- Prior to cooking, pierce the skins to prevent bursting.

CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.

- In a small food processor, puree onion and garlic. Add apple pieces and pulse until apple is broken up into tiny pieces but not pureed. (You can skip this step and just chop everything fine if you don’t mind chunks of onion, garlic, and apple. I prefer is a bit more incorporated.)
- Saute onion/garlic/apple mixture in 1 TBS of fat of choice over medium heat for 5-7 minutes, until it softens and begins to brown a bit. Allow to cool slightly.
- In a large bowl, add maple syrup to ground pork and mix thoroughly. Add the rest of the ingredients, including onion/garlic/mixture and mix well. I use my hands.
- Shape into desired sized patties and either fry up now or freeze for later. If freezing, separate layers with unbleached parchment paper.

- In a large bowl, combine all ingredients until all ingredients are evenly dispersed. Form into about 16 small patties, pressing them thin, and slightly thinner in the centers.
- Preheat a large skillet to medium-high heat. Add oil or ghee and sausage patties. You will likely need to cook these in batches to avoid crowding the pan. Fry sausage patties for 10 minutes, flipping after 5 minutes. Patties should reach an internal temperature of 165°F. If they’re browning too quickly on the outside (before the inside cooks), turn heat down to medium.
