PIKELETS

Pikelets image

A Welsh take on American pancakes.

Provided by lluchuen

Time 14m

Yield Makes about 24 pikelets

Number Of Ingredients 6

8oz of self-raising flour
1 level tsp bicarbonate of soda
1 level tsp cream of tartar
3oz of caster sugar
2 eggs (beaten)
1/2 pint of sour milk (if using fresh milk, double amount of cream of tartar)

Steps:

  • Sieve the dry ingredients, then add sugar. Mix with the milk and eggs until a thick batter is formed.
  • Place tablespoon of batter onto a hot greased griddle. Do this for each pikelet. Keep at a steady heat. Turn pikelet when bubbles appear and burst.
  • When cooked, cover with a dry cloth. Though they are nice on their own, they are best served with jam and cream or just butter.

PIKELETS

Pikelets image

Smaller than pancakes and fluffier than crepes, pikelets make a great breakfast or snack. Serve with jam and cream or a hearty dollop of lemon curd.

Categories     Breakfast

Time 15m

Number Of Ingredients 7

1 cup self-raising flour
1/4 teaspoon bicarbonate of soda
1/4 cup caster sugar
1 lightly beaten egg
3/4 cup milk
30 gram butter, melted
jam, whipped cream, to serve

Steps:

  • Sift flour and soda together into a medium bowl. Stir in sugar. Make a well in centre. Gradually stir in egg and enough milk for a smooth, pouring consistency. Rest 15 minutes.
  • Heat a large, non-stick frying pan on medium. Brush with butter. Working in 3 batches of 6, drop tablespoons of batter into pan, allowing room for spreading. Cook 1-2 minutes, until bubbles appear on surface. Turn and cook 1 minute further, until golden. Brush pan with butter between batches.
  • Transfer cooked pikelets to a wire rack. Serve warm with jam and cream.

PIKELETS WITH CINNAMON APPLE SLICES

Pikelets With Cinnamon Apple Slices image

Delicious plain pikelets with a cinnamon applesauce. The sauce is a bit different because of the slicing of the apples. One or two pikelets makes a very nice dessert with a spoonful of vanilla ice cream! If using non hydrogenated margarine for the pancakes and sauce, such as Becel, use a little less because of the higher moisture content. Recipe altered from Apple & Pear Australia Ltd.

Provided by LUv 2 BaKE

Categories     Breakfast
