1 cup uncooked quinoa
2 cups almond milk
2 apples, cored and diced
1 tablespoon coconut sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon clove
1/8 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/8 teaspoon salt
pecans, for topping to taste
maple syrup, for topping to taste

Steps:

  • Add everything except for pecans and maple syrup to a saucepan. Bring to a boil, cover and reduce to simmer for 20-25 minutes.
  • When the apples are soft, and quinoa has absorbed the water, fluff the quinoa with a fork.
  • Pour into bowls and top with maple syrup and pecans.

1 small Granny Smith apple - peeled, cored, and chopped
1 teaspoon agave syrup, or to taste

Steps:

  • Bring quinoa, water, and apple juice to a boil in a saucepan. Reduce heat to medium-low and add cinnamon. Cover and simmer quinoa for 10 minutes. Stir apples into the quinoa; continue simmering until the liquid is absorbed and quinoa is tender about 10 more minutes. Drizzle with agave nectar to serve.

½ teaspoon apple pie spice
1 tablespoon water
1 cup cooked quinoa
¼ cup fat-free half-and-half

Steps:

  • Place apple, sweetener, and apple pie spice in a saucepan over medium heat; cook and stir until apple is cooked through, 5 to 8 minutes. Add water if needed to keep apples from sticking. Mix quinoa and half-and-half into apple mixture; cook until warmed through, 3 to 5 minutes.
