APPLE CRUMBLE WITHOUT OATS
How to make an easy homemade apple crumble without oats, from Grandma's recipe box. Sliced apples with the best cinnamon brown sugar topping.

Steps:
- Pre-heat the oven to 425° F.
- Core, peel, and slice the washed apples, and add them to a greased 9x13 baking dish.
- In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, sugar, and brown sugar.
- Using a pastry blender, mix the dry ingredients with the unbeaten eggs and melted butter, forming a kind of crumble topping.
- Crumble the topping right over the apples.
- Bake, uncovered, at 425° F for about 20 minutes; the crust should be a nice golden brown. Then cover with aluminum foil, and bake an additional 10 to 15 minutes, 'til the apples are tender.
- Once you've removed it from the oven, allow it to cool for about 15 minutes before serving.
- Serve with a scoop of vanilla ice cream or a swirl of whipped cream.

APPLE AND PEAR CRISP
Steps:
- Preheat the oven to 350 degrees F.
- Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
- For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
- Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.
APPLE PEAR CRUMBLE WITHOUT OATS
Steps:
- Preheat oven to 375. Spray a 9x13 casserole dish.
- Slice apples and pears (leave the skin on) right into the baking dish. Add the lemon juice to the apples and pears and gently toss to coat. Add the cinnamon and flour, and gently mix until distributed throughout the apples.
- Topping:
- Stir together the brown sugar, flour, cinnamon, ginger, nutmeg, and salt with softened butter. Mix together; add the sliced almonds. Continue mixing (will be crumbly, or like cookie dough).
- Sprinkle the topping over the apples.
- Bake for 35 minutes until topping is golden brown. Remove from oven and allow to rest for 10 minutes. Serve with vanilla ice cream or gelato, and optional to drizzle with caramel sauce.

- Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.
- Mix apples, pears, 3/4 cup brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 9x9-inch glass pan. Sprinkle oat mixture atop apple-pear mixture; top with almonds.

OATMEAL APPLE PEAR CRISP
I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

- While peeling apples and pears, keep them in the lemon juice so they don't turn brown.
- Place apples in a greased shallow 9 square baking dish.
- Sprinkle (2 tbsp) brown sugar, ground cinnamon, ground nutmeg and water.
- Combine remaining dry ingredients in a separate bowl; add melted butter, mixing until crumbly.
- Sprinkle crumb mixture on top of the apples.
- Bake at 375°F for 30-40 minutes or until apples are tender.
- Serve with vanilla ice cream or yogurt, great by itself too.

APPLE AND PEAR CRUMBLE
This great dessert is from The New Vegetarian Epicure. I've used it with several combinations of fruit - basically whatever I have on hand - and it's always been good. While the apple and pear combination is excellent, I've also had great results with mixed berries (strawberry, raspberry, blueberry, cherries). An easy dessert with ingredients you probably have on hand.

- Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
- Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
- Combine the flour, sugar, salt and spices.
- Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
- Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
- Add the rolled oats and mix. If the mixture seems sticky, add more oats.
- Spread fruit evenly in a large glass or ceramic baking dish.
- Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
- Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
- Serve it hot or warm, with ice cream, whipped cream, or all by itself.

SHEILA'S BEST APPLE CRISP (NO OATS)
This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties.

Steps:
- Cut cold butter into small cubes. Place in freezer to chill further.
- PREPARE APPLES.
- Peel apples.
- Cut an apple into quarters. Cut out core. Cut each apple slice one more time so that there are 8 slices.
- Cube the apple by cutting each slice the "short" way 2 or 3 times. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).
- Cube the remaining apples.
- Put apples into an 8 1/2 x 12 inch au gratin casserole dish, or an equivalent baking dish (it's pretty forgiving).
- Pour water over apples.
- PREPARE TOPPING:.
- In the food processor put the sugar, nutmeg, cinnamon, salt and flour. Pulse until combined.
- Remove butter from freezer and put into food processor.
- Pulse to blend. Topping should be smaller than peas but not as fine as cornmeal.
- Add 3/4 cups chopped pecans pulse too mix.
- Sprinkle topping over apples evenly.
- Cover dish with foil.
- Bake at 350 for 30 minutes.
- Uncover.
- Bake for 30 more minutes.
- Cool before serving.
