My coworker Debbie treated the office to these spectacular mini apple pies. Everyone fell in love with the warm filling and flaky, buttery crust of this apple pastry. -Ginny Alfano, Canastota, New York

2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cubed
1 tablespoon cider vinegar
1/2 cup milk
FILLING:
3/4 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
5 tablespoons cold butter, divided
6 small tart apples, peeled and cored
1/4 cup sugar

Steps:

  • In a large bowl, combine flour and salt. Cut in butter until crumbly. Sprinkle with vinegar. Gradually add milk, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle. , Meanwhile, in another bowl, combine the brown sugar, flour and cinnamon. Cut in 2 tablespoons butter until crumbly; set aside. Melt the remaining butter. Cut apples into 1/2-in. rings., Shape dough into sixteen 11/2-in. balls; roll into 5-in. circles. Brush with 2 tablespoons melted butter. , Place one apple ring in the center of each circle. Top each with 2 teaspoons brown sugar mixture. Fold edges of dough over apple rings, leaving centers uncovered; crimp edges. Brush dough with remaining melted butter; sprinkle with sugar., Place 1 in. apart on ungreased baking sheets. Bake at 375° for 30-35 minutes or until golden brown and apples are tender. Serve warm.

Plump little apple pies made out of puff pastry.This recipe seems so simple, and one to impress and please family and friends alike.I received this recipe from my mom, but I haven't tried it yet, I can't wait go out and buy the puff pastry so I can make it. I hope you enjoy it!

1 (17 ounce) package puff pastry
12 ounces cut up red baking apples (approx. 2 medium sized apples)
1/3 cup packed brown sugar
2 teaspoons flour
1 teaspoon lemon juice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 beaten egg

Steps:

  • Thaw puff pastry according to directions on package.
  • Peel, core and chop apples up coarsely.
  • Combine apples with sugar, flour, lemon juice, cinnamon and nutmeg.
  • Heat oven to 350°F.
  • Flour surface lightly and cut pastry sheet into nine 3x3 squares.
  • Place approximately 1/4 cup apple mixture on each square and brush edge with beaten egg.
  • Place second pastry square on the top of the already filled pastry to form a pocket.
  • Press down border with fingers to seal and then press with fork to decorate the edges.
  • Make a 1-inch L shape incision into each pie and fold back the pastry flap.
  • Place on ungreased cookie sheet and give each one an egg wash.
  • Bake for approximately 20 minutes or until golden.

I make this puff pastry apple recipe with my mom. Its really fun to eat and yummy in the end. You can serve it with powdered sugar. I thought of this recipe myself while I was picking apples in the grocery store.

2 apples, peeled and diced
2 tablespoons honey
1 tablespoon brown sugar
½ teaspoon ground cinnamon
1 sheet puff pastry, cut into 8 squares

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add apples, cover, and steam until tender, about 15 minutes.
  • Mix softened apples, honey, brown sugar, and cinnamon together in a bowl.
  • Spread puff pastry squares on a flat work surface. Place 1 tablespoon of the apple mixture in the middle of each square. Fold the corners of each square upward and pinch the edges together to make sure the filling stays in place. Put the squares on a baking sheet.
  • Bake in the preheated oven until the pastry rises and turns golden brown, 20 to 25 minutes.

4 apples, sliced
2 tablespoons sugar
2 tablespoons cinnamon
1 egg, beaten
1 cup icing sugar
3 tablespoons milk

Steps:

  • Preheat oven to 350°F (180°C).
  • Roll out the sheet of puff pastry and cut into 8 equal rectangles.
  • Cut a border about 1 cm (½ inch) from the outside, not cutting all the way through the pastry.
  • Spread the blackcurrant jam all over the center. Layer apples in an overlapping pattern.
  • Sprinkle with sugar and cinnamon.
  • Transfer to parchment-lined tray and brush with egg wash.
  • Bake for 25 minutes, then cool.

1 sheet puff pastry, thawed
2 apples, peeled,cored and halved
2 tablespoons butter, melted
1 teaspoon cinnamon
1 teaspoon sugar
1 egg wash

Steps:

  • Cut the puff pastry into 9 equal squares.
  • Taking one of the squares, make 5 equal 1-inch (2 cm) cuts on 2 sides of the square.
  • Make 3 vertical 1-inch (2 cm) cuts in between the edge of the uncut side and the 2 slits on the cut sides.
  • Make 2 vertical 1-inch (2 cm) cuts under the top slit and above the bottom slit.
  • Repeat this pattern until you have 6 rows with 3 cuts and 5 rows with slits and 2 cuts. Set aside
  • Preheat oven to 400˚F (200˚C).
  • Take another square place one of the apple halves in the center, peeled side facing up. Brush egg wash on each side of the square around the apple.
  • Combine the butter, cinnamon and sugar in a bowl. Brush over the apple until it is completely coated.
  • Take the other cut square of dough and stretch it over the apple, your cut should look like holes in the dough.
  • Pinch the bottom of the dough together until it is sealed.
  • Brush with egg wash and sprinkle with coarse sugar.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.
  • Enjoy!

I almost regret starting them as I get plenty of demand from my family for them. I found this in an old english country side cook book, and its so easy and a hit.

6 medium granny smith apples (green cooking apples )
1 1/2 cups sugar
8 cloves
2 tablespoons butter
3 sheets ready rolled puff pastry
1 egg white
2 tablespoons sugar, for glazing

Steps:

  • Peel and core Apples then chop into small pieces and place with butter in saucepan, add 1 and a half cups sugar then cloves.
  • Heat slowly and gently with lid on so the apples and sugar dont burn or brown. Stir regularly.
  • The apples should be just tender, then leave aside to cool and remove and discard cloves.
  • When apple mix is cool, preheat oven to 200 degrees celsius, cut sheets of pastry into quarters, place a portion of apple mix in middle and make into pastie shapes or triangles if your in a hurry like I do.
  • Place apple pasties onto sprayed baking tray.
  • Brush over with egg white and sprinkle with sugar.
  • Place in oven and cook until golden brown.
  • Serve warm with custard or ice cream, or there even great cold as a travelling snack or for picnics.

1/2 cup sour cream
1/3 cup sugar
1 tablespoon flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 apples
2 prepared piecrusts

Steps:

  • Preheat the oven to 375°F.
  • Separate the egg, placing the egg yolk in a large bowl, reserving the egg white for later use. Add the sour cream, sugar, flour, salt, and cinnamon and stir until combined. Peel and core the apples and dice into 1/2-inch pieces. Add the apples to the bowl and stir until completely coated.
  • Lay the piecrusts on a flat work surface and spoon one-half of the apple mixture in the center of each piecrust, avoiding the edges. Fold the dough over to form a half circle, gently roll up about 3/4 inch of the open edges and press gently to seal. Lightly beat the egg white until broken up, but not frothy and brush on the dough. Bake for 30 to 35 minutes, until golden brown. Cut each pasty in half and serve warm.

425g pack ready-rolled shortcrust pastry
2 Bramley apples , peeled, cored and chopped
2 tbsp light brown sugar
150g punnet blackberries
thick cream , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Dust a work surface with icing sugar, then unroll the pastry and cut out 4 rounds using a small side plate as a template.
  • Combine the apples, sugar and blackberries and put a small pile on each pastry circle. Dampen the edge of the pastry, then fold over to encase the fruit. Pinch and fold the pastry over along one edge to make a pasty shape. Slash each pasty 3 times, lift onto a baking sheet and bake for 20 mins or until puffed and golden. Serve with cream.

Bake a batch of these moreish pasties, filled with cheese, apple and potato. You only need five simple ingredients

300g cold butter
500g plain flour , plus extra for dusting
2 medium potatoes (about 400g), halved and thinly sliced
3 Granny Smith apples , peeled and sliced
350g hard cheese , grated (Lincolnshire Poacher or Cornish cheddar work well)

Steps:

  • Line a baking tray with baking parchment. Dice 250g of the butter and tip into a mixing bowl. Add the flour, 1 tsp salt and 1½ tsp black pepper and rub together with your fingers until the mixture resembles fine breadcrumbs, or use a food processor. Stir in 8 tbsp cold water, then bring the mixture together with your hands to create a firm, smooth dough. Cover and chill for 20 mins.
  • Cut the dough into six equal-sized pieces and roll each portion into a ball. Chill, covered, for a further 15 mins. Meanwhile, tip the potatoes, apples, cheese and some seasoning into a bowl and toss together.
  • Lightly dust a work surface with flour, then roll out one of the dough balls to form a 22cm round. Spoon one-sixth of the potato mix down the centre of the round, then pinch the edges together to make a sealed parcel. Repeat with the remaining dough balls and filling. Transfer the pasties to the lined baking tray and chill for 30 mins.
  • Heat the oven to 220C/200Cfan/gas7. Melt the remaining butter in a small saucepan over a low heat, then generously brush over the pasties. Bake for 20 mins, then turn the heat down to 200C/180C fan/gas 6 and cook for 25-30 mins more, or until golden brown.
