BAKED " APPLE OATMEAL RAISIN COOKIE" OATMEAL
For years I never ate oatmeal due to the "mushy" texture. After seeing a baked oatmeal prepared on FoodNetwork, it inspired me to come up with a few baked oatmeal recipes inspired by some popular baked goods. This oatmeal has a much more firm texture. - Preheat oven to 350°F.
- In large bowl, combine oats, brown sugar, cinnamon, nutmeg and salt.
- In small bowl, whisk together milk, egg and vanilla. Add the milk mixture to the oat mixture and stir until combined.
- Stir in the apples, raisins and chopped nuts.
- Pour into 4-6 small souffle or brulee dishes or one larger baking dish (such as an 8x8-inch dish). (You may want to lightly spray baking dish with cooking spray.).
- Bake 20-30 minutes (small baking dishes) or 30-40 minutes (large baking dish), or until slightly firm to touch. (Baking time will vary depending on the diameter of your baking dishes.).
- Sprinkle with sugar (optional: use torch to create a brulee topping). Garnish with toasted pecans.

- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flours, baking soda, nutmeg, salt, and pinch of cloves. In a large bowl, using an electric mixer, beat butter and brown sugar on high, scraping down bowl as needed, until light and fluffy, about 4 minutes. Beat in eggs, one at a time, scraping down bowl after each addition. With mixer on low, beat in half the flour mixture, then milk and remaining flour mixture. Beat just until combined.
- With a rubber spatula, fold apples and raisins into dough. Drop dough in 2-tablespoonful mounds, 2 inches apart, onto two baking sheets. Bake until cookies are firm around edges, about 14 minutes, rotating sheets halfway through. Let cool completely on wire racks.
- In a small bowl, whisk together confectioners' sugar and 1 tablespoon water. Transfer to a zip-top bag. Snip a very small hole in one corner and drizzle glaze over cookies.

- In a medium bowl, combine the raisins, chopped apple pieces, apple juice, and lemon juice. Set aside for 20 minutes.
- In a large mixing bowl, whisk together both flours, oats, baking soda, baking powder, salt, and cinnamon. Set aside.

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
- In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
- Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
