These apple yogurt muffins are studded with apples and packed with cinnamon flavor. They're soft, fluffy and extra moist thanks to the Greek yogurt. Perfect for meal prep!

1 ¾ cups whole wheat pastry flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon sea salt
1 ½ teaspoon cinnamon
2 large eggs (at room temperature)
1 cup plain full fat Greek yogurt (at room temperature)
¼ cup coconut oil (melted)
½ cup maple syrup (at room temperature)
¼ cup unsweetened almond milk (at room temperature)
1 teaspoon vanilla extract
1 heaping cup chopped apples (plus more for topping)

Steps:

  • Preheat oven to 400°F. Place 12 paper or silicone liners in your muffin tin.
  • In a large bowl, combine flour, baking powder, baking soda, salt and cinnamon.
  • In a medium mixing bowl, whisk together eggs, Greek yogurt, oil, maple syrup, almond milk and vanilla extract.
  • Pour the liquid mixture into the bowl with the dry ingredients and stir until mixture is just combined. Don't over-mix! It's okay if there are a few streaks of flour left.
  • Fold in apple chunks.
  • Evenly divide the batter into the prepared muffin tins.
  • Bake for 16-18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
  • Let muffins cool in the tin for a few minutes, then remove so they don't continue to cook and let cool completely on a wire rack.
  • Store at room temperature for 3-4 days or in the refrigerator for up to 1 week in an airtight container. You can also freeze for up to 3 months in a freezer-safe container.

Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. Recipe yields 12 muffins.

1 3/4 cups white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup grated apple
1 cup apple diced into 1/4" cubes
1/3 cup melted coconut oil or extra-virgin olive oil
1/2 cup maple syrup or honey*
2 eggs, preferably at room temperature
1/2 cup plain Greek yogurt (I used full-fat but any variety should do)
1/2 cup applesauce
1 teaspoon vanilla extract
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Steps:

  • Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn't require any grease).
  • In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated apple (if it is dripping wet, gently squeeze it over the sink to release some extra moisture) and chopped apple. Stir to combine.
  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 16 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  • Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months.

1/2 lemon, zest and juice of
2 cups all-purpose flour
3 teaspoons baking powder
2 large eggs, beaten
3/4 cup sugar
1/2 cup quick-cooking oats (plus a little extra for sprinkling on top)
1/2 cup olive oil
1/2 cup Greek yogurt
1/4 cup raisins (optional) or 1/4 cup dried currant (optional)
1 dash salt
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon clove

Steps:

  • Preheat oven to 180c/350°F Line large size muffin tin with muffin liners.
  • When you chop the apples, combine them immediately with the grated zest and juice of 1/2 lemon to keep them from turning brown.
  • Add all the remaining ingredients. Mix to just combine. Spoon into muffin liner (the chunky batter should reach the top of the liner). Sprinkle tops with some oatmeal.
  • Bake for 30-35 minutes, or until toothpick inserted comes out clean.

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. In a small bowl, combine apple juice, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) Stir in chopped apples.
  • Fill cups 2/3 full. Bake for 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1 small tart apple, peeled and chopped
1/3 cup raisins, optional
TOPPING:

1 tablespoon cold butter

  • In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. Combine the yogurt, egg, oil and milk; stir into dry ingredients just until moistened.
