Moist Apple Muffins image

You don't have to settle for fast food when you're on the go this holiday season. These sweet apple muffins are a great snack anytime, and they make a tasty take-along for the busy days leading up to Christmas. -Jeanne Sherry, Putnam Valley, New York

Number Of Ingredients 15

1/2 cup butter, softened
1-3/4 cups packed brown sugar
2 eggs
1-1/3 cups buttermilk
2-2/3 cups all-purpose flour
1-3/4 teaspoons ground cinnamon
1 teaspoon baking soda
1/8 teaspoon salt
2 cups chopped peeled apples
1 medium apple, peeled and cut into 24 slices
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in the buttermilk. Combine the flour, cinnamon, baking soda and salt; add to butter mixture just until moistened. Fold in chopped apples. , Fill paper-lined muffin cups three-fourths full. Place sliced apples over batter. For topping, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over tops., Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

2 cups all-purpose flour
2 teaspoons baking powder
¼ cup white sugar
½ teaspoon ground cinnamon
½ teaspoon salt
1 cup milk
1 egg, beaten
¼ cup butter, melted
1 cup apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

1/4 cup unsweetened applesauce
1/4 cup honey (or to taste)
1 cup nut flour
2 eggs
1/4 teaspoon baking soda
1 teaspoon vanilla
1 large peeled apple, diced (I use red delicious)
cinnamon

Steps:

  • 1. Preheat oven to 325 degrees F.
  • 2. Mix melted butter and applesauce.
  • 3. Mix in remaining ingredients except apple and cinnamon.
  • 4. Stir in diced apple.
  • 5. Pour batter into lined muffin pan and sprinkle cinnamon on top.
  • 6. Bake for 23 minutes, or until tops are light brown.

2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cups flour
1 egg, lightly beaten
1/4 cup melted butter
1/2 cup buttermilk
2 Granny Smith apples, peeled and cored and cut into 1/4inch dice (about 1 1/2 cups)
4 ounces (1 cup) pecans, chopped
1 to 2 tablespoons regular sugar

Steps:

  • Preheat the oven to 400 degrees. Line 12 muffin tins (2 1/2 inch round) with paper liners. Sift sugar, baking powder, baking soda, salt and cinnamon together. Add flour and sift again. In a bowl combine egg, melted butter and buttermilk. Stir the wet ingredients into dry ones and mix just to combine don't overbeat. Add apples and pecans. Spoon batter into muffin tins to the top. Sprinkle with granulated sugar and bake 25 minutes. Transfer to a rack to cool.

1 tablespoon all-purpose flour
⅛ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
  • In a medium bowl, mix flour, baking powder, baking soda and salt.
  • In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
  • In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
  • Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
