Transfer the popular snack combo of apple slices and cheddar cheese into pie form via this double-crusted pie.

Pastry for a Double-Crust Pie
0.5 cup sugar
2 tablespoon all-purpose flour
0.5 teaspoon ground cinnamon
0.25 teaspoon salt
5 cup thinly sliced peeled apples (such as Jonathan or Macintosh) (5 medium)
1.5 cup shredded white cheddar cheese (6 ounces)
0.25 cup maple syrup
1 tablespoon whipping cream
2 tablespoon maple syrup
0.25 cup toasted chopped pecans (optional)
2.5 cup all-purpose flour
1 teaspoon salt
0.5 cup shortening
0.25 cup butter, cut up, or shortening
0.5 cup ice water

Steps:

  • Preheat oven to 375 degrees F. Prepare Pastry for a Double-Crust Pie. On a lightly floured surface, slightly flatten one portion of dough. Roll dough from center to edge into a 12-inch circle. Wrap pastry circle around rolling pin; unroll into a 9-inch pie pan or plate. Ease pastry into pie pan without stretching it; set aside.
  • For filling, in a large bowl, stir together sugar, flour, cinnamon, and salt. Add apples; toss gently to coat. Add cheese and the 1/4 cup maple syrup; toss gently to combine. Transfer filling to pastry-lined pie pan. Drizzle with cream.
  • Trim pastry even with edge of pie pan. Roll the remaining dough into a 12-inch circle. Cut slits in pastry to allow steam to escape. Place pastry circle on filling; trim pastry to 1/2 inch beyond edge of pie pan. Fold top pastry edge under bottom pastry. Crimp edge as desired. Cover edge of pie with foil to prevent overbrowning.
  • Bake in the preheated oven for 40 minutes. Remove foil. Bake about 20 minutes more or until apples are tender and pastry is golden brown. Transfer to a wire rack. Brush with the 2 tablespoons maple syrup. If desired, sprinkle with pecans. Cool for 1 hour. Serve slightly warm. Makes 8 servings. Pastry for a Double-Crust Pie
  • In a large bowl stir together flour and salt. Using a pastry blender, cut in shortening and butter until pieces are pea size. Sprinkle 1 tablespoon of the ice water over part of the flour mixture; toss gently with a fork. Push moistened pastry to the side of the bowl. Repeat moistening flour mixture, using 1 tablespoon of the ice water at a time, until all of the flour mixture is moistened. Gather flour mixture into a ball, kneading gently until it holds together. Divide pastry in half; form halves into balls.

  • In a large bowl combine sugar, flour, cinnamon, and salt. Add apples; toss gently to coat. Add cheese and the 1/4 cup maple syrup; toss gently to combine.
  • Transfer filling to pastry-lined 9" pie pan. Drizzle with the whipping cream. Add the top crust and crimp edges. Cover edges with foil to prevent over-browning.
  • Bake in a pre-heated 375-degree oven for 40 minutes. Remove foil. Bake 20 minutes longer or until apples are tender and pastry is golden brown.
  • Transfer pie to a wire rack. Brush top with the 2 Tbsp. maple syrup and sprinkle with pecans. Cool for 1 hour. Serve slightly warm

Butter, for greasing the pie dish
5 medium Granny Smith apples, peeled, cored and quartered (about 2 1/2 pounds)
1 cup coarsely grated sharp white Cheddar (4 ounces)
2/3 cup dark brown sugar
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon kosher salt
Two 9-inch-diameter, unroll-and-bake refrigerated pie crusts
1 egg white, beaten until frothy

Steps:

  • Position an oven rack on the bottom third of the oven and preheat to 400 degrees F. Butter the sides and bottom of a 9-inch-diameter glass or ceramic pie dish.
  • Cut the apple quarters into 3 wedges. Mix the apples, cheese, sugar, butter, flour, cinnamon, nutmeg and salt in a medium bowl.
  • Unroll one crust and place in the buttered pie dish. Brush the inside of the crust with some of the egg white to coat. Pour the apple filling into the crust. Unroll the second crust and place on top of the filling. Pinch the edge of the top crust and the edge of the bottom crust together to seal. Fold the double edge under and crimp, making a decorative edge. Brush the top of the pie with more of the egg white. Cut several slits in the top crust to allow steam to escape.
  • Bake the pie until the crust is deep golden and the filling is bubbling through the slits, about 1 hour. Cover the edges of the pie with foil if the crust browns too quickly. Cool the pie for about 20 minutes before serving.

Crust:
1 1/2 cups (200g) all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons sugar
1 1/2 sticks (170 g) unsalted butter
1/4 cup plus 2 tablespoons (85 ml) sour cream (full fat, not light)
2 tablespoons finely grated sharp cheddar cheese
Filling:
4 good cooking apples, such as McIntosh, Courtland, Jonagold, Pippin, Golden Delicious, Jonathan, Fuji, or a mixture of various cooking apples (NOT red delicious)
1/2 teaspoon lemon zest
1 half of a lemon, or the juice of half a lemon (to acidulate the water for holding the apples while you peel them to keep them from discoloring)
1 tablespoon maple syrup
2 teaspoons minute tapioca or instant tapioca for thickener (can substitute corn starch)
1 teaspoon ground cinnamon
1/2 cup lightly packed grated cheddar cheese
Finishing:
1 egg for egg wash
Coarse sugar for sprinkling on the crust

Steps:

  • Drain apple slices, sprinkle with maple syrup, cinnamon, minute tapioca, zest: Drain the apple slices. Place the apple slices back in the now empty bowl. Sprinkle with maple syrup and cinnamon and gently toss so that the apple slices are lightly coated with both. Add the minute tapioca and the lemon zest. Gently toss again.
  • Arrange apple slices on the dough: Starting from 2 inches from the perimeter of the pastry round, arrange the apple slices, side by side, in a circular pattern, filling the circle. It's okay if some of the apple slices overlap a little.

We used self raising flour, which has both leavening and salt in it, as a shortcut ingredient to make these savory and fluffy waffles. A small bit of sugar in the batter doesn't add detectable sweetness, but keeps the waffles moist and helps the exterior crisp up when cooking.

1 stick unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 1/2 cups milk
2 large eggs
2 cups self-rising flour
1/4 cup confectioners' sugar
1 Gala apple, finely chopped
1 cup grated sharp cheddar cheese
1/3 cup pure maple syrup
2 teaspoons grainy mustard
1 5-ounce package mixed baby greens
1 tablespoon apple cider vinegar
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.
  • Heat a waffle iron according to the manufacturer's instructions. Working in batches, lightly butter the waffle iron, then ladle in some of the batter. Close the iron and cook until the waffles are browned and crisp, 5 to 7 minutes. Remove to a baking sheet and keep warm in the oven while you cook the remaining waffles.
  • Meanwhile, mix the maple syrup and mustard together in a small bowl. Toss the greens with the vinegar, olive oil and a pinch each of salt and pepper in a large bowl. Divide the waffles among plates, along with the salad. Drizzle the maple mixture over the waffles or serve on the side for dipping.

2 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon granulated sugar
1/2 teaspoon kosher salt
5 ounces grated Cheddar, plus 6 ounces for the top
14 tablespoons chilled unsalted butter, cubed
2 Granny Smith apples, peeled, cored and cut into wedges
2 Red Delicious apples, peeled, cored and cut into wedges
1 cup brown sugar
1/2 cup all-purpose flour
3 tablespoons unsalted butter, melted
2 shots (3 ounces) bourbon
1 shot (1.5 ounces) maple syrup
2 teaspoons lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon cracked black pepper
1/4 teaspoon kosher salt
Pinch ground cloves
Pinch ground nutmeg
1 cup heavy cream
1 tablespoon maple syrup
1 teaspoon granulated sugar

Steps:

  • For the crust: Pulse the flour, granulated sugar and salt together in a food processor to combine. Add the 5 ounces Cheddar and pulse, then add the butter and pulse until it creates a coarse meal with some larger butter lumps. Add water a tablespoon at a time (no more than 1/2 cup) while processing just until the dough comes together. Turn out onto a piece of plastic wrap and form into a disc. Refrigerate while making the filling.
  • For the filling: Preheat the oven to 450 degrees F.
  • Stir together the apples, brown sugar, flour, butter, bourbon, maple syrup, lemon juice, cinnamon, pepper, salt, cloves and nutmeg in a large bowl.
  • Roll out the dough, using additional flour as needed, into a circle large enough to drape into a 10-inch pie plate or cast-iron skillet. Cover with the filling. Bake for 10 to 15 minutes, then lower oven to 350 degrees F and bake for 30 minutes more. Sprinkle on the remaining 6 ounces Cheddar to the top of the pie and bake until browned and melted, 15 minutes. Let cool until cheese hardens.
  • For the whipped cream: Beat together the cream, syrup and granulated sugar until firm.
  • Serve the pie with the whipped cream.
