Nonstick cooking spray, for the pan
1/3 cup light brown sugar
2 teaspoons ground cinnamon
2 apples (any kind), peeled and chopped
2/3 cup plus 2 tablespoons granulated sugar
1/2 cup (1 stick) butter, softened
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup plus 1 to 3 tablespoons milk or almond milk
1/2 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray or line with foil and spray with nonstick spray, for easy removal.
  • Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.
  • Beat butter and remaining 2/3 cup granulated sugar together in another medium bowl with an electric mixer until smooth and creamy, about 5 minutes. Beat in eggs, 1 at a time, until blended in; add vanilla extract.
  • Whisk flour and baking powder together in another bowl, then add to creamed butter mixture and beat until blended. Mix 1/2 cup milk into batter until smooth.
  • Pour half the batter into the prepared loaf pan; add half the chopped apple mixture.
  • Sprinkle half of the brown sugar/cinnamon mixture on top of apple layer.
  • Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
  • Lightly pat apples into batter; swirl brown sugar mixture through apples using a knife or spoon.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 1 hour and 10 minutes.
  • Mix powdered sugar with remaining 1 to 3 tablespoons milk for a glaze, depending on preferred thickness.
  • Let the loaf cool for about 15 minutes, then drizzle with glaze.

For this bread that's chock-full of apples, don't stray too far from the McIntosh variety they soften just enough without completely disappearing. For little kids: Let them help mix up the apples. For big kids: Teach them how to peel an apple and sift dry ingredients.

5 small McIntosh apples, peeled and cut into rough 1/4-inch chunks (about 4 cups)
1 1/2 cups sugar
1/2 teaspoon finely grated lemon zest
Cooking spray
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2/3 cup vegetable oil
2 large eggs
1/2 teaspoon pure vanilla extract

Steps:

  • Work the apples, sugar and lemon zest together in a large bowl with your hands until the sugar feels like wet sand. Let the mixture sit, tossing occasionally, for 30 minutes (the sugar will have started to melt but will still be gritty).
  • Meanwhile, preheat the oven to 350 degrees F. Generously coat a 10-by-5-by-3-inch loaf pan with cooking spray. Sift the flour, baking soda, cinnamon, nutmeg and salt together onto a large piece of parchment. Whisk together the oil, eggs and vanilla in a medium bowl.
  • Once the apples are ready, add the flour mixture to them, and fold until combined. Pour in the oil mixture, and fold until just combined (it's OK if there are a few lumps). Pour the batter into the prepared loaf pan. Tap the pan on the counter a few times to settle and even out the batter.
  • Bake the bread until the top is golden brown and bounces back when pressed (if you insert a toothpick into the center, it's OK if there are a few crumbs), 55 to 60 minutes. Let cool in the pan on a cooling rack until cool enough to handle. Invert the bread out of the pan, and serve warm or at room temperature.

3 cups fresh fruit, diced, chopped or sliced

Steps:

  • Preheat oven to 375° and grease 2 loaf pans.
  • Combine the first 5 ingredients in a large bowl.
  • Combine the flour, cinnamon, baking soda and salt in a medium bowl.
  • Add the wet to the dry ingredients and mix well.
  • Fold in the nuts and fruit.
  • Pour into the prepared pans and bake 50-60 minutes.

2 eggs
2 cups white sugar
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups apples, peeled and diced
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cinnamon, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
  • Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. In another bowl, whisk together eggs, oil and vanilla; add to flour mixture, stirring just until moistened (batter will be thick). Fold in apples and walnuts. , Transfer to prepared pans. Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool.Freeze option: Securely wrap cooled loaves in plastic and foil, then freeze. To use, thaw at room temperature.

This is in response to a request on the boards for an Amish fruit bread...this is the closest I found. It comes from an old community cookbook, the proceeds of which went towards the preservation of Hermann, Mo's German Heritage. Note that the fruit must be soaked over night and I haven't added that into the times here.

12 ounces mixed dried fruit
8 ounces dried apples
1 package dry yeast
1/4 cup lukewarm water (115° - 120°)
1 tablespoon sugar
1 1/2 cups lukewarm scalded milk (115° - 120°)
1 1/2 cups flour, unsifted
1/2 cup butter
1 cup sugar
2 eggs, well beaten
1 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup raisins
3/4 cup currants
1 cup nuts, chopped,if desired
7 cups flour, more as needed

Steps:

  • Cover mixed dried fruit and apples with boiling water in saucepan and soak overnight.
  • Next morning, cook until fruit is quite soft, about 15 minutes, then drain well in a colander.
  • Chop or cut up fruit.
  • Soften yeast in lukewarm water, add 1 Tbsp sugar and let stand 10 minutes.
  • Add milk.
  • Add 1 ½ C flour to make a sponge and set aside until bubbles break on top.
  • Cream butter in a large mixing bowl.
  • Add 1 C sugar and cream well.
  • Mix in beaten eggs.
  • Add the sponge, chopped fruits, salt, cinnamon, raisins, currants and nuts.
  • Beat in 3 cups flour.
  • Divide dough into fourths.
  • Take out ¼ of the dough and knead on a floured pastry cloth or board adding enough flour to keep the dough soft but not sticky.
  • Continue doing this 3 more times until all the dough has been worked up, then knead it all together.
  • Lightly oil a clean bowl, take dough and run the top around the inside of the bowl, place it in the bowl, cover and let rise in a warm place until double in bulk.
  • Knead lightly, divide into 4 portions and shape each into a loaf, place in greased loaf pans.
  • Cover and let rise until double.
  • Bake at 400° for 10 minutes, reduce heat to 350° and bake 45 minutes longer or until done.
