APPLE CINNAMON ROLLS

Apple Cinnamon Rolls image

This came from the Yankton, South Dakota Press and Dakotan newspaper. My DD does not like cinnamon rolls (my child?) so I thought this might be more like a caramel apple and less like cinnamon. It is very caramel-like and the apples are soft and fragrant. Worth the time to make the filling. If you have a kitchen aid mixer, follow your manufacturer directions to make the dough with the mixer!

Categories     Bread

Time 1h30m

Number Of Ingredients 22

6 to 7 cups all-purpose flour
1/4 cup granulated sugar
2 (4-1/2 tsp.) envelopes Fleischmann's® RapidRise® Yeast
2 teaspoons kosher salt
2 cups milk
1/4 cup butter, room temperature
2 eggs
1 cup light brown sugar
1 cup granulated sugar
1/2 cup all-purpose flour
2 tablespoon ground cinnamon
1 cup butter, melted
3 cups finely chopped and peeled Granny Smith apples
1 cup all-purpose flour
3/4 cup light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup butter, room temperature
2 cups powdered sugar
2 tablespoons butter, room temperature
1/2 teaspoon vanilla extract
3-4 tablespoons heavy cream

Steps:

  • Combine 3 cups flour, sugar, undissolved yeast, and salt into the bowl of your stand mixer fitted with the paddle attachment.
  • In a medium microwave safe bowl, heat the milk and butter for 2 to 3 minutes until it's very warm (120° to 130°F).
  • Add the milk mixture to the flour mixture and mix for 2 minutes on medium speed, scraping the sides of the bowl as necessary. Add the eggs and 2 more cups of flour and mix for 2 more minutes at medium speed. Stir in enough remaining flour to make a soft dough, you might not need it all. Replace the paddle attachment with the dough hook and mix on medium speed for 5 to 8 minutes until smooth. Alternately you can knead the dough on a lightly floured surface using your hands for 5 to 8 minutes.
  • Cover and let rest 10 minutes.
  • Roll each half of the rested dough into a 12×10 rectangle on a lightly floured work surface.
  • While the dough is resting prepare your filling. In a large bowl combine sugars, flour, and cinnamon and stir. Add in the melted butter and mix until combined.
  • Divide the mixture in half and spread evenly onto each rolled out dough.
  • Sprinkle the diced apples evenly on top of each. Roll up the dough tightly from the long side and then slice the dough into 1 1/2- inch portions.
  • Coat 2, 9×13-inch baking dishes with nonstick spray and place the rolls into the pans. Cover and let rise for 30 minutes, or until doubled in size.
  • In a medium bowl mix together the flour, sugar, cinnamon, salt, and butter.
  • Using your hands combine the mixture until crumbs form when squeezed together.
  • Sprinkle all the rolls evenly with the crumb topping.
  • In medium bowl mix together the powdered sugar, butter and vanilla. Whisk in the cream until smooth.
  • Drizzle the icing on the slightly cooled rolls.
  • Serve warm or at room temperature

CINNAMON CRUMBLE BUNS

Cinnamon Crumble Buns image

Provided by Food Network

Categories     dessert

Time 2h15m

Yield 9 to 12 buns

Number Of Ingredients 23

5 cups bread flour, plus up to 1/2 cup more if needed
3/4 cup plain instant mashed potato flakes, pulsed fine in a food processor
1/4 cup granulated sugar
1 tablespoon ground cinnamon
1 tablespoon instant yeast
2 teaspoons fine sea salt
1 3/4 cups whole milk, at room temperature
1 tablespoon vanilla extract
2 large eggs, at room temperature
4 tablespoons unsalted butter, cut into pieces, at room temperature, plus more for greasing the baking pan
Nonstick cooking spray
1 cup granulated sugar
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, melted and cooled to room temperature
Crumble, frozen, recipe follows
2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
5 cups all-purpose flour
1 pound unsalted butter, melted
1 cup brown sugar
1 cup granulated sugar
1/2 teaspoon salt

Steps:

  • For the dough: Whisk together the bread flour, mashed potato flakes, granulated sugar, cinnamon, yeast and salt in a large bowl. In the bowl of a stand mixer fitted with the dough hook, add the milk, vanilla and eggs; whisk to break up the eggs. Add the dry ingredients to the wet ingredients and mix until the dough just comes together.
  • Add the butter, one piece at a time, mixing until incorporated. Continue to mix until the dough comes together in a ball. If the dough is sticking a lot to the sides of the bowl, add a little more flour, 1 tablespoon at a time, until most of the dough no longer sticks. (A little sticking to the bottom of the bowl, beneath the hook, is fine. Adding too much flour will make the buns dry, so use a light hand.)
  • Transfer the dough to a lightly floured work surface and knead by hand until shiny and smooth, 5 to 10 minutes. (The dough should be very soft but not wet and sticky; a little tacky is OK.) Place the dough in a large bowl sprayed with nonstick spray; lightly spray the top of the dough. Cover with plastic wrap and let rise in a warm corner of your kitchen until doubled in size, 45 to 60 minutes.
  • For the filling: Stir together the granulated sugar and cinnamon in a small bowl.
  • Roll the dough out into a long rectangle, about 10-by-21 inches. Brush with the melted butter, then sprinkle with the cinnamon sugar, followed by 4 cups of frozen Crumble. Starting from a long side, roll the dough into a jelly roll.
  • Cut the log into 2-inch pieces and place, cut-side down, in a buttered 10-inch square baking pan. Sprinkle 1 cup of Crumble over the top. Cover with plastic wrap and let rise until puffy and nearly doubled in volume, 30 to 45 minutes
  • Preheat the oven to 350 degrees F. Bake the buns, loosely wrapped in foil, for 15 minutes. Remove the foil and bake until golden brown on top, about 5 more minutes.
  • For the glaze: Meanwhile, combine the confectioners' sugar, milk and vanilla in a small bowl and stir until smooth.
  • While the buns are still warm (but not hot), drizzle with the glaze. Serve warm.
  • Combine the all-purpose flour, melted butter, brown sugar, granulated sugar and salt in a large bowl. Stir together and then work with a spoon or your fingers until the butter is absorbed and the mixture forms clumps. Place in a resealable plastic bag and freeze until needed.

JUMBO APPLE CINNAMON ROLLS

Jumbo Apple Cinnamon Rolls image

Something I always wanted to try to make was cinnamon rolls. I'm always turned off by the ones made at various places because they are either swimming in some sort of buttery cinnamon goo, or they have icing poured all over them. That's just too much sweet for me.. So in my hunt to find a decent recipe- I ended up coming up with this.. The apple parts were add in honor of my husband..

Time 5h15m

Yield 12 rolls, 12 serving(s)

Number Of Ingredients 19

1/4 cup warm water (105 -110 F)
1/4 teaspoon powdered sugar
1 (1/4 ounce) package dry active yeast
3/4 cup skim milk
3 tablespoons butter (unsalted)
4 tablespoons applesauce
1/4 cup nonfat sour cream
2 eggs
4 1/2 cups flour
1/4 cup sugar
2 tablespoons butter (unsalted)
1/3 cup applesauce
2 large granny smith apples
3 tablespoons brown sugar
1 tablespoon ground cinnamon
1 1/2 teaspoons white sugar
1/4 cup walnuts (or more, up to 1/2 cup)
1/2 teaspoon ground cinnamon
2 tablespoons brown sugar

Steps:

  • Mix together water, powder sugar and yeast - set aside for 10 minutes. It will become foamy.
  • In sauce pan over low heat - mix milk, sour cream, butter, sugar and applesauce. Do not boil. Remove from heat when mixture is warm.
  • Stir in yeast mixture.
  • Beat in the eggs.
  • Add flour gradually; 1 cup at a time- keep batter smooth.
  • Knead the dough.
  • Place dough in a large bowl and set inside a cold oven for 1 1/2 hours.
  • While you wait, Create your filling. Starting by Washing, peeling and dicing up your apples.
  • In sauce pan on low-med heat - cook together butter, applesauce and diced apples, sugars and cinnamon.
  • To prevent burning, stir frequently- mixture is ready when apple pieces are fork tender.
  • Now pour contents into food processor or blender, process until apple pieces are finely chopped. Transfer mixture to a bowl and let it sit until dough is ready.
  • Now take out your risen dough, flour your work surface well - sprinkle with a bit of ground cinnamon.
  • Roll out your dough into a large rectangle.
  • Spread over the dough, but remember to leave at least a 1 inch margin along one of the longer sides of your rectangle.
  • Now starting at the opposite side, carefully begin to roll your dough.
  • Use a little bit of water to seal the ending side.
  • Begin to evenly cut your dough into 12 slices. (I find that using a piece of string to do this task prevents your roll from getting smashed).
  • Place slices swirled side facing up in greased and floured cake pan.
  • Again let dough rest in cool oven 1 hour or cover with plastic wrap and refrigerate over night (makes for a nice breakfast treat).
  • Before baking, chop together the topping ingredients in a food processor. Sprinkle this over the rolls. (This can also be done before refrigerating).
  • Bake at 350°F about 45 or until done - edges should be a golden brown.
  • ENJOY!

  • In a medium bowl, combine flour, brown sugar, baking powder, cinnamon, and salt using a fork.
  • Add melted butter and mix until clumps form. Cover and chill in the refrigerator until ready to use.
  • In a medium heat-proof bowl, or a glass liquid measuring cup, heat the milk in the microwave until warm, about 30-60 seconds. It should be around 110-115˚F. If you don't have a thermometer, test it out by sticking your finger inside. The milk should be warm enough for you to hold your finger inside comfortably. It should not be too hot, if it is, let it sit for 5 minutes to cool.
  • Sprinkle the yeast and 1/2 teaspoon of sugar into the warmed milk, do not stir. Allow to sit for about 5-10 minutes or until frothy. If yeast doesn't foam up, your yeast is either dead or the milk is too hot, which means you have to start over.
