APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

SHEILA'S BEST APPLE CRISP (NO OATS)

Sheila's Best Apple Crisp (No Oats) image

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties.

Provided by Mrs Goodall

Categories     Dessert

Time 1h30m

Yield 1 crisp, 6 serving(s)

Number Of Ingredients 9

2 lbs cooking apples
1/4 cup water
1/2 cup sugar
1/2 cup light brown sugar (firmly packed)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt (you can be generous unless you decide to substitute salted butter)
3/4 cup flour
1/2 cup unsalted butter

Steps:

  • Cut cold butter into small cubes. Place in freezer to chill further.
  • PREPARE APPLES.
  • Peel apples.
  • Cut an apple into quarters. Cut out core. Cut each apple slice one more time so that there are 8 slices.
  • Cube the apple by cutting each slice the "short" way 2 or 3 times. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).
  • Cube the remaining apples.
  • Put apples into an 8 1/2 x 12 inch au gratin casserole dish, or an equivalent baking dish (it's pretty forgiving).
  • Pour water over apples.
  • PREPARE TOPPING:.
  • In the food processor put the sugar, nutmeg, cinnamon, salt and flour. Pulse until combined.
  • Remove butter from freezer and put into food processor.
  • Pulse to blend. Topping should be smaller than peas but not as fine as cornmeal.
  • Add 3/4 cups chopped pecans pulse too mix.
  • Sprinkle topping over apples evenly.
  • Cover dish with foil.
  • Bake at 350 for 30 minutes.
  • Uncover.
  • Bake for 30 more minutes.
  • Cool before serving.

APPLE CRISP

Apple Crisp image

Provided by Abby Dodge

Categories     Dessert     Bake     Thanksgiving     Apple     Fall     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 to 8 servings

Number Of Ingredients 12

For the crisp topping:
1 cup all-purpose flour
2/3 cup packed dark brown sugar
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces and chilled
For the apple filling:
2 pounds firm, sweet apples (4 to 5 medium-large apples)
Up to 1/4 cup water
For serving (optional):
Vanilla ice cream or heavy cream
Equipment: 8-inch-square baking dish, preferably ceramic, glass, enamel-coated cast-iron, or stainless steel (avoid aluminum or uncoated cast-iron)

Steps:

  • Make the crisp topping:
  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the butter pieces and use your fingers to rub the mixture together until the butter is incorporated and the mixture resembles coarse crumbs. Cover with plastic wrap and place in the refrigerator to chill while you prepare the apple filling.
  • Make the apple filling:
  • Position a rack in the center of the oven and preheat to 375°F.
  • Peel the apples and cut them in half lengthwise. Scoop out the cores and discard. Cut the apple halves lengthwise into 1/2- to 3/4-inch-thick slices-there should be about 6 cups total. Transfer the apple slices to an ungreased 8-inch-square baking dish and spread them out evenly. Drizzle up to 1/4 cup of water over the apples-use less water if the apples are particularly juicy.
  • Scatter the crisp topping evenly over the fruit without pressing down on it. Bake until the topping is browned, the apples are tender when pierced with a knife, and the juices are bubbling, about 45 to 50 minutes. Transfer to a wire rack to cool for 10 minutes. Serve warm, with or without a scoop of vanilla ice cream or a drizzle of heavy cream. DO AHEAD: Apple crisp can be baked, cooled completely, covered, and kept at room temperature for 1 day. Reheat, uncovered, in a warm oven until heated through.

EASY APPLE CRISP WITH OATS

Easy Apple Crisp with Oats image

This is a very simple apple crisp. Like most baked apple recipes, you'll want to use flavorful and firm apples - Granny Smith are our go-to. It's also nice to combine two varieties. In our photos, we used two baking-friendly apples- Granny Smith and Braeburn. You could even add a handful of blackberries, raisins or cranberries. We also found that by leaving the apples unpeeled, the texture and flavor is better - especially after such a long bake time. Serve warm or serve our favorite way, which is cold - sounds a little strange, we know. After a night in the fridge, all the flavors meld and mingle, giving it lots of extra flavor the next day.

Categories     Dessert

Time 1h30m

Yield Makes 8 servings

Number Of Ingredients 10

6 medium baking apples, such as Granny Smith (2 1/2 to 3 pounds)
1 orange, zested and juiced
1/4 to 1/2 cup (50 to 100 g) sugar, depending on tartness of apples
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup (100 g) all-purpose flour
3/4 cup (65 g) old-fashioned rolled oats
1/2 cup (100 g) sugar, option: combine 1/4 cup brown sugar + 1/4 cup granulated sugar
1/2 cup (115 g) butter, melted (1 stick)
1/8 teaspoon kosher salt

Steps:

  • Heat oven to 350 degrees F. Butter a 9-inch square (or 2-quart) baking dish.
  • Core apples then cut into 3/4-inch pieces. Add apples to a large bowl with orange zest, orange juice, sugar, cinnamon and nutmeg. Stir then add to baking dish.
  • Combine flour, oats, sugar and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly. Sprinkle over apple filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)
  • Bake 1 hour to 1 hour and 30 minutes or until juices are thickened, the apples are tender and the topping has turned light golden brown. If the topping starts to become too brown, cover with aluminum foil and continue to bake until the apples are done.

HOW TO MAKE THE BEST APPLE CRISP RECIPE

How to Make The BEST Apple Crisp Recipe image

This easy apple crisp recipe with it's brown sugar and oatmeal crumble streusel will take you right back to the best days of childhood.

Provided by Heidi

Categories     Dessert

Time 1h30m

Number Of Ingredients 11

6 cups Granny Smith apples (green apples) (, peeled, cored, and cut into 1/4" slices (about 9-10 green apples))
1 cup sugar
1 1/2 tablespoons all-purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon kosher salt
1 1/2 cups old-fashioned oats
1 1/2 cups all-purpose flour
1 1/2 cups brown sugar
1 teaspoon baking powder
1 cup melted butter

Steps:

  • Preheat the oven to 350°F.
  • In a large mixing bowl, toss the sliced apples with the sugar, 1 1/2 tablespoon flour, salt cinnamon, and nutmeg, and set aside for the sugar to soften the apples and macerate, creating a light syrup. In a smaller mixing bowl, toss the oats, 1 1/2 cups flour, brown sugar, and baking powder together, then use your fingers to mix in the melted butter, gently making small clumps where you can.
  • Layer the sugared apples and their juice in a 9 X 13 baking dish and sprinkle evenly with the oatmeal mixture, but don't pack it tightly. Bake uncovered for 50-60 minutes until the apples are soft and tender and the sauce has thickened and is bubbly. If the crisp seems to be browning too much, cover with foil for the remaining cooking time.
  • Let the apple crisp cool for 20-30 minutes before serving for the caramel sauce to thicken. Divide in bowls and top with vanilla ice cream or whip cream, and serve.
