APPLE CRISP
I love the crumb topping on this apple crisp. My daughter has been making this for 12 years and it comes out perfect every time. A friend gave me the recipe which originally called for baking apples but I changed it to the canned apple pie filling so a child could make it without having to use a sharp knife. The crisp can be made with any fruit pie filling.

APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

Steps:
- Make the crisp topping:
- In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the butter pieces and use your fingers to rub the mixture together until the butter is incorporated and the mixture resembles coarse crumbs. Cover with plastic wrap and place in the refrigerator to chill while you prepare the apple filling.
- Make the apple filling:
- Position a rack in the center of the oven and preheat to 375°F.
- Peel the apples and cut them in half lengthwise. Scoop out the cores and discard. Cut the apple halves lengthwise into 1/2- to 3/4-inch-thick slices-there should be about 6 cups total. Transfer the apple slices to an ungreased 8-inch-square baking dish and spread them out evenly. Drizzle up to 1/4 cup of water over the apples-use less water if the apples are particularly juicy.
- Scatter the crisp topping evenly over the fruit without pressing down on it. Bake until the topping is browned, the apples are tender when pierced with a knife, and the juices are bubbling, about 45 to 50 minutes. Transfer to a wire rack to cool for 10 minutes. Serve warm, with or without a scoop of vanilla ice cream or a drizzle of heavy cream. DO AHEAD: Apple crisp can be baked, cooled completely, covered, and kept at room temperature for 1 day. Reheat, uncovered, in a warm oven until heated through.

Steps:
- For the filling: Peel and core the apples, and cut them into 1/2-inch-thick slices. Toss them with the granulated sugar and lemon juice. Melt the butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but still hold their shape, 15 to 18 minutes. Add the cream, flour, cinnamon and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, and let the filling cool completely. Transfer it to a 9-by-13-inch baking dish.
- For the topping: Mix the flour, oats, walnuts, granulated sugar, butter and salt together in a medium bowl, using your fingers to work the butter into the flour, until the mixture comes together and holds its shape when squeezed.
- Drop small clumps of the topping over the filling, and wrap the baking dish well with plastic wrap. Label and date, and freeze for up to 2 weeks.
- To serve: Position an oven rack in the top third of the oven, and preheat to 350 degrees F. Unwrap the crisp, and bake, frozen and uncovered, until the filling is hot and bubbly and the top is golden brown, 50 minutes to 1 hour. Dust the crisp with confectioners' sugar, and serve warm with scoops of vanilla ice cream if you like.

Steps:
- Preheat the oven to 350°F.
- In a large mixing bowl, toss the sliced apples with the sugar, 1 1/2 tablespoon flour, salt cinnamon, and nutmeg, and set aside for the sugar to soften the apples and macerate, creating a light syrup. In a smaller mixing bowl, toss the oats, 1 1/2 cups flour, brown sugar, and baking powder together, then use your fingers to mix in the melted butter, gently making small clumps where you can.
- Layer the sugared apples and their juice in a 9 X 13 baking dish and sprinkle evenly with the oatmeal mixture, but don't pack it tightly. Bake uncovered for 50-60 minutes until the apples are soft and tender and the sauce has thickened and is bubbly. If the crisp seems to be browning too much, cover with foil for the remaining cooking time.
- Let the apple crisp cool for 20-30 minutes before serving for the caramel sauce to thicken. Divide in bowls and top with vanilla ice cream or whip cream, and serve.

HOMEMADE APPLE CRISP OR APPLE CRUMBLE
This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate.

Steps:
- Preheat the oven to 350 degrees F.
- Butter a 9 by 13 by 2-inch baking dish.
- Zest the orange and the lemon and squeeze the juices from both.
- Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
- To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas.
- Scatter evenly over the apples and cut the 4 table spoons of butter into slices. Place the slices all over the top of the topping. If you skip this step, you may find that you have dry spots in the topping.
- Place the crisp in its baking dish on a sheet pan to catch anything that may spill over and bake for 1 hour until the top is brown and the apples are bubbly.
- Allow to rest for 15 minutes before serving.
- COOKS NOTES: This can be made the day before. To store, let cool to room temperature, lightly place a paper towel on top of the crisp to absorb condensation. Cover tightly with foil, plastic wrap, or a lid. To reheat, place leftovers in the oven at 350 degrees for 15 minutes. Or, microwave single servings for 30-40 seconds at a time until warmed through.

- If you're planning to cook it straight after preparing, preheat the oven to 350F. If you want, however, you can make the crumble beforehand, and cook it later.
- First, you need to prepare the apples. Half fill a large saucepan with water, and peel, core and chop the apples into 1-2 cm chunks.
- Place apples and the cinnamon stick in the saucepan while you’re chopping, to stop them from turning brown.
- Drain all of the water from the saucepan, add another 2 tbsp of water and half of the sugar, and cook on medium heat.

- To make the topping: Combine the flour, oats, brown sugar and almonds in a large bowl until well-combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. (Alternatively, you can cut in the butter with a pastry cutter, or place all of the topping ingredients in a food processor and pulse until just blended. My favorite method is to use my hands, as I believe you get the best crumbly topping that way.)
- To make the filling: Place butter and seeds from the vanilla bean in a medium saucepan, and turn heat on medium. After a couple of minutes the butter will begin to crackle and foam—make sure you whisk consistently during this process! Another minute or two, and you will notice the butter turning a slight brown (caramel) color on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to give off a nutty aroma. Immediately transfer the butter to a bowl to prevent it from burning. Set aside to cool for a few minutes.
