I love the crumb topping on this apple crisp. My daughter has been making this for 12 years and it comes out perfect every time. A friend gave me the recipe which originally called for baking apples but I changed it to the canned apple pie filling so a child could make it without having to use a sharp knife. The crisp can be made with any fruit pie filling.

1 cup flour
1 cup sugar
1/3 cup butter
1 egg
1/2 teaspoon salt
4 cups apple pie filling
1 teaspoon baking powder
1 tablespoon cinnamon

Steps:

  • Mix the flour, sugar, baking powder, salt and egg together to form crumb mixture.
  • Place apple pie filling on bottom of greased square baking dish.
  • Spread crumb mixture over apple pie filling.
  • Melt butter and drizzle over entire mixture.
  • Sprinkle cinnamon over butter.
  • Bake at 350° F for 35-45 minutes.
  • (Serve with vanilla ice cream).

  • Make the crisp topping:
  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the butter pieces and use your fingers to rub the mixture together until the butter is incorporated and the mixture resembles coarse crumbs. Cover with plastic wrap and place in the refrigerator to chill while you prepare the apple filling.
  • Make the apple filling:
  • Position a rack in the center of the oven and preheat to 375°F.

Add the apples, and cook, stirring occasionally, until the firmer apples soften but still hold their shape, 15 to 18 minutes. Add the cream, flour, cinnamon and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, and let the filling cool completely. Transfer it to a 9-by-13-inch baking dish.
  • For the topping: Mix the flour, oats, walnuts, granulated sugar, butter and salt together in a medium bowl, using your fingers to work the butter into the flour, until the mixture comes together and holds its shape when squeezed.
  • Drop small clumps of the topping over the filling, and wrap the baking dish well with plastic wrap. Label and date, and freeze for up to 2 weeks.
  • To serve: Position an oven rack in the top third of the oven, and preheat to 350 degrees F. Unwrap the crisp, and bake, frozen and uncovered, until the filling is hot and bubbly and the top is golden brown, 50 minutes to 1 hour. This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate.

After a couple of minutes the butter will begin to crackle and foam—make sure you whisk consistently during this process! Another minute or two, and you will notice the butter turning a slight brown (caramel) color on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to give off a nutty aroma. Immediately transfer the butter to a bowl to prevent it from burning. Set aside to cool for a few minutes.
