APPLES 'N' CREAM PANCAKE
This cozy recipe is delicious for breakfast or brunch. I usually make a double batch because everyone wants more! With our own orchard, we have plenty of Delicious and Winesap apples-they make this a true midwestern meal. -Ruth Schafer, Defiance, Ohio

- In a small bowl, combine milk, eggs, flour and salt. Beat until smooth. Heat a cast-iron or ovenproof skillet in at 450° oven until hot. Add butter to the skillet; spread over entire bottom. Pour in batter; bake for 10 minutes or until golden brown. , Meanwhile, combine sugar and cream cheese. Blend in sour cream and vanilla. Fill pancake with 3/4 cup cream cheese mixture and top with apples. Spread remaining cream cheese mixture over apples and sprinkle with nuts. Cut into wedges and serve immediately.

APPLE CREAM DREAM SANDWICH
This is my re-creation of a sandwich I used to order often for lunch at a great restaurant in NY State. It may sound like a bizarre combination of ingredients, but it tastes very good and is a nice light luncheon choice. I also like this with cinnamon raisin bread.

- Toast bread lightly first (if desired, I usually do not); Spread bread slices with cream cheese.
- Place apple slices on top of the cream cheese on one of the toast slices.
- Sprinkle raisins, pecans, celery, and cheese to taste on the other piece of toast, pressing a little so these items stick to the cream cheese a bit.
- Put sandwich together, securing with a toothpick.

BEEF LOVER'S DREAM SANDWICH
This is *the* ultimate sandwich for leftover roast beef, I also make this using thinly sliced leftover steak, you may adjust all amounts as desired, the amounts listed should make 6-8 sandwiches depending on the amounts used in the sandwiches --- I suggest to use crusty buns for this, they will hold the sauce better :)

- In a skillet cook the onions in butter and oil with sugar until soft and caramelized (about 10-15 minutes) season with salt and remove with a slotted spoon to a paper towel to drain the fat.
- Add in the mushrooms and fresh garlic to the skillet; cook over medium heat until mushrooms begin to just turn brown; transfer to a bowl.
- To the same skillet add in the beef broth to deglaze the pan; simmer for 5-6 minutes scraping down any browned bits.
- Add in whipping cream, ketchup, Worcestershire sauce and mustard, stir for 1-2 minutes over low heat with a wooden spoon.
- Then add in the cooked mushrooms and beef slices to the sauce in the skillet; stir to combine.
- Divide the steak/sauce mixture on the bread slices.
- Top with Swiss cheese, sprinkle with sauteed onions, then top with remaining bread slices.
- Delicious!
FRUIT AND WHIPPED CREAM SANDWICH
I used to eat these in Japan when I was a child. It would come in either strawberry or mandarin orange. My mom would get these for picnics, or as a special treat. Great as a lunch, or a dessert, I suppose!! I don't know why we don't eat these here in the States, but we should start!!

APPLE, CREAM & SPICED RYE CRUMBLE POTS
Combine layers of stewed apple, cardamon-flavoured rye breadcrumbs and whipped cream in this Scandinavian-inspired dessert that's fabulous for a dinner party

- Peel and core the apples and cut the flesh into chunks. Put these in a large saucepan with the caster sugar and 3 tbsp water and cook over a gentle heat until the apples are completely tender. Stir every so often and mash the fruit down roughly with the back of a wooden spoon. The finished purée shouldn't be too wet - if it is, simmer it over a low heat until it reduces and loses some of its moisture.
- Check the apples for sweetness - they shouldn't be too sweet as it's being mixed with sweet cream and breadcrumbs - and tip into a bowl to cool. In Scandinavia, the stewed apples are usually puréed until smooth, but you can also keep them chunky.
- Melt half the butter in a frying pan and add the brown breadcrumbs and half the brown sugar. Sauté, stirring constantly, over a medium heat until the breadcrumbs are golden. Add half the cinnamon and half the cardamom and continue to cook for about 1 min. Spread out on a tray - it cools quicker this way - and leave until it's room temperature. Do the same with the rye breadcrumbs, then mix the breadcrumbs together in a bowl.
- Whip the cream, adding the icing sugar and the lemon (add the lemon before the cream is too thick as the acid in the lemon has a thickening effect). If you are going to add the aquavit, do it once the cream has been whipped.
- Layer the apples, breadcrumbs and whipped cream in a glass bowl (so you can see the layers) starting with the stewed apples and ending with a layer of cream. Scatter over the hazelnuts just before serving.
